Die Erfindung betrifft ein Verfahren zum Formen einer halbfesten, fetthaltigen, aufgeschäumten Masse. Ferner betrifft die Erfindung eine Vorrichtung zur Durchführung des Verfahrens sowie ein nach dem Verfahren hergestelltes Chocoladenprodukt.
Es sind luftig-leichte Chocoladenmassen bekannt, welche einen hohen Anteil eines gasförmigen Stoffes, z.B. Luft und/oder Inertgas, fein verteilt enthalten, so dass die Gas- und die Massenphase von blossem Auge nicht auseinander zu halten sind. Ein Verfahren zur Herstellung solch bekannter Massen ist z.B. aus dem US-Patent Nr. 4 889 738 bekannt.
Solche Chocoladenmassen sind ohne weiteres mit einem sehr hohen Gasanteil herstellbar, so dass z.B. ein spezifisches Gewicht von 0,6 erzielbar ist, wodurch die Massen bei der Konsumation als sehr leicht und angenehm cremig empfunden werden. Diese Massen sind bis jetzt industriell nur als Füllungen, z.B. als Biskuitfüllungen und Truffesfüllungen, verwendet worden. Wünschbar wäre es aber, eine solche Masse selber, ohne eine dicke, am Produkt verbleibende, formgebende Hülle aus Biskuit oder normaler Chocolade, formen zu können, so dass die Masse selber ein fertiggeformtes Produkt bildet, das lediglich mit einem sehr dünnen Überzug aus Chocolade versehen werden kann.
Es hat sich aber gezeigt, dass die üblichen Bearbeitungs- und Formungsverfahren, wie Extrudieren, Ausstreichen mit nachfolgendem Schneiden, Schmelzen und Giessen nicht anwendbar sind, da bei diesen Vorgängen so viel Gas aus der Masse austritt, dass sich das spezifische Gewicht wieder wesentlich erhöht und die Masse nicht mehr die gewünschten Eigenschaften aufweist. Es zeigt sich ferner auch, dass die aufgeschäumte Masse schwierig zu handhaben ist, da sie stark zum Kleben an Oberflächen und Werkzeugen neigt. Es stellt sich also die Aufgabe, solche aufgeschäumten, plastischen, halbkristalline Massen industriell zu formen, unter Beibehaltung deren spezieller Eigenschaften, d.h. insbesondere ohne den Austritt und Verlust des in die Masse eingearbeiteten Gases.
Diese Aufgabe wird dadurch gelöst, dass die Masse mittels eines länglichen, rohrförmigen Formstückes von im wesentlichen gleichbleibendem Durchmesser ausgegeben wird, in welchem die Masse nachkristallisiert und ohne mechanische Umformung gefördert wird, und dass jeweils ein aus dem Formstück ausgetretener Teil der Masse von der sich im Formstück befindlichen Masse abgetrennt wird.
In dem rohrförmigen Formstück, ohne Änderung des Innendurchmessers und der Innenform, bildet sich eine gleichmässige Pfropfenströmung der Masse aus, d.h. diese wird ohne mechanische Umformung gefördert. Die Masse tritt daher ohne Gasverlust als geformter Strang aus dem Formstück aus.
Mit der beanspruchten Formtechnik lassen sich daher in einen halbfesten Zustand abgekühlte Chocoladen-, Fett-, Truffes-, Eiscreme- und ähnliche Massen ohne innere Strukturbewegung (Fliessvorgang) schonend zu definierten Körpern formen. Insbesondere ermöglicht das Verfahren eine volumengenaue Formung aufgeschäumter Massen der oben beschriebenen Art ohne Schädigung der Masse-/Gasstruktur, d.h. ohne Zunahme deren spezifischen Gewichtes.
Bevorzugterweise wird die aus dem Formstück austretende Masse weiter in eine Ausnehmung eines Formkörpers eingebracht. Der Querschnitt dieser Ausnehmung ist dem Querschnitt des Formstückes angepasst, so dass die Masse ohne Umformung und damit ohne Gasverlust in die Ausnehmung eintreten kann, die praktisch eine Fortsetzung des Formstückes bildet.
