Un método para el tratamiento de una composición que contiene proteínas de origen vegetal que comprende las etapas de someter la composición que contiene proteínas a un tratamiento con proteína desamidasa y a homogeneización de alta presión. También una composición que contiene proteínas de origen vegetal que puede obtenerse mediante el presente método, así como al uso de la composición que contiene proteínas de origen vegetal obtenida mediante el presente método como un alimento, un aditivo alimenticio o un material de partida para la producción de alimentos.
