Abstract
La presente invención se refiere a un conjunto de cepas de levadura mejoradas genéticamente de forma no transgénica, de la especie S. cerevisiae, como también a su uso para la producción de bebidas alcohólicas a partir de mostos deficientes en nitrógeno y al método de obtención de dichas levaduras mediante un programa de mejoramiento genético intraespecífico.The present invention relates to a set of non-transgenic genetically improved yeast strains of the species S. cerevisiae, as well as their use for the production of alcoholic beverages from nitrogen-deficient musts and the method of obtaining said yeasts through an intraspecific genetic improvement program.