Die Trennung zwischen der Masse im Formstück und derjenigen in der Ausnehmung erfolgt vorzugsweise durch eine Relativbewegung zwischen diesen Elementen. Da die geformte Masse in der Ausnehmung seitlich gehalten ist, erfolgt keine unerwünschte Deformation des abgetrennten Masseteils, welche das Produkt unansehnlich werden liesse.
Die Entformung erfolgt vorzugsweise dadurch, dass der Formkörper auf eine Temperatur grösser als diejenige der Masse erwärmt ist, und die sich in der Ausnehmung befindliche Masse an den Wänden der Ausnehmung aufschmilzt und aufgrund ihres Eigengewichtes aus der Ausnehmung hinausgleitet.
Das Aufschmelzen der äussersten Randbereiche der Masse führt dabei zu keinem spürbaren Verlust an Gas. Das Entformen aufgrund des Eigengewichtes setzt natürlich voraus, dass die Form in der Richtung der Schwerkraft offen ist. Bevorzugterweise wird eine Form mit einer durchgehend offenen Ausnehmung verwendet, wobei die Masse von oben eingefüllt wird und nach unten austritt, sobald die zunächst geschlossene \ffnung freigegeben wird. Möglich ist aber auch eine Form mit nur einer \ffnung, wobei die Form nach dem Füllen gewendet wird.
Für eine rationelle Fertigung wird vorzugsweise eine Form mit einer Vielzahl von Ausnehmungen verwendet, wobei mehrere Ausnehmungen zugleich aus mehreren Formstücken gefüllt werden.
Eine Vorrichtung zur Durchführung des Verfahrens ist durch die Merkmale des Anspruches 9 gekennzeichnet. Im folgenden werden Ausführungsformen der Erfindung anhand der Figur näher erläutert. Diese zeigt schematisch eine Vorrichtung zur Durchführung des Verfahrens.
Mit 1 ist eine bekannte Anlage zur Herstellung der aufgeschäumten, fetthaltigen, halbfesten Masse bezeichnet, welche nur schematisch als Funktionsblock gezeigt ist. In der Anlage wird vorzugsweise eine luftig-leichte Chocoladen- und/oder Chocoladefüllmasse unter Zugabe von Luft oder Inertgas gebildet, wie sie grundsätzlich aus der US-PS 4 889 738 bekannt sind. Die Erfindung ist indes auch auf andere halbfeste, aufgeschäumte Massen anwendbar, wie z.B. Truffes- und Eiscrememassen.
Am Ausgabeelement der Anlage 1 wird nun das Formstück 2 angeschlossen. Dieses ist als Rohr oder Schlauch ausgebildet. Der Innendurchmesser und die Innenform entspricht dabei dem gewünschten Aussendurchmesser und der Aussenform des aus der Masse 3 herzustellenden Formteiles. Der gleichbleibende Innendurchmesser bzw. die gleichbleibende Innenform bewirkt eine Förderung der aus der Anlage 1 austretenden Masse 3 im Formstück 2 ohne eine mechanische Umformung der Masse 3, weshalb diese Masse das eingearbeitete Gas nicht verliert. Dies im Gegensatz zur Förderung einer Masse durch eine sich verengende Tülle oder zur Extrusion einer Masse. In der im Formstück 2 nachkristallisierenden Masse bildet sich eine gleichmässige, nicht-turbulente Pfropfenströmung aus. Am offenen Ende des Formstückes 2 tritt die Masse 3 als geformter Strang ohne Gasverlust aus.
