-1-DESCRIPTION DOMAINE DE L'INVENTION L'invention concerne un procédé et un dispositif pour la préparation de sandwichs avec des compositions alimentaires variées. ARRIERE PLAN TECHNOLOGIQUE La préparation de sandwichs est généralement effectuée manuellement en fendant du pain (du type baguette ou autre) et en y plaçant des ingrédients comme par exemple du jambon, de fromage, de la salade, etc. Ladite technique présente les deux principaux inconvénients suivants liés : - aux difficultés de mise en oeuvre et aux désagréments engendrés lors de leur consommation, dus au fait que la garniture a tendance à s'échapper par l'ouverture ; - aux limitations quant aux types de garnitures possibles, en particulier concernant les préparations alimentaires ou un plats cuisinés à base de morceaux de viande, de volaille, de poisson, de légumes et/ou de sauces. Certaines techniques consistent : - à enfermer la garniture à l'intérieur de la pâte à pain avant de cuire l'ensemble ; - à introduire, au moyen d'une seringue, une garniture sous forme de pâte à l'intérieur d'une cavité pratiquée préalablement dans le pain. D'autres techniques, comme celles enseignées dans les documents FR 2741782 et FR 2814646, du même déposant, utilisent un tube pourvu d'une ouverture axiale distale destinée à garnir le pain, d'une ouverture latérale proximale destinée à alimenter le tube en garniture et d'un corps apte à recevoir un moyen, du type vis sans fin entraînée en rotation par un mécanisme approprié, destiné à déplacer la garniture de l'ouverture latérale proximale à l'ouverture axiale distale. La vis sans fin utilisée comporte un axe central réduisant le volume disponible à l'intérieur du tube et partageant en deux le volume restant de telle sorte qu'on est limité à l'utilisation de garnitures granuleuses. On est donc confronté aux paramètres antagonistes liés, d'une part, au diamètre réduit de certains pains (comme la baguette) et, d'autre part, au diamètre du tube d'alimentation (et au volume disponible) qui doit être le plus grand possible pour véhiculer des morceaux de viande ou de légumes plus consistants qui sont plus appréciés par le consommateur. En outre, pour obtenir un bon fonctionnement du remplissage du pain et un garnissage uniforme, celui-ci doit être déplacé au fur et à mesure de sa préparation et ce proportionnellement au volume de la garniture transférée. 2955016 2- Enfin, dans le cadre de l'amélioration des techniques ci-avant exposées, le déposant a poursuivi ses recherches et déposé le document FR 2858200 qui enseigne un dispositif constitué d'un tube apte à recevoir une vis sans fin constituée d'une paroi continue hélicoïdale, sans moyeu, et d'un moyen apte à déplacer 5 axialement le pain au fur et à mesure de son garnissage. Les améliorations en question concernaient plus particulièrement les points suivants : - l'axe ayant disparu, le volume diamétral à l'intérieur du tube est totalement disponible et le volume axial était délimité par deux spires consécutives en regard ; - la distance séparant l'ouverture axiale distale et l'ouverture latérale proximale étant 10 supérieure à la longueur du pain utilisé pour réaliser le sandwich, le garnissage se fait sur toute sa longueur. Malgré ces nouveaux avantages, la mise en oeuvre de cette solution, qui ne fonctionne que si le déplacement du pain est automatisé et synchronisé avec la vitesse de rotation de la vis sans fin, s'est avérée complexe à réaliser et à utiliser. 15 En effet, une telle solution, outre sa conception, ne permet pas le passage continu d'une garniture à une autre car cela nécessite le nettoyage complet de l'appareil avec une perte de matière. RESUME DE L'INVENTION L'invention concerne un procédé et un dispositif destinés à la mise en oeuvre d'une 20 solution apte à éliminer les inconvénients susmentionnés. Le procédé destiné à préparer des sandwichs, se caractérise en ce qu'il consiste : a) à utiliser un tube préalablement rempli d'une composition alimentaire choisie parmi différents types de préparations possibles ; b) à insérer ledit tube, contenant la composition alimentaire choisie, dans une cavité 25 axiale préalablement aménagée dans le pain constitutif du sandwich ; c) à retirer ledit tube de ladite cavité et à transférer, dans celle-ci, la composition alimentaire tout en maintenant immobile, en translation axiale, ledit pain. Un tel procédé : - est simple à mettre en oeuvre puisque seul le tube est mis en mouvement et ce 30 seulement en translation axiale pour remplir et dégager le sandwich ; - permet de changer de garniture d'un sandwich à un autre puisque seul le tube est concerné et ce sans avoir à nettoyer une quelconque pièce annexe ; - permet un meilleur remplissage de sandwich puisque la garniture est déversée, par l'ouverture distale du tube au fur et à mesure de son déplacement vers l'ouverture proximale du sandwich. Le dispositif pour la mise en oeuvre dudit procédé, se caractérise en ce qu'il comporte : a) une pluralité de tubes, ouverts aux deux extrémités, préalablement remplis d'une composition alimentaire choisie parmi différents types de préparations possibles ; b) une machine comprenant : - un moyen adapté pour saisir l'extrémité du tube ; - un moyen adapté pour entraîner ledit tube en translation axiale de manière à l'extraire du pain dans lequel il a été introduit ; - un moyen adapté pour maintenir le pain fixe en translation axiale ; c) un moyen adapté pour transférer, dans la cavité du pain, la composition alimentaire contenue dans le tube choisi.
