Abstract
La presente invención consiste en un proceso de ahumado de una bebida alcohólica, en donde se comprende al menos las siguientes etapas: a) proveer al menos un destilado fermentado con una graduación alcohólica deseada; b) disponer dicho al menos un destilado en un recipiente dejando un espacio libre sobre el nivel de líquido de dicho destilado c) inyectar humo en dicho recipiente, en dicho espacio libre para contactar dicho al menos un destilado; d) reposar dicho recipiente por un periodo de tiempo deseado entre 12 y 24 horas; e) degustar y calificar sensorialmente dicho al menos un destilado ahumado y reposado, si la calificación sensorial indica un ahumado insuficiente se repiten las etapas 2 a 4 o si la calificación sensorial indica un proceso de ahumado suficiente; y f) proceder con el envasado final de dicho al menos un destiladoThe present invention consists of a process for smoking an alcoholic beverage, which comprises at least the following steps: a) providing at least one fermented distillate with a desired alcohol content; b) arranging said at least one distillate in a container leaving a free space above the liquid level of said distillate c) injecting smoke into said container, in said free space to contact said at least one distillate; d) resting said container for a desired period of time between 12 and 24 hours; e) tasting and sensory rating said at least one smoked and settled distillate, if the sensory rating indicates insufficient smoking, steps 2 to 4 are repeated or if the sensory rating indicates a sufficient smoking process; and f) proceed with the final packaging of said at least one distillate