Zur Portionierung der geformten Masse muss ein Teil des ausgetretenen Stranges abgetrennt werden. Entsprechende Schneidevorgänge zum Schneiden des Stranges bergen die Gefahr in sich, dass die halbfeste Masse beim Trennen am Messer kleben bleibt und derart verformt wird, dass das Endprodukt unansehnlich wird. Vorzugsweise wird daher zur Portionierung ein Formkörper 5 vorgesehen, in welchem Ausnehmungen 6 angeordnet sind. Die Ausnehmungen weisen einen Durchmesser und eine Form auf, welche dem Innendurchmesser und der Innenform des Formstückes entspricht. Die Tiefe der Ausnehmung entspricht der Höhe des gewünschten portionierten Masseteiles. Wie in der Figur gezeigt, bildet jeweils die in geringer Distanz vom Ende des Formstückes 2 angeordnete Ausnehmung 6 praktisch eine Verlängerung des Formstückes.
Der in der Ausnehmung eingebrachte Teil 7 der Masse 3 erfährt daher beim Einbringen keine mechanische Umformung und somit keinen Gasverlust. Bei der gezeigten Ausführung mit nach unten offenen Ausnehmungen 6 kann es vorteilhaft sein, die untere \ffnung der Ausnehmung während des Einbringens der Masse mindestens teilweise zu verschliessen, wozu z.B. eine an einem maschinenfesten Support 21 befestigte Membran 20, z.B. aus Stahlblech oder Kunststoff, dienen kann.
Sobald jeweils eine Ausnehmung gefüllt ist, wird entweder das Formstück 2 oder - wie in der Figur angedeutet - der Formkörper 5 verschoben, so dass das Ende des Formstückes 2 über die nächste, ungefüllte Ausnehmung 6 zu liegen kommt, welche ebenfalls gefüllt wird, worauf ein erneutes Verschieben und Füllen erfolgt und so fort.
Durch das Trennen derjenigen Masseschicht, die zwischen dem Ende des Formstückes 2 und dem sich in der Ausnehmung befindlichen Masseteil 7 liegt, wird die sich im Formstück befindliche Masse und der Masseteil 7 mechanisch nur wenig beansprucht. Eine Deformation des Masseteils 7 aufgrund der Scherkräfte findet ferner nicht statt, da der Masseteil 7 in der Ausnehmung 6 gehalten und gegen seitliche Verschiebung abgestützt ist.
Bei dem beschriebenen Füll- und Trennvorgang bleibt auf der Oberseite des Formkörpers und auch auf der Unterseite ein Masserest als Schicht liegen. Vorzugsweise werden diese Reste mittels Abstreifern, Rakeln oder - wie gezeigt - mittels Ableckwalzen 10 bzw. 13 entfernt. Für die Abfuhr zur Wiederverwendung kann z.B. bei der Walze 10 ein Abstreifer, eine Auffangrinne 11 und ein Schneckenförderer 12 vorgesehen sein, bei der Walze 13 ein Abstreifer und ein Auffangtrichter 14.
Die portionierten und geformten Masseteile 7, 7a-7i müssen nachfolgend aus den Ausnehmungen 6 entformt werden. Das Austreiben mittels Stösseln, Druckluft oder ähnlichen Mitteln ist zwar möglich, bringt aber eine Reihe von Problemen. Einerseits sind die Masseteile weiterhin sehr empfindlich und können leicht deformiert werden; andererseits bewirkt die Druckausübung zum Entformen einen Gasverlust. Da die Masse klebrig ist, können ferner Massestücke beträchtlicher Grösse am Formkörper und an der Austreibvorrichtung haften bleiben, was einerseits das Produkt unansehnlich und damit unbrauchbar macht und andererseits das Reinigen der Ausnehmungen vor dem erneuten Einbringen von Masse bei einer kontinuierlichen Produktion erschwert.
Vorzugsweise wird daher der Formkörper auf eine Temperatur erwärmt, die ca. 5 bis 40 DEG C über der Temperatur der aus dem Formstück austretenden Masse 3 liegt. Diese Masse 3 weist im Formstück in der Regel eine Temperatur im Schmelzbereich auf und liegt - rezepturabhängig - bei einer Chocoladen- und/oder Chocoladenfüllmasse bei ca. 15 bis 35 DEG C.
