本发明公开了食品中硝酸盐的检测方法,是将样品经沉淀蛋白质、除去脂肪后,将样品提取液通过镉柱,使其中的硝酸根离子还原成亚硝酸根离子,在酸性条件下,亚硝酸根与对氨基苯磺酸重氮化后,再与盐酸萘乙二胺偶合形成红色染料,经比色即可。本发明的有益效果为:本发明的有益效果为:本发明提供的食品中硝酸盐的检测方法,检测准确度高,速度快,操作简单,能够适应大规模工业化生产的需要。

技术领域
本发明涉及食品中硝酸盐的检测方法。
背景技术
硝酸盐是肉制品生产中最常使用的发色剂。在微生物作用下,硝酸盐还原为亚硝酸盐,亚硝酸盐在肌肉中乳酸的作用下生成亚硝酸,而亚硝酸极不稳定,可分解为亚硝基,并与肌肉组织中的肌红蛋白结合,生成鲜红色的亚硝基肌红蛋白,使肉制品呈现良好的色泽。但由于亚硝酸盐是致癌物质——亚硝胺的前体,因此在加工过程中常以抗坏血酸钠或异构抗坏血酸钠、烟酰胺等辅助发色,以降低肉制品中亚硝酸盐的使用量。

本发明的目的就是针对上述现有技术中的缺陷,提供了食品中硝酸盐的检测方法。
为了实现上述目的,本发明提供的技术方案为:食品中硝酸盐的检测方法,是将样品经沉淀蛋白质、除去脂肪后,将样品提取液通过镉柱,使其中的硝酸根离子还原成亚硝酸根离子,在酸性条件下,亚硝酸根与对氨基苯磺酸重氮化后,再与盐酸萘乙二胺偶合形成红色染料,经比色即可。
