Die Erfindung betrifft eine Aromastoffkomposition mit einem Gehalt an einem 2-Thietanol der allgemeinen Formel

worin R1 Wasserstoff oder C,¯,,-Alkyl, R2 Wasserstoff oder Cl 3-Alkyl und R3 Wasserstoff oder Cl 3-Alkyl darstellen, sowie ein Verfahren zu deren Herstellung.
Die Cij bzw. C,¯,,-Alkylreste können gerad- oder verzweigtkettig sein. Beispiele solcher Reste sind Methyl, Äthyl, Propyl, Isopropyl, Butyl, Isobutyl, tert-Butyl, Hexyl, Octyl und Decyl. Bevorzugte Verbindungen der Formel I sind sol che, in denen Rl und R3 Wasserstoff oder einen Cl 3-Alkyl- rest und R2 Wasserstoff darstellen.
Die 2-Thietanole der Formel I können dadurch hergestellt werden, dass man einen a, & ngesättigten Aldehyd der Formel

worin Rl R2 und R3 die oben angegebenen Bedeutungen haben, mit Schwefelwasserstoff umsetzt.
Die Umsetzung kann mit oder ohne Lösungsmittel durchgeführt werden. Als Lösungsmittel kommen vor allem solche in Frage, in denen Schwefelwasserstoff gut löslich ist, vorzugsweise Schwefelkohlenstoff oder halogenierte Kohlenwasserstoffe wie Chloroform oder Methylenchlorid.
Die Reaktionstemperatur liegt zweckmässigerweise zwischen -50 "C und Zimmertemperatur; vorzugsweise wird bei Temperaturen zwischen -10" und 0 "C gearbeitet.
Die Umsetzung der Aldehyde I mit Schwefelwasserstoff kann durch Basen, insbesondere organische Basen wie Amine, vorzugsweise tertiäre Amine, beispielsweise Triäthylamin oder Pyridin, katalysiert werden.
Das molare Mengenverhältnis von Schwefelwasserstoff zu a,-ungesättigten Aldehyd sollte mindestens 1:1 betragen. Z < eckmässigerweise wird mit einem Überschuss von H2S gearbeitet. Das molare Mengenverhältnis von Base zu ungesättigtem Aldehyd kann von 1 :1000 bis zu etwa 1:1 betragen, wobei ein Verhältnis von etwa 1 :10 bis 1 :5 bevorzugt ist.
Die Reaktionszeiten sind von der Reaktionstemperatur, den Mengenverhältnissen der Reaktionspartner sowie der Struktur des eingesetzten Aldehyds abhängig. Bei Temperaturen von etwa 100 bis 0 "C, einem Überschuss an H2S und einer Basenmenge etwa 1 :10 bis 1 :5 betragen die Reaktionszeiten etwa 2 bis 15 Stunden.
Die Isolierung und Reinigung der Reaktionsprodukte kann nach an sich bekannten Methoden erfolgen. Man setzt z. B. eine Mineralsäure zu, nimmt nach Rühren bei Zimmertemperatur in ein organisches Lösungsmittel auf, wäscht die organische Phase neutral, trocknet und isoliert das Produkt in reiner Form durch fraktionierte Destillation.
Die 2-Thietanole der Formel I zeichnen sich durch beson dere Geschmackseigenschaften aus. Infolge ihrer Geruchs und Geschmacksnoten, die teils an gebratene Eier und
Fleisch, teils an Zwiebeln erinnern, eignen sie'sich zur Her stellung, bzw. zur Modifizierung von Aromakompositionen oder zur Erzeugung des typischen Eier- und Fleisch-Geruchs bzw. -Geschmacks von Nahrungs- und Genussmitteln, insbe sondere von Eierspeisen, Nudeln usw. bzw. Fleischgerichten, oder zur Aromatisierung von Suppen und zur Verwendung in Würzen zwecks Verleihung beispielsweise eines Zwiebelaromas.
Die 2-Thietanole können den zu aromatisierenden Produk ten allein oder in Gemischen mit anderen geschmackgeben den Komponenten bzw. den üblichen Trägerstoffen und/ oder Verdünnungsmitteln zugesetzt werden. Werden die
2-Thietanole zur Herstellung künstlicher Aromen verwendet, so können diese Aromen beispielsweise zu Flüssigkeiten, Pa sten oder Pulvern formuliert werden. Die Produkte können z. B. sprühgetrocknet, vakuumgetrocknet oder lyophilisiert sein. Die Formulierung solcher künstlichen Aromen sowie die Aromatisierung von Nahrungs- und Genussmitteln kann in an sich bekannter Weise erfolgen.