Das Erwärmen des Formkörpers 5 bewirkt nach einiger Zeit ein Aufschmelzen der äussersten Randbereiche der Masseteile 7, 7a-7h, welche an den Wandungen der Ausnehmungen 6 anliegen. Die Zeit bis zu einem vorbestimmten Aufschmelzgrad ist dabei von der Temperaturdifferenz zwischen Masseschmelzpunkt und Formkörper abhängig bzw. durch Wahl dieser Temperaturdifferenz bestimmbar. Sobald die Randbereiche der Masseteile 7, 7a-7h aufgeschmolzen sind, beginnen die Masseteile aufgrund ihres Eigengewichtes, allenfalls mit minimaler Druckluftunterstützung, aus den Ausnehmungen herauszurutschen.
Es hat sich gezeigt, dass da bei kein spürbarer Gasverlust der Masseteile auftritt, dass diese ihre Form behalten, und dass praktisch keine Reste an den Wandungen der Ausnehmungen zurückbleiben; dies auch, wenn die Wandungen bei z.B. einem Aluminiumformkörper 5 nicht speziell fein bearbeitet oder gar mit einer Beschichtung, z.B. aus Teflon, versehen sind. Die Erwärmung des Formkörpers erleichtert ferner das Abstreifen der Massereste mittels der Walzen 10, 13.
Die Erwärmung des Formkörpers kann auf beliebig bekannte Weisen erfolgen, z.B. durch einen Strahlungsheizkörper oder ein internes Warmträger-System im Formkörper, z.B. Kanäle für die Zirkulation von warmem Wasser im Formkörper.
Für die aus den Ausnehmungen austretenden Masseteile 7g, 7h und 7i ist ein Förderband 16 vorgesehen, welches die geformten, portionierten Masseteile wegführt. Vorzugsweise werden auf dem Förderband 16 Bodenplatten 18 angeordnet, welche jeweils unter eine Ausnehmung zu liegen kommen und im Gleichtakt mit den Ausnehmungen bewegt werden. Bei einer Chocoladen- und/oder Chocoladenfüllmasse 3 bestehen diese Platten 18 vorzugsweise aus essbaren Unterlagen wie z.B. Chocolade, Nougat, Biscuits usw.
Die schematisch dargestellte Anlage weist einen linearen Ablauf mit einem Formstück auf. Für eine rationelle Fertigung wäre z.B. ein Formkörper in Gestalt einer runden Scheibe mit radial angeordneten Ausnehmungen denkbar. Ebenso eine Mehrzahl von entsprechenden Formstücken. Die Scheibe rotiert stetig, wobei in einem Drehwinkelbereich das Einbringen der Masse erfolgt; in einem weiteren Drehwinkelbereich das Entformen und in weiteren Bereichen das Reinigen sowie Erwärmen, worauf die gereinigten Ausnehmungen erneut mit Masse beschickt werden.
Das bevorzugterweise hergestellte Produkt besteht aus einem nach dem Verfahren geformten Masseteil, z.B. in Zylinder- oder Würfelform, welches mit einem sehr dünnen Chocoladenüberzug versehen ist.
The invention relates to a method for molding a semi-solid, fatty, foamed mass. The invention further relates to a device for performing the method and a chocolate product produced by the method.
Airy, light chocolate masses are known which contain a high proportion of a gaseous substance, e.g. Air and / or inert gas, finely divided, so that the gas and mass phases cannot be distinguished by the naked eye. A method of making such known compositions is e.g. known from U.S. Patent No. 4,889,738.
Such chocolate masses can be easily produced with a very high gas content, so that e.g. A specific weight of 0.6 can be achieved, whereby the masses are perceived as very light and pleasantly creamy when consumed. Until now, these masses have only been used industrially as fillings, e.g. as biscuit fillings and truffle fillings. However, it would be desirable to be able to form such a mass itself without a thick, shaping shell of biscuit or normal chocolate remaining on the product, so that the mass itself forms a finished molded product which is merely provided with a very thin coating of chocolate can be.
