背景技术
目前,南瓜都是单独作蔬菜食用,其实它可以和其他食材做成多种食品,也有人将其做成发酵食品,但只是具营养价值,缺乏特殊保健功能,另外,口感也不好。
发明内容
针对现有技术的不足,本发明提供一种能增强人体免疫力口感又好的淮山南瓜黄豆保健食品。
实现本发明目的的技术方案是:
一种能增强人体免疫力口感又好的淮山南瓜黄豆保健食品,由下述按重量份配比计的原料经发酵制成:
淮山粉10-15
南瓜50-55
黄豆70-75
根霉孢子粉0.1-0.3
罗汉果香甜晶2-3。
所述淮山粉,是将淮山干片打成粉制成,淮山含有大量的蛋白质、各种维生素和有益的微量元素,具有健脾健脑、防止血管粥样硬化等增强体质的活性成分,有“神仙之食”的美名。
所述罗汉果香甜晶,保留了罗汉果的药用价值,口感清甜,有一种特殊的香气,甜度约为蔗糖的8-10倍。
所述根霉孢子粉为一种发酵菌,为现有技术。
本保健食品的制作方法,包括如下步骤:
(1)将南瓜洗净、去皮,切成块状,蒸熟;
(2)浸泡黄豆:将黄豆洗净,加入3倍的水量浸泡;
(3)将浸泡好的黄豆煮熟;
(4)将煮熟黄豆再次浸泡发酵12-15小时;
(5)第二次煮沸黄豆,杀菌;
(6)将步骤(1)的南瓜与步骤(5)的黄豆混合,急速冷却,冷却后拌入淮山粉、根霉孢子粉及罗汉果香甜晶;
(7)装袋封口、打孔;
(8)在27-32℃环境中发酵1-2天,即得到布满菌丝的白色块状食材。
所得食材保鲜期4-5天,应趁鲜食用,或烘干加工成休闲食品。
本产品不仅营养丰富,易消化吸收,口感香甜,而且还含有淮山、罗汉果的活性成份,具有增强人体免疫力的功效。
具体实施方式
一种能增强人体免疫力口感又好的淮山南瓜黄豆保健食品,其配方原料及用料重量份配比为:
淮山粉15,南瓜55,黄豆75,根霉孢子粉0.2,罗汉果香甜晶2,
其制备方法是:
(1)将南瓜洗净、去皮,切成块状,蒸熟;
(2)浸泡黄豆:将黄豆洗净,加入3倍的水量浸泡;
(3)将浸泡好的黄豆煮熟;
(4)将煮熟黄豆再次浸泡发酵12-15小时;
(5)第二次煮沸黄豆,杀菌;
(6)将步骤(1)的南瓜与步骤(5)的黄豆混合,急速冷却,冷却后拌入淮山粉、根霉孢子粉及罗汉果香甜晶;
(7)装袋封口、打孔;
(8)在28℃环境中发酵1-2天,即得到布满菌丝的白色块状食材。

1.一种能增强人体免疫力口感又好的淮山南瓜黄豆保健食品,其特征是:由下述按重量份配比计的原料经发酵制成:
淮山粉10-15
南瓜50-55
黄豆70-75
根霉孢子粉0.1-0.3
罗汉果香甜晶2-3。
2.根据权利要求1所述的保健食品,其特征是:采用包括如下步骤的方法制成:
(1)将南瓜洗净、去皮,切成块状,蒸熟;
(2)浸泡黄豆:将黄豆洗净,加入3倍的水量浸泡;
(3)将浸泡好的黄豆煮熟;
(4)将煮熟黄豆再次浸泡发酵12-15小时;
(5)第二次煮沸黄豆,杀菌;
(6)将步骤(1)的南瓜与步骤(5)的黄豆混合,急速冷却,冷却后拌入淮山粉、根霉孢子粉及罗汉果香甜晶;
(7)装袋封口、打孔;
(8)在27-32℃环境中发酵1-2天,即得到布满菌丝的白色块状食材。
