Il est déja connu pour ce qui concerne le rumsteak par exemple d'opérer la cuisson sur un feu de bois, par grillade ou encore de la cuire dans une poêle ou casserole d'huile.
Ces différentes cuissons connues ont d'une maniére générale pour conséquence de sécher la viande et, de plus, ne peuvent se préparer à table. sauf pour ce qui concerne la casserole d'huile, mais alors la viande est découpée en petits carrés et est imprégnée d'huile, tout en laissant également une odeur désagréable.
Le dispositif de l'invention vise essentiellement à former une flamme à l'aide d'éléments combustibles, qui au point de vue organoleptique sont normaux et qui excluent toute toxicité, tout en provoquant une flamme intensive permettant de saisir la viande de façon à éviter la perte d'humidité pour maintenir toute sa saveur.
Il est déjà connu d'employer, pour des préparations à table, des réchauds utilisant de l'alcool à brûler, seulement l'on comprend qu'ils ne peuvent être utilisés que pour chauffer un récipient et non pour assurer une cuisson d'un rumsteak et autres viandes ou brochettes.
Le dispositif pour la cuisson de la viande selon l'invention y parvient par cuisson de la viande à la flamme d'un combustible liquide et d'un combustible solide poreux, ce dispositif étant constitué d'une cuvette allongée, destinée à contenir les combustibles, de deux supports, en forme de fourche, fixés de part et d'autre des côtés latéraux de la cuvette et soutenant une broche destinée à recevoir la viande.
Au dessin est représentée schématiquement une forme d'exécution du dispositif suivant l'invention.
Suivant le mode de réalisation représenté, il est prévu une cuvette 1 allongée d'une capacité d'environ 50 cc. pour la cuisson normale d'un rumsteak pour une personne.
Au-dessus de la cuvette est placée une broche 2 soutenue à environ 10 cm au-dessus de la cuvette, par deux supports 3-3' en forme de fourche permettant de tourner la viande qui est placée sur la broche et la présenter à l'endroit le plus chaud de la flamme.
La cuisson s'opére en versant de l'alcool éthylique dénaturé dans la cuvette et en y plaçant deux, trois ou quatre morceaux de sucre 4, qui dépassent le niveau de l'alcool; dès que l'alcool est allumé, il se forme une concentration de la flamme à chaque morceau de sucre, ce qui provoque des sources intensives de chaleur et permet de cuire la viande de maniére qu'elle se présente saignante et avec toute sa saveur, au bout de quatre minutes environ, lui donnant un goût particulier trés agréable, sans aucun dépôt de carbone noir ou autre. Pour les personnes qui désirent une viande plus cuite, il suffit de maintenir la flamme pendant un temps supplémentaire de une à deux minutes.
Une fois la viande cuite, il suffit de la dégager du feu ainsi réalisé et à l'aide d'un éteignoir d'étouffer les flammes.
