一种盐渍辣椒的盐卤窖池,它包括窖池、U形盛盐槽、圆孔、漏网盖、抽盐水泵和盐卤管;所述窖池为圆形或椭圆形,在窖池外壁设有一个U形盛盐槽,其宽度为50公分,深度为5公分;所述窖池底部设置呈“U”形;在“U”形窖池底部中心位置,即最低处设有一个30公分的圆孔,其上面设置漏网盖;漏网盖下方连接有抽盐水泵;所述U形盛盐槽内设有一根盐卤管,直径为6公分,其一端与抽盐水泵相连,另一端置于窖池内。本发明结构简单,使用方便,盐卤循环时盐卤流动性好,所以卤窖池内盐渍辣椒的浓度均匀一致,U形盛盐槽的设置首先是能防止爬行昆虫、老鼠等进入窖池内,提高食品安全,其次是能有效避免生产场地有盐卤凼而影响操作。

技术领域
本发明涉及一种盐渍辣椒的盐卤窖池,属于辣椒食品加工技术领域。
背景技术
盐渍辣椒又名腌制辣椒,它的主要加工方法是将收购的鲜辣椒经过挑选、除杂质后以盐为主要原料下窖池进行盐卤,经过6个月的时间后获得的辣椒叫做盐渍辣椒或腌制辣椒而得名。
盐渍辣椒的加工方法很多,有以坛为容器进行加工,也有以池为加工,但通过多方考察,加工数量较大的多以池为容器进行产品加工,有的池能加工数十吨或上百吨,像这样的加工方法多数厂家很难做到一点的是使整池的盐卤浓度保持一致。因而尽管是同一个窖池的产品但他们的盐度并不一样,原因是这些池型多为方形,而且盐卤池多为平底池,再有就是一个窖池一般在进行盐卤循环时都是一个泵抽盐卤循环,所以方法原始且产品质量较差,导致盐渍辣椒在盐渍过程中盐的浓度不均衡。
发明内容
本发明的目的主要是为了解决现有技术中存在的盐渍辣椒在盐渍过程中盐的浓度不均衡的问题,从而提供一种盐渍辣椒的盐卤窖池。
为达到上述目的, 本发明采用以下技术方案:
一种盐渍辣椒的盐卤窖池,它包括窖池、U形盛盐槽、圆孔、漏网盖、抽盐水泵和盐卤管;所述窖池为圆形或椭圆形,在窖池外壁设有一个U形盛盐槽,其宽度为50公分,深度为5公分;所述窖池底部设置呈“U”形;在“U”形窖池底部中心位置,即最低处设有一个30公分的圆孔,其上面设置漏网盖;漏网盖下方连接有抽盐水泵;所述U形盛盐槽内设有一根盐卤管,直径为6公分,其一端与抽盐水泵相连,另一端置于窖池内。
采用上述技术方案的有益效果是:
本发明结构简单,使用方便,盐卤循环时盐卤流动性好,所以卤窖池内盐渍辣椒的浓度均匀一致,U形盛盐槽的设置首先是能防止爬行昆虫、老鼠等进入窖池内,提高食品安全,其次是能有效避免生产场地有盐卤凼而影响操作。

具体实施方式
下面结合附图对本发明作如下详述:
实施例一
如图1所示,一种盐渍辣椒的盐卤窖池,所述窖池1为圆形,其目的主要是在盐卤水循环时,盐卤水顺着窖池1的边缘流动时阻力小,能充分借助抽盐水泵5给的力,就能使盐卤水顺着窖池1边缘流动,由于流动性好,所以窖池1内的盐渍辣椒浓度均匀一致。
在窖池1外壁设有一个U形盛盐槽2,其宽度为50公分,深度为5公分;U形盛盐槽2时常渗有多余的盐卤水,这样做的目的主要是提高产品安全,防止爬行昆虫、老鼠进入窖池1内和有效避免生产场地有盐卤凼而影响操作,并应时常清理U形盛盐槽2内的卫生状况。
所述窖池1底部设置呈“U”形,这样做的目的同样也是为了增强盐卤水的流动性,而这个流动性主要是便于使四周盐卤水向“U”形底最低处的流向。
所述U形盛盐槽2内设有一根盐卤管6,直径为6公分,其一端与抽盐水泵5相连,另一端置于窖池1内,这样做的目的是为了抽取窖池1底部的盐卤水,使窖池1内的盐卤水自下而上循环流动。
实施例二
将所述窖池1为“圆形”改为 “椭圆形”,其余同实施例一。
本发明工作原理如下:
当鲜辣椒与食盐下入窖池1时,盐卤循环过程中不慎外溢的盐卤水和工作时溢于地面的盐卤水就会流进圆形或椭圆形窖池1边的U形盛盐槽2,这样就自然形成一个保护圈,防止蚊虫侵入窖池1内和保持工作时地面无积盐卤水;因为鲜辣椒下入窖池1后6个月内都要作盐卤水循环,U形盛盐槽2能保证盐卤水循环性好,因为不论盐卤水顺着窖池1边缘顺时针或逆时针流动阻力都比方形池小,因此盐卤水循环好;再加之抽盐水泵5的作用,窖池1内的盐卤水能充分受重力作用下从“U”形池四周对流到底部,因此盐卤浓度充分,无死角,所以效果比方形池和平底池好。

1.一种盐渍辣椒的盐卤窖池,其特征是:它包括窖池(1)、U形盛盐槽(2)、圆孔(3)、漏网盖(4)、抽盐水泵(5)和盐卤管(6);所述窖池(1)为圆形或椭圆形,在窖池(1)外壁设有一个U形盛盐槽(2),其宽度为50公分,深度为5公分;所述窖池(1)底部设置呈“U”形;在“U”形窖池(1)底部中心位置,即最低处设有一个30公分的圆孔(3),其上面设置漏网盖(4);漏网盖(4)下方连接有抽盐水泵(5);所述U形盛盐槽(2)内设有一根盐卤管(6),直径为6公分,其一端与抽盐水泵(5)相连,另一端置于窖池(1)内。
