5. cleaning fresh fish with a clean water source, removing intestinal impurities, draining water, pickling in a jar filled with a mixed solution of refined salt, mature vinegar, pepper powder, chili powder, pepper powder, sweet fermented glutinous rice, taking out the pickled fish from the jar after the flavor of seasonings such as salt, vinegar, sugar and the like is completely soaked in the fish body, airing or drying, quickly steaming, then airing or drying, and then crushing into powder;