Die Menge der zu Aromatisierungszwecken verwendba ren 2-Thietanole kann in weiten Grenzen variieren. Sie kann in Aromakompositionen 0,01 bis 10 Gew.-0/o, vorzugsweise 0,1 bis 1,0 Gew.-01o und in aromatisierten Endprodukten, d. h.
in fertigen Nahrungs- oder Genussmitteln, 0,1 bis 1000 ppm betragen.
In den folgenden Beispielen sind die Temperaturen in Celsiusgraden angegeben.
Beispiel 1
Während 11h Stunden wurde bei -10" H2S in 250 ml Chlors form bis zur Sättigung eingeleitet. Unter Rühren und weite rem stetigem Einleiten von H2S wurden zuerst innert 10 Mi nuten 10 ml Triäthylamin und dann innert 2 Stunden 52 g frisch destillierter Crotonaldehyd zugetropft. Unter schwachem Einleiten von H2S wurde schliesslich 2 Stunden bei -10" weitergerührt. Dann liess man die Reaktionslösung 12 Stunden bei -28" im verschlossenen Kolben stehen, setzte bei Raumtemperatur 125 ml 2 N HCI zu und rührte 1 Stunde kräftig. Die organische Phase wurde abgetrennt, nochmals mit 125 ml 2 N HCI gewaschen, anschliessend mit Wasser neutralgewaschen, mit wasserfreiem Natriumsulfat getrocknet und unter Wasserstrahlvakuum eingeengt.
Destillation über eine Widmer-Kolonne lieferte 46,7 g (Ausbeute 41% d. Th.) 4-Methyl-2-thietanol in Form eines was serklaren, hochviskosen Öls, Kr.,5 60-63", nD = 1,5476. Das
IR-Spektrum (liquid) zeigt Banden bei 3400, 2950, 1450, 1045 und 985 cm-t.
Die Verbindung hat einen eierartigen, schwefligen und etwas zwiebelähnlichen Geruch und einen eier- und omelet tenartigen Geschmack.
Beispiel 2
42 g Acrolein wurden analog zu Beispiel 1 mit 10 ml Triät hylamin und H2S in 250 ml Chloroform behandelt. Die Destil lation unter Zusatz von BHT (2,6-Di-tert.-butyl-p-kresol) lie ferte 37,6 g (Ausbeute 56% d. Th.) 2-Thietanol, Kr.15 50-62", ni = 1,5712. Das IR-Spektrum (4% in CHCl3) zeigt Banden bei 3400, 2950, 1430 und 1010 cm-l.
Die Verbindung besitzt einen eier- und fleischartigen Ge ruch mit einer Röstnote (Bratkartoffel) und einen eierarti gen, schwefligen Geschmack mit einer in Richtung gebra tene Kartoffel gehenden Note.
Beispiel 3
9,8 g 2-Hexenal wurden analog zu Beispiel 1 mit 2,0 ml Triäthylamin und H2S in 50 ml Chloroform bei einer Reaktionstemperatur von 0 behandelt. Kugelrohrdestillation bei einer Ofentemperatur von 130-150 und einem Druck von 0,05 mm Hg lieferte 2,12 g (Ausbeute 160/o d. Th.) 4-Propyl-2thietanol, nD = 1,5214. Die Verbindung zeigt im IR-Spektrum (liquid) Banden bei 3450, 2960, 1460 und 1020 cm-1.
Der Geruch der Verbindung ist grün, baumrindenartig und erinnert an unreife Tomaten.
Beispiel 4
5,6 g 3-Methyl-crotonaldehyd wurden analog zu Beispiel 1 bei einer Reaktionstemperatur von 0 mit 1,5 ml Triäthylamin und H2S in 50 ml Chloroform behandelt. Die Kugelrohrdestillation lieferte bei einer Ofentemperatur von 145-175 und einem Druck von 0,05 mm Hg 4,21 g (Ausbeute 53010 d. Th.) 4,4-Dimethyl-2-thietanol in Form eines Öls; nD = 1,5365. Das IR-Spektrum zeigt Banden bei 3450, 2980, 1460, 1130 und 1020 cm-1.
