Abstract
Se divulga un proceso para preparar un análogo de yogur en base a vegetales estable en almacenamiento. Primero se proporciona una composición alimenticia en base a vegetales que comprende de 3,5% en peso a 6,0% en peso de proteínas de vegetales. Posteriormente, la composición alimenticia en base a vegetales es homogenizada y tratada térmicamente. La composición alimenticia en base a vegetales homogenizada y tratada térmicamente luego se inocula con por lo menos un cultivo láctico. A continuación, la composición alimenticia en base a vegetales inoculada es fermentada hasta lograr un pH de 4,5 y 5,0 para obtener un análogo de yogur en base a vegetales. Finalmente, el análogo de yogur en base a vegetales obtenido es sometido a un segundo tratamiento térmico para obtener un análogo de yogur en base a vegetales estable en almacenamiento. También se divulga un análogo de yogur en base a vegetales estable en almacenamiento obtenido mediante dicho proceso y un producto alimenticio que comprende dicho análogo de yogur en base a vegetales.
