<I>Ausführungsbeispiel</I> Es wird h01-Rohgerste mit einem Malzanteil von -10ci versetzt und in einer Hammermühle ohne Kühlung auf eine Teilchengrösse von 0,05 mm vermahlen. Dann wird das Mehl, dessen Temperatur sich auf Grund der beim Mahlvorgang entstandenen Reibungswärme um einen bestimmten Wert erhöht hat, bei der erforderlichen Reaktionstemperatur eingemaischt. Anschliessend wird die Maische in verschiedenen Temperaturstufen auf die nötige Vor- und Hauptverzucke- rungstemperatur gebracht.
Die Lockerung der Bindung der Stärkemoleküle wird dabei nicht nur durch die mechanische Zerkleineruna vorbereitet. sondern auch durch die beim Mahlvorgang entstehende Wärme, deren Übertragung durch die grosse Teilchenoberflä che begünstigt wird.
Nach der erfolgten Verzuckerung wird die nunmehr fertige Maische über eine Filtereinrichtung kontinuierlich abgeläutert und ausgesüsst.
Dem Mahlgut kann neben der beim Mahlvorgang durch Reibung entstehenden Wärme noch zusätzliche Wärme zugeführt werden. Dies kann beispielsweise durch Heissluftzu- fuhr, durch Heisswasserzirkulation. durch Bestrahlung oder auf anderem Wege erfolgen.
