Die Erfindung betrifft ein Verfahren zur industriellen und gewerblichen Herstellung von Brot.
Bei der Herstellung von Brot aus Getreidemehl, wie zum Beispiel Weizenmehl oder einer anderen Mehlart oder einem Gemisch verschiedener Getreidemehle, werden üblicherweise zuerst das Mehl zusammen mit Wasser und Hefe sowie zusammen mit Salz und gegebenenfalls einem Backmittel und anderen Zutaten, wie zum Beispiel Butter, Ölsaaten etc. zu einem Teig geknetet. Nach einer dem Teig angemessenen Garzeit wird dieser Teig allenfalls noch in Portionen aufgeteilt und dann zu Brot gebacken.
Bei einer anderen weit verbreiteten Methode wird der Teig gegebenenfalls portioniert, in der Verkaufsstelle, d.h. in der Bäckerei, gegoren oder ungegoren eingefroren, und dann dort bei Bedarf gebacken. Dieses Verfahren hat zwar den Vorteil, dass die Bäckerei mehrmals am Tag frisches Brot herstellen kann. Es weist aber den an sich bekannten Nachteil auf, dass der in einem Vorgarstadium eingefrorene Teig zuerst aufgetaut werden und sich an die Raumtemperatur anpassen muss. Der Teig muss dann noch zusätzlich während einer bestimmten Zeitspanne nachgären, was schliesslich insgesamt einen verhältnismässig grossen Zeit- und Organisationsaufwand benötigt und zur Folge hat, dass die Kundennachfrage nicht immer optimal befriedigt werden kann.
Die vorliegende Erfindung betrifft ein neuartiges Verfahren zur industriellen und gewerblichen Herstellung von Brot.
Dieses Verfahren ist dadurch gekennzeichnet, dass eine Mischung bestehend aus Getreidemehl, Hefe, Wasser, Salz und allenfalls mindestens einer weiteren Zutat zu einem Teig verarbeitet wird, wobei der Anteil von Hefe 0,5 Gew.-% bis 1,5 Gew.-% und der Anteil von Wasser 65 Gew.-% bis 75 Gew.-% bezogen auf den Trockensubstanzanteil des Teiges beträgt, dass anschliessend eine Stockgare durchgeführt wird, dass dann der Teig allenfalls portionenweise abgesetzt und während 8 bis 90 Stunden bei 2 bis 5 DEG C kühl gelagert wird, und dass schliesslich der Teig oder die durch Portionierung gebildeten Teiglinge direkt aus der mindestens 8 Stunden betragenden Kühlphase kommend gebacken wird bzw. werden.
Die Wahl des Hefe- und Wasseranteils sind entscheidend für das erfindungsgemässe Verfahren. Neben dem Bezug auf den Trockensubstanzanteil ist daher auch die sogenannte praktische Teigausbeute TA des fertig gekneteten Teiges eine charakteristische Grösse. Sie beträgt gemäss der Erfindung 165% bis 175%, beispielsweise 170%. Die praktische TA ist die Menge, die aus hundert Teilen Mehl plus allen Zutaten erzielt wird. Sie lässt sich wie folgt berechnen

Bei einer bevorzugten Ausführungsform der Erfindung beträgt der Hefeanteil 1 Gew.-% sowie der Wasseranteil 70 Gew.-%.
Bei einer weiteren bevorzugten Ausführungsform des erfindungsgemässen Verfahrens dauert die zum Vorgären der Hefe bestimmte Stockgare mindestens 30 Minuten und höchstens 60 Mi nuten, vorzugsweise 40 bis 50 Minuten. Sie wird vorzugsweise bei einer Temperatur von 20 bis 25 DEG C durchgeführt.
Bei einer anderen bevorzugten Ausführungsform des erfindungsgemässen Verfahrens werden mit der Hefe auch Salz sowie Backmittel und andere Zutaten, wie beispielsweise Ölsaaten oder Butter, der Teigmischung zugegeben.
Selbstverständlich erlaubt das erfindungsgemässe Verfahren die Herstellung aller bekannten Brotgebäckarten, wie die Herstellung von Normalbrot, Kleinbrot, Spezialbrot usw.
Nachfolgend wird ein erfindungsgemässes Ausführungsbeispiel zur Gebäckherstellung im Detail beschrieben.
Bei dem zur Brotherstellung zu verwendenden Getreide handelt es sich um Weizen oder ein Gemisch aus Weizen und anderen Getreidearten.
100 Gewichtsteile Weizenmehl oder Weizenmehlgemisch werden zusammen mit 2-3 Gewichtsteilen Salz und 1 Gewichtsteil Hefe in 65-75 Gewichtsteilen Wasser in einem Kneter während 9 bis 13 Minuten geknetet, und zwar so, dass die Teigtemperatur 28 DEG C nicht überschreitet.
Der so erhaltene Teig wird nun erfindungsgemäss wie folgt weiterverarbeitet. Man führt als Erstes die Stockgare durch. Der geknetete Teig wird hierzu während mindestens 30 Minuten, vorzugsweise während 40 bis 50 Minuten, beispielsweise für 45 Minuten vorgegart, und zwar bei einer Temperatur von 20 DEG C bis 25 DEG C. Anschliessend wird der Teig abgesetzt, beispielsweise auf mit Mehl bestaubte Silplatten oder Teigtücher, allenfalls in Portionen aufgeteilt und geformt, und anschliessend mit Mehl bestäubt. Die aufgetragene Mehlschicht beträgt hierbei vorzugsweise 0,3 mm bis 0,5 mm. Alsdann erfolgt die kühle Lagerung des Teigs für mindestens 8, höchstens 90, vorzugsweise in einem Bereich von 12-72 Stunden bei 2 DEG C bis 5 DEG C, vorzugsweise bei 4 DEG C.
Während dieser Zeit findet der abschliessende Gärprozess statt, so dass direkt aus der Kühlphase heraus und ohne Akklimatisierung der Teig bzw. die Teiglinge gebacken werden können, wozu allenfalls vorweg noch mit einem Spatel oder Messer Teiglaibe aus dem Teig auszustechen sind. Das Backen des Brotes erfolgt je nach Ofen- und Brot-Typ bei ca. 220 DEG für 40 bis 50 Minuten. Das Backen selbst unterscheidet sich also nicht vom herkömmlichen bekannten Back-Verfahren.
In der nachfolgenden Tabelle ist ein Beispiel für eine Rezeptur angegeben.

Wesentliche Vorteile der Erfindung sind darin zu sehen, dass vorgeformte Teige während 8 bis 90 Stunden, vorzugsweise während 8 bis 72 Stunden, bei 4 DEG C gelagert werden können, dass diese ohne Nachgärungsphase direkt aus der Kühlphase gebacken werden können, was einen bedeutenden Zeitgewinn und eine vereinfachte Organisation für den Backbetrieb zur Folge hat, und dass die Kundennachfrage optimal befriedigt werden kann.
Mit dem vorstehend im Detail beschriebenen Verfahren können auch Brote aus Mehlgemischen, beispielsweise Roggenmischbrote, hergestellt werden. Insbesondere im letzteren Fall beträgt der Anteil des Roggenmehls vorzugsweise höchstens 40 Gew.-% und derjenige des Weizenmehls vorzugsweise mindestens 60 Gew.-%.
Versuche haben ergeben, dass die nach dem erfindungsgemässen Verfahren hergestellten Brote den nach den bekannten Verfahren hergestellten Broten qualitativ gleichwertig sind.