Die Verbindung besitzt einen brenzligen, schwefligen Geruch, der etwas an Zwiebeln erinnert. Der Geschmack ist zwiebelartig und schweflig.
Beispiel 5
9,7 g 2-Methyl-2-pentenal wurden analog zu Beispiel 1 bei einer Reaktionstemperatur von 0 mit -2,5 ml Triäthylamin und H2S in 60 ml Chloroform behandelt. Die Kugelrohrdestillation bei einer Ofentemperatur von 112-130 und einem Druck von 0,05 mm Hg ergab 8,04 g (Ausbeute 6101o d. Th.) 4-Äthyl-3-methyl-2-thietanol in Form eines Öls; nD = 1,5268.
Das IR-Spektrum zeigt Banden bei 3450, 2980, 1455, 1380 und 1050 cm-1.
Die Verbindung besitzt einen schwefligen und schwach nussartigen Geruch. Der Geschmack ist stark schweflig mit einer leicht eierartigen Note.
Beispiel 6
24 g a-Isopropylacrolein wurden analog zu Beispiel 1 mit 5 ml Triäthylamin und H2S in 150 ml Chloroform bei einer Reaktionstemperatur von -3" behandelt. Destillation über eine Vigreuxkolonne unter Zusatz von 1 /o 2,6-Di-tert.-butyl-pkresol lieferte 23,42 g (Ausbeute 84% d. Th.) farbloses 3-Isopropyl-2-thietanol, Kp.,p, 30-33 , nD = 1,5312. Das IR-Spektrum (liquid) zeigt Banden bei 3450, 2980, 1470 und 1000 cm-1.
Der Geruch der Verbindung ist schweflig, eierartig; der Geschmack ist schweflig, leicht grünlich und etwas brenzlig.
Beispiel 7
25 g a-Äthylacrolein wurden analog zu Beispiel 1 mit .5 ml Triäthylamin und H2S in 100 ml Chloroform bei einer
Reaktionstemperatur von 20 behandelt. Destillation über eine Vigreux-Kolonne unter Zusatz von 1% 2,6-Di-tert.-butyl p-kresol ergab 23,18 g (Ausbeute 65% d. Th.) 3-Äthyl-2-thietanol in Form eines farblosen viskosen Öles, Kp.006 40-44", nD = 1,5418. Das IR-Spektrum (liquid) zeigt Banden bei 3450,
2980, 1460, 1050 und 980 cm-l.
Der Geruch der Verbindung kann mit eierartig, schweflig und grünlich umschrieben werden; der Geschmack ist schweflig, schwach grün.
Beispiel 8
4,2 g 2-Pentenal wurden analog zu Beispiel 1 mit 1,2 ml Triäthylamin und H2S in 30 ml Chloroform bei einer Reak tionstemperatur von -5 "C behandelt. Destillation über einen Hempelaufsatz unter Zusatz von wenig 2,6-Di-tert-bu tyl-p-kresol lieferte bei 48-70 "C und 0,07 mm Hg 3,7 g farbloses, viskoses 4-Äthyl-2-thietanol (Ausbeute 55% der Theorie, = = 1,5320). Das IR-Spektrum (liquid) zeigte Banden bei 3450, 2980, 1460, 1385 und 1010 cm-l.
Der Geruch der Verbindung ist schweflig, eierartig (Rich tung gebratenes Spiegelei); der Geschmack ist schwefliggrün, eierartig.
Beispiel 9
52,2 g Methacrolein wurden analog zu Beispiel 1 mit 10 ml Triäthylamin und H2S in 250 ml Chloroform bei einer Reaktionstemperatur von 0 "C behandelt. Das Rohprodukt wurde unter Hochvakuum und Zusatz von 5% 2,6-Di-tert.-butyl-p-kresol über eine Vigreux-Kolonne destilliert. Bei einem Siedepunkt von 75-89 "C (0,03 mm Hg) wurden 39,8 g (510/0 der Theorie) 3-Methyl-2-thietanol (nD = 1,5513) erhalten.
Das IR-Spektrum (liquid) zeigte Banden bei 3450, 2960, 1455, 1380 und 1030 cm-l.
Die Verbindung hat einen schwefligen und fleischartigen Geruch, der an stark gebratenes Spiegelei erinnert; der Geschmack ist grünlich-schweflig, eier- und fleischartig.