However, it has been shown that the usual processing and shaping processes, such as extrusion, spreading with subsequent cutting, melting and casting, cannot be used, since in these processes so much gas escapes from the mass that the specific weight increases again significantly and the mass no longer has the desired properties. It also shows that the foamed mass is difficult to handle because it tends to stick to surfaces and tools. The task therefore arises of industrially shaping such foamed, plastic, semi-crystalline masses while maintaining their special properties, i.e. especially without the leakage and loss of the gas incorporated into the mass.
This object is achieved in that the mass is output by means of an elongate, tubular shaped piece of essentially constant diameter, in which the mass is recrystallized and conveyed without mechanical shaping, and in that in each case a part of the mass which has emerged from the shaped piece and from which the Molding located mass is separated.
In the tubular shaped piece, without changing the inside diameter and the inside shape, a uniform plug flow of the mass is formed, i.e. this is conveyed without mechanical forming. The mass therefore emerges from the molding as a shaped strand without loss of gas.
With the claimed molding technology, chilled chocolate, fat, truffle, ice cream and similar masses can be gently molded into defined bodies without internal structural movement (flow process) in a semi-solid state. In particular, the method enables volume-accurate shaping of foamed masses of the type described above without damaging the mass / gas structure, i.e. without increasing their specific weight.
The mass emerging from the shaped piece is preferably introduced further into a recess in a shaped body. The cross section of this recess is adapted to the cross section of the shaped piece, so that the mass can enter the recess without forming and thus without gas loss, which practically forms a continuation of the shaped piece.
The separation between the mass in the fitting and that in the recess is preferably made by a relative movement between these elements. Since the molded mass is held laterally in the recess, there is no undesired deformation of the separated mass part, which would make the product unsightly.
De-molding is preferably carried out by heating the molded body to a temperature greater than that of the mass, and melting the mass located in the recess on the walls of the recess and sliding it out of the recess due to its own weight.
The melting of the outermost edge areas of the mass leads to no noticeable loss of gas. De-molding due to its own weight naturally requires that the mold is open in the direction of gravity. A mold with a continuously open recess is preferably used, the mass being filled in from above and emerging downwards as soon as the initially closed opening is released. However, a shape with only one opening is also possible, the shape being turned over after filling.
A mold with a large number of recesses is preferably used for efficient production, with a plurality of recesses being simultaneously filled from a plurality of shaped pieces.
A device for performing the method is characterized by the features of claim 9. In the following, embodiments of the invention are explained in more detail with reference to the figure. This shows schematically an apparatus for performing the method.

The fitting 2 is now connected to the output element of the system 1. This is designed as a tube or hose. The inner diameter and the inner shape correspond to the desired outer diameter and the outer shape of the molded part to be produced from the mass 3. The constant inside diameter or the constant inside shape causes the mass 3 emerging from the system 1 to be conveyed in the shaped piece 2 without mechanical shaping of the mass 3, which is why this mass does not lose the incorporated gas. This is in contrast to conveying a mass through a narrowing spout or extruding a mass. A uniform, non-turbulent plug flow is formed in the mass which recrystallizes in the shaped piece 2. At the open end of the molding 2, the mass 3 emerges as a shaped strand without loss of gas.
To portion the molded mass, part of the extruded strand must be cut off. Appropriate cutting operations for cutting the strand involve the risk that the semi-solid mass sticks to the knife when separated and is deformed in such a way that the end product becomes unsightly. A portion 5 is therefore preferably provided for portioning, in which recesses 6 are arranged. The recesses have a diameter and a shape which corresponds to the inside diameter and the inside shape of the shaped piece. The depth of the recess corresponds to the height of the portioned mass portion desired. As shown in the figure, the recess 6 arranged at a short distance from the end of the shaped piece 2 practically forms an extension of the shaped piece.
