本发明属于抗氧化剂领域,具体涉及一种食品抗氧化剂,由以下重量份的组分组成:硫代二丙酸二月桂酯10-20份,维生素C 30-50份,焦亚硫酸钠15-35份,三聚磷酸钠25-40份,环羊毛甾烷化合物0.1-0.5份,柠檬酸钠5-20份,二氧化硅1-5份。本发明的有益效果是:抗氧化效果好,组分中不含有害物质,配比合理,添加本发明的抗氧化剂后,食品的保鲜期延长、色泽好、无异味。

技术领域
本发明属于抗氧化剂领域,具体涉及一种食品抗氧化剂。
背景技术
抗氧化剂在食品加工中主要作用就是防止油脂氧化。油脂因含有不饱和脂肪酸,在有氧环境中容易氧化酸败。防止方式有的是抗氧化剂自身氧化,消耗油脂中的氧,油脂中没有氧,自然也就不氧化;有的抗氧化剂给出电子或氢原子,阻断油脂分子自动氧化的链式反应;有的抗氧化剂通过抑制氧化酶的活性而使油脂不被氧化。只有具备无毒无害、加入后检测方便的抗氧化剂才能作为食用抗氧化剂添加到食品中。
目前,食品中常用的抗氧化剂有2,6-二叔丁基甲酚(BHT),主要用于食用油脂、干鱼制品;叔丁基对羟基茴香醚,主要用于食用油脂;没食子酸丙酯,主要用于油炸食品、方便面和罐头;维生素E,主要用于婴儿食品、奶粉;维生素C和异维生素C,主要用于鱼肉制品、冷冻食品等。但是,现有的添加到食品中的抗氧化剂在阻止氧化、延长产品保鲜时间上存在欠缺,而且抗氧化剂的添加量不合理,抗氧化效果下降。
发明内容
本发明的目的在于克服现有技术中抗氧化剂添加量不合理、抗氧化效果下降的技术不足,提供一种用量合理,抗氧化效果好的食品抗氧化剂。
为解决上述技术问题,本发明采用的技术方案如下:

本发明的食品抗氧化剂的作用机理是:
(1)抗氧化剂借助还原反应,降低食品体系及周围的氧含量,即抗氧化剂本身就极易氧化,因此在有氧化食品因素存在的时,如光照、氧气、加热等,抗氧化剂就先于食品与氧化因素作用,避免了食品被氧化;
(2)抗氧化剂释放出氢离子将氧化过程中产生的过氧化物破坏分解,使氧化反应无法继续进行。
本发明采用硫代二丙酸二月桂酯的目的是:硫代二丙酸二月桂酯简称DLTP,为白色粉末或鳞片状物,密度为0.915,熔点为39~40℃,溶于苯、甲苯、丙酮、汽油等溶剂。具有分解过氧化物的作用,可作为聚乙烯、聚丙烯、ABS树脂、聚氯乙烯等的辅助抗氧剂。有不污染、不着色、高温加工时不分解的特点。
本发明采用维生素C的目的是:维生素C的药效基团是抗坏血酸离子。在生物体内,维生素C是一种抗氧化剂,因为它能够保护身体免于氧化剂的威胁,维生素C同时也是一种辅酶。维生素C是一种强的还原剂,当它作为食品添加剂,维生素C成为一种抗氧化剂和防腐剂的酸度调节剂。
本发明采用柠檬酸钠的目的是:柠檬酸钠(sodium citrate),又称枸橼酸钠是一种有机化合物,为一种钠盐,其化学式为Na3C6H5O7,外观为白色到无色晶体,有肥皂水的味道,在食品、饮料工业中用作风味剂、稳定剂。
本发明的有益效果是:抗氧化效果好,组分中不含有害物质,配比合理,添加本发明的抗氧化剂后,食品的保鲜期延s长、色泽好、无异味。
