The invention provides a process method for sterilizing and disinfecting aquatic products by using ozone water, which comprises the following steps: 1) preparing ozone mixed water: generating ozone by using an ozone generator, supplying water by using full-automatic variable-frequency speed-regulating water supply equipment, controlling the water temperature to be between 5 and 15 ℃, and mixing the generated ozone with the water; 2) the mixing concentration of the ozone in the ozone mixed water is 5-20mg/L, and the generating speed of the ozone mixed water is 1-50 t/H; 3) the workers use a high-pressure spray gun to spray the mixed ozone mixed water to sterilize and disinfect the ground, the workbench and the tools of the aquatic product treatment workshop; 4) the aquatic products are flatly laid on the workbench, and the low-pressure spray gun is used for comprehensively unfreezing and cleaning the aquatic products. The process method for sterilizing and disinfecting aquatic products by using ozone water provided by the invention is simple, and solves the problems that residual chlorine is left after sodium hypochlorite for food processing is used for sterilizing, ultraviolet sterilization is not thorough, and ultraviolet sterilization does harm workers and cannot be performed simultaneously.

Technical Field

Background
The traditional aquatic product processing workshop uses sodium hypochlorite aqueous solution mixed water to unfreeze, clean and soak in the whole aquatic product processing process, and regularly cleans or irradiates ultraviolet rays on workshop environment, ground, a workbench and tools to achieve the sterilization and disinfection functions. If the ultraviolet sterilization is carried out, the problems that the ultraviolet sterilization is not thorough and the ultraviolet sterilization does harm to workers and cannot be carried out simultaneously exist.
Ozone is colorless and slightly odorous broad-spectrum and efficient sterilization gas, has the sterilization speed of 600 times faster than chlorine and the sterilization capacity of 2 times of chlorine, is widely applied to the food industry, and has the advantages of high reactivity, strong permeability, low residue and the like. Because ozone (O3) is a strong oxidant, ozone undergoes reduction reactions in water at all times; generating monatomic oxygen (O) and hydroxyl (-OH) with extremely strong oxidizing power, and instantaneously decomposing organic substances, bacteria and microorganisms in the water. Especially, hydroxyl (-OH) is the strongest oxidant and catalyst, and can make organic substances produce chain reaction, and the reaction is very quick. Monatomic oxygen (O) and hydroxyl (-OH) have extremely strong killing effect on various microorganisms; can effectively degrade pesticide residues such as organophosphorus, carbamic acid, ester, pyrethrin and the like; harmful substances such as benzene, phenol, chromium compounds, nitrite and the like can be removed; it has effects of improving taste, removing odor, and prolonging storage, fresh keeping and quality guarantee time. Ozone can be reduced into O2 in a short time and released, and hydroxyl abstracts hydrogen ions to be reduced into water without residue.

The problems that residual chlorine is remained after sodium hypochlorite is used for sterilizing food, ultraviolet sterilization is not thorough, and ultraviolet sterilization does harm workers and cannot be carried out simultaneously are solved.
