Description
The invention relates to a multi-component cleaning agent, in particular for cleaning soiled surfaces of food industrial plants and devices. These can be, for example, surfaces of various extraction and ventilation systems which are located in the floors of slaughterhouses or surfaces of generally heavily contaminated metals, concrete, plastered bricks and tiles; primarily in the case of hot or cold smoke systems, storage facilities and facilities with temperature control systems, facilities or premises used in the food industry that serve to preserve food and for food hygiene purposes.
The particular importance of the proposed multi-component cleaning agent is its suitability for cleaning thermal devices in the food industry, in which the removal of coke deposits with the known cleaning agents was unsatisfactory, although thorough cleaning of these devices is particularly important from three points of view:
Food hygiene aspect: maintaining the goods in a clean condition
2. Energieökonomischer Gesichtspunkt: Erhaltung der Sauberkeit der temperaturleitenden Oberflächen 2. Energy-economic point of view: maintaining the cleanliness of the temperature-conducting surfaces
3. Passage capacity point of view: The passage capacity is reduced by the increasing temperature treatment time of soiled thermal devices.
The cleaning agents used in the food industry for cleaning the above devices can be divided into two groups according to the types of active ingredients used: The cleaning agents belonging to the first group contain one or more alkaline substances as the active ingredient. These substances saponify and emulsify the dirt, which mainly consists of various fat residues. When using these cleaning agents, the surface to be cleaned is often damaged. This damage can occur in the form of etching and surface corrosion.
In addition to the surface damage mentioned and the acceleration of corrosion, a further disadvantage when using these cleaning agents is that they are not suitable for removing coke deposits caused by thick, layered animal proteins and
Fette entstehen. Fats arise. The cleaning agents belonging to the second group contain, in addition to the alkaline substances, a surface-active substance. The cleaning agents combined with surface-active substances have a better cleaning effect, however, the acceleration of the surface damage and the damage caused by corrosion are similar to the 1st group.
Furthermore, a cleaning method is known in which the surface is first treated with an alkaline cleaning agent, then washed off with water, and finally an acidic aftertreatment is carried out, by means of which any alkaline component residues on the surface are neutralized. Such a solution is described in US Pat. No. 3,511,707, but the use of this agent is not recommended for cleaning food industrial plants and facilities.
The aim of the invention is to propose such a multi-component cleaning agent with which the various surfaces to be cleaned, in particular in the food industry, can be treated quickly and so thoroughly that no etching occurs on metal or other surfaces to be cleaned and there is no corrosion .
The essence of the invention is defined in claim 1.
The preparation according to the invention accordingly relates to a composition consisting of alkaline and acidic detergent components.
When using the alkaline cleaning agent, the mostly coke-like fats are emulsified and saponified. The cleaning agent reaches the surface to be cleaned by diffusion. The effectiveness of the washing solution is reduced by the emulsification and saponification, and by the subsequent application of the acidic solution to the surface, the alkaline component is completely neutralized. The reaction energy released during neutralization accelerates the detachment of the fats from the surface to be cleaned, and a completely clean surface remains.
The cleaning agent according to the invention excludes the etching on the surface caused by the known alkaline detergents and the increasing rate of corrosion. When the multicomponent preparation according to the invention was used, the alkaline detergent component did not damage the surface to be cleaned, since damage to the surface could only occur after the emulsification and saponification of the fats had ended. The citric acid and / or tartaric acid solution applied to the surface before the fat emulsification and saponification has ended, that is to say the acidic component prevents the damaging action of the alkaline detergent.
The alkali metal citrates and / or tartrates formed during the neutralization act as inhibitors in the acidic cleaning phase and prevent damage to the surface and its corrosion in the further course.
When cleaning is carried out with the cleaning agent according to the invention, there is no direct contact, or only a brief contact, of the alkaline detergent with the surfaces to be cleaned, for example with the metal surfaces. In the alkaline cleaning phase, the corrosion protection is ensured by the contact time with the metal surfaces, which is reduced to a minimum, and by the inhibitors, while at the same time it can be determined that the inhibitors according to the invention accelerate (catalyze) the dirt-removing effect.
The preparation according to the invention consists of an alkaline component "A" and an acidic component
