Abstract
The invention provides a method for removing pesticide residues of aquatic products by using ozone water, which comprises the following steps: 1) preparing ozone by adopting an ozone generator, and providing water by using full-automatic variable-frequency speed-regulating water supply equipment to be mixed with the prepared ozone; 2) manually putting the mixed ozone water into a thawing pool, putting the aquatic product to be processed into the thawing pool, and soaking and thawing the aquatic product in the ozone water; 3) removing fish skin, fish bone and fish bone from the defrozen aquatic product; 4) rinsing the aquatic product obtained in the step 3) by using ozone mixed water; 5) soaking the aquatic product obtained in the step 4) for 4-5 hours by using ozone mixed water; 6) then washing the aquatic product obtained in the step 5) clean by flowing ozone mixed water; 7) and (4) quickly freezing the prepared fish finished product, packaging and warehousing. The method for removing pesticide residues of aquatic products by using ozone water provided by the invention can remove more than 90% of pesticide residues, and basically eliminate harmful substances such as growth-promoting substances, antibiotics and the like.
Description
Technical Field
The invention relates to the technical field of ozone sterilization, disinfection, pesticide residue, antibiotic, hormone and additive removal, in particular to a method and a process for removing pesticide residue, antibiotic, hormone and additive of aquatic products by using high-concentration ozone water.
Background
The traditional aquatic product processing workshop uses sodium hypochlorite aqueous solution mixed water to unfreeze, clean, soak and regularly clean or irradiate ultraviolet rays to workshop environment, ground, a workbench and tools in the whole aquatic product processing process to achieve the sterilization and disinfection functions. And additives such as drug residues, antibiotics, hormones and the like cannot be removed.
Ozone is a colorless, odorless, broad-spectrum, highly efficient sterilizing gas, has a sterilizing speed 300-600 times faster than chlorine and a sterilizing capacity 2 times higher than that of chlorine, is widely used in the food industry, and has the advantages of high reactivity, strong permeability, low residue and the like. Because ozone (O3) is a strong oxidant, ozone undergoes reduction reactions in water at all times; generating monatomic oxygen (O) and hydroxyl (-OH) with extremely strong oxidizing power, and instantaneously decomposing organic substances, bacteria and microorganisms in the water. Especially, hydroxyl (-OH) is the strongest oxidant and catalyst, and can make organic substances produce chain reaction, and the reaction is very quick. Monatomic oxygen (O) and hydroxyl (-OH) have extremely strong killing effect on various microorganisms; can effectively degrade pesticide residues such as organophosphorus, carbamic acid, ester, pyrethrin and the like; harmful substances such as benzene, phenol, chromium compounds, nitrite and the like can be removed; it has effects of improving taste, removing odor, and prolonging storage, fresh keeping and quality guarantee time. Ozone can be reduced into O2 in a short time and released, and hydroxyl abstracts hydrogen ions to be reduced into water without residue.
Disclosure of Invention
The invention aims to solve the problems in the background art, and provides a method for removing drug residues of aquatic products by using ozone water, which aims to solve the problem of residual chlorine in the existing method for sterilizing aquatic products by using sodium hypochlorite. 3) removing fish skin, fish bone and fish bone from the defrozen aquatic product;
4) rinsing the aquatic product obtained in the step 3) for 15-20 minutes by using flowing ozone mixed water;
5) soaking the aquatic product obtained in the step 4) for 4-5 hours by using ozone mixed water, and changing the ozone mixed water for 1-2 times;
6) then washing the aquatic product obtained in the step 5) clean by flowing ozone mixed water;
7) and (4) quickly freezing the prepared fish finished product, packaging and warehousing.

The invention has the beneficial effects that:
the fish finished product processed by 7 procedures can remove more than 90% of pesticide residues, and basically eliminate harmful substances such as growth promoting substances, antibiotics and the like. Solves the problem of residual chlorine of sodium hypochlorite sterilization in the existing aquatic product processing. If the ultraviolet sterilization is carried out, the problems that the ultraviolet sterilization is not thorough and the ultraviolet sterilization does harm to workers and cannot be carried out simultaneously are also solved.

3) removing fish skin, fish bone and fish bone from the defrozen aquatic product;
4) rinsing the aquatic product obtained in the step 3) for 18 minutes by using flowing ozone mixed water;
5) soaking the aquatic product obtained in the step 4) for 4.5 hours by using ozone mixed water, and changing the ozone mixed water for 1 time;
6) then washing the aquatic product obtained in the step 5) clean by flowing ozone mixed water;
7) and (4) quickly freezing the prepared fish finished product, packaging and warehousing.

3) removing fish skin, fish bone and fish bone from the defrozen aquatic product;
4) rinsing the aquatic product obtained in the step 3) for 20 minutes by using flowing ozone mixed water;
5) soaking the aquatic product obtained in the step 4) for 5 hours by using ozone mixed water, and changing the ozone mixed water for 2 times;
6) then washing the aquatic product obtained in the step 5) clean by flowing ozone mixed water;

3) removing fish skin, fish bone and fish bone from the defrozen aquatic product;
4) rinsing the aquatic product obtained in the step 3) for 15-20 minutes by using flowing ozone mixed water;
5) soaking the aquatic product obtained in the step 4) for 4-5 hours by using ozone mixed water, and changing the ozone mixed water for 1-2 times;
