La présente invention est relative à un dispositif pour la préparation de portions arrondies d'une pâte telle que de la viande hachée. de la purée, etc.
Pour préparer des boulettes de viande ou des fricadelles, par exemple. la ménagère prend au moyen d'une cuillère ou d'une fourchette, une certaine quantité de viande hachée correspondant à la portion désirée et elle la roule dans ses mains jusqu'à l'obtention d'une masse en forme de boule. En premier lieu, ceci peut entre considéré comme peu hygiénique et en outre cette façon de travailler prend beaucoup de temps et est peu agréable, entre autres parce que le hachis colle aisément aux mains. On doit également tenir compte du fait que la forme et la quantité des portions arrondies de viande ainsi obtenues sont en pratique toujours différentes. ce qui constitue, par exemple lors du garnissage de plats. un inconvénient à ne pas sous-estimer.
L'invention a principalement pour but d'éliminer ces divers inconvénients en offrant un dispositif qui permet sans aucune difficulté ou connaissance particulière d'obtenir d'une façon très simple et avantageuse des portions arrondies formées rapidement et régulièrement à partir de n'importe quelle pâte.
Le dispositif selon l'invention est caractérisé par le fait qu'il comprend un moule ayant sensiblement l'allure d'une cloche, dont les bords sont destinés à être enfoncés dans la pâte et à l'intérieur duquel est disposée une poche formée par une feuille en matière souple et qui est au moins partiellement libre par rapport aux parois intérieures de celui-ci.
Dans une forme de réalisation avantageuse du dispositif suivant l'invention un éjecteur est montré.
De très bons résultats sont obtenus en enveloppant la pâte à diviser dans la feuille souple précitée. Ainsi, aussi bien au-dessus qu'en dessous de la pâte se trouve une feuille non adhérente, ce qui simplifie l'obtention de portions arrondies au moyen d'un moule adapté déterminé. En outre on ne salit de la sorte qu'un minimum de vaisselle.
Ce dispositif offre encore l'avantage particulier que dans le cas de boulettes de viande, de croquettes ou d'autres produits alimentaires. ceux-ci ne viennent pratiquement pas directement en contact avec les mains. ce qui est donc très hygiénique, par opposition au procédé connu classique décrit précédemment.
Au dessin, on a illustré une forme de réalisation très intéressante et cependant extrêmement simple du dispositif.
Ce dispositif est constitué essentiellement par un moule en forme de cloche 1 ouvert sur un côté, dont les bords 2 sont destinés à être enfoncés dans une pâte non représentée, afin de séparer dans ce moule une portion de la pâte.
La paroi interne 3 du moule I est recouverte d'une feuille souple 4 de matière non adhérente, comme par exemple du polyé thyléne. du téflon. etc.. qui est libre par rapport à cette paroi 3 et qui forme ainsi une petite poche dans le moule 1.
Dans le moule en forme de cloche ou la cloche 1 est monté un éjecteur 5. en face du côté ouvert. cet éjecteur pouvant coulisser dans la direction du côté ouvert. L'éjecteur 5 débouche dans la paroi interne 3 de la cloche 1, derrière la feuille 4, afin de permettre le rejet de la portion formée dans la cloche 1.
Le fond de la petite poche ou de la partie centrale de la feuille 4 est fixé sur l'éjecteur 5 au moyen d'un bouchon 6 qui, d'une part. est solidaire du côté arrière de la feuille 4 et qui, d'autre part, est serré dans un logement correspondant 7 pratiqué dans l'extrémité dirigée vers la cloche I de l'éjecteur 5. Ce dernier, qui est formé par une tige creuse se déplaçant suivant sa direction longitudinale, est monté à coulissement dans un cylindre de guidage 8 qui forme la poignée et qui est prévu sur le côté extérieur de la cloche 1, à l'opposé du côté ouvert de celle-ci.
La feuille 4 dont est faite la petite poche précitée, s'étend contre la paroi interne 3 de la cloche I et est repliée autour des bords 2 par-dessus le bord extérieur de la cloche 1, jusqu'au cylindre de guidage autour duquel elle est fixée de manière amovible et réglable au moyen d'un élastique 9.

Une seconde feuille souple 14 d'une matière analogue à celle de la feuille 4 sur laquelle est placée la pâte, se trouve dans l'évidement 11 et s'étend sur une relativement grande distance en dehors de l'évidement 11 et même en dehors du petit plat 10.
Le fond 12 de l'évidement 1 I présente une ouverture centrale 15 pour permettre l'échappement de l'air qui se trouve entre la feuille 14 et le fond 12. lors de l'application l'un sur l'autre de la cloche I et du petit plat 10 entre lesquels est isolée une portion de pâte.
La cloche I et le petit plat 10 peuvent chacun être considérés comme un demi-moule qui, rassemblés de la manière décrite, constituent le moule complet. Il convient cependant de remarquer que pour certaines applications, le petit plat 10 n'est pas indispensable.

La pâte à diviser en portions, comme par exemple du hachis ou de la purée, est placée dans son ensemble, pour autant que la quantité ne soit pas trop importante, sur la feuille 14. Ensuite, on enfonce la cloche 1 dans la masse de pâte, au-dessus de l'évidement 11, jusqu'à ce que le bord 2, qui est quelque peu taillé en biseau afin de permettre une pénétration plus aisée dans la masse, vienne se placer dans la gorge 13. A ce moment. on soumet la cloche I à un mouvement de rotation alternatif par rapport au petit plat 10, jusqu'à ce que la portion de pâte ainsi isolée dans la cloche I soit suffisamment arrondie. Après cela, on soulève la cloche 1.
Etant donné que celle-ci est plus profonde que le petit plat 10, la portion de pâte en forme de boule pend dans la cloche I et on peut rejeter au moyen de l'éjecteur 5, qui est repoussé vers le bas dans la cloche, la portion précitée sur un plat non représenté ou un objet analogue, sans mettre les doigts en contact avec cette portion. Après avoir déplacé la feuille 14 jusqu'à ce qu'une quantité suffisante de pâte se trouve au-dessus de l'évidement 11 pour former une position, on peut répéter la même opération.
Le dispositif décrit permet donc d'obtenir d'une façon très simple et rapide, des portions en forme de boule à partir d'une pâte telle que de la viande hachée, de la purée, etc., toujours avec la même forme et le même volume.
Si le petit plat 10 n'est pas mis en oeuvre, il suffit par exemple d'étaler simplement la feuille 14 sur la table de travail et d'y déposer la pâte pour former des portions au moyen de la cloche I de la manière décrite précédemment.
Le dispositif peut être fabriqué entièrement en matière plastique. Les formes du dispositif sont étudiées de telle sorte qu'elles puissent être obtenues à l'aide de matrices très simples.
La forme de la cloche précitée peut être différente, en fonction de l'aspect désiré pour les portions.
