Cet appareil est établi de façon que des aliments de catégories différentes peuvent être desséchés, dans des conditions permettant l'introduction de vapeur d'eau pendant une partie ou la totalité du procédé, et que la quantité de vapeur d'eau et la période de son application peuvent être facilement ré glées.
Une forme d'exécution de cet appareil est représentée à titre d'exemple, sur le dessin ci-joint, dans lequel: La fig. 1 est une vue en perspective de l'extérieur de l'appareil; La fig. 2 en est une élévation de face, des portes avant étant enlevées; La fig. 3 en est une coupe transversale. L'appareil représenté est susceptible d'être employé simplement en le plaçant sur le sommet d'un poêle ou sur une flamme à gaz.
Il comprend une enveloppe 10, pourvue d'ouvertures d'admission d'air 11 autour de ses bords inférieurs. Sur l'avant se trouvent deux ouvertures 12 et 13, fermées par des portes 14, qui sont fixées par un verrou 15.