The part 7 of the mass 3 introduced into the recess is therefore not subjected to any mechanical deformation and thus no gas loss. In the embodiment shown with recesses 6 open at the bottom, it may be advantageous to at least partially close the lower opening of the recess while the mass is being introduced, for which purpose e.g. a membrane 20 attached to a machine-fixed support 21, e.g. made of sheet steel or plastic.
As soon as one recess is filled, either the molded part 2 or - as indicated in the figure - the molded body 5 is displaced, so that the end of the molded part 2 comes to rest on the next, unfilled recess 6, which is also filled, which is indicated moved and filled again and so on.
By separating the mass layer that lies between the end of the shaped piece 2 and the mass part 7 located in the recess, the mass located in the shaped piece and the mass part 7 are mechanically stressed only slightly. A deformation of the mass part 7 due to the shear forces also does not take place since the mass part 7 is held in the recess 6 and is supported against lateral displacement.
In the filling and separation process described, a mass residue remains as a layer on the top of the molded body and also on the bottom. These residues are preferably removed by means of scrapers, doctor blades or - as shown - by means of licking rollers 10 or 13. For disposal for reuse, e.g. a wiper, a collecting trough 11 and a screw conveyor 12 may be provided for the roller 10, a wiper and a collecting funnel 14 for the roller 13.
The portioned and shaped mass parts 7, 7a-7i must subsequently be removed from the recesses 6. Driving out using pestles, compressed air or similar means is possible, but brings with it a number of problems. On the one hand, the mass parts are still very sensitive and can easily be deformed; on the other hand, the pressure exerted on the mold causes a gas loss. Since the mass is sticky, mass pieces of considerable size can also adhere to the molded body and to the expulsion device, which on the one hand makes the product unsightly and therefore unusable and on the other hand makes it difficult to clean the recesses before the re-introduction of mass in continuous production.
The molded body is therefore preferably heated to a temperature which is approximately 5 to 40 ° C. above the temperature of the mass 3 emerging from the molded part. This mass 3 generally has a temperature in the melting range in the molding and is - depending on the recipe - at a chocolate and / or chocolate filling mass at approx. 15 to 35 ° C.
After a while, the heating of the molded body 5 causes the outermost edge regions of the mass parts 7, 7a-7h, which lie against the walls of the recesses 6, to melt. The time until a predetermined degree of melting is dependent on the temperature difference between the melting point and the shaped body or can be determined by selecting this temperature difference. As soon as the edge areas of the mass parts 7, 7a-7h have melted, the mass parts begin to slide out of the recesses due to their own weight, if need be with minimal compressed air support.
It has been shown that there is no noticeable gas loss of the mass parts, that they retain their shape and that practically no residues remain on the walls of the recesses; this also if the walls of e.g. an aluminum molded body 5 not specially machined or even with a coating, e.g. made of Teflon. The heating of the shaped body further facilitates the stripping of the residual mass by means of the rollers 10, 13.
The shaped body can be heated in any known manner, e.g. by a radiant heater or an internal hot carrier system in the molded body, e.g. Channels for the circulation of warm water in the molded body.
For the mass parts 7g, 7h and 7i emerging from the recesses, a conveyor belt 16 is provided which leads the shaped, portioned mass parts away. Base plates 18 are preferably arranged on the conveyor belt 16, each of which comes to lie under a recess and is moved in synchronism with the recesses. In the case of a chocolate and / or chocolate filling mass 3, these plates 18 preferably consist of edible underlays such as e.g. Chocolate, nougat, biscuits etc.
The system shown schematically has a linear sequence with a fitting. For a rational production, e.g. a shaped body in the form of a round disc with radially arranged recesses is conceivable. Likewise, a plurality of corresponding fittings. The disc rotates continuously, the mass being introduced in a range of rotation angles; demolding in a further range of rotation angles and cleaning and heating in further areas, whereupon the cleaned recesses are again charged with mass.
The preferably manufactured product consists of a mass molded part, e.g. in cylinder or cube shape, which is covered with a very thin chocolate coating.
