Composition aromatisante
La présente invention a pour objet une composition aromatisante, caractérisée en ce qu'elle contient, en tant qu'une de ses parties, un des composés de synthèse de formule:

contenant soit une double liaison dans les positions 1 ou 2, soit 2 doubles liaisons conjuguées, lesdites doubles liaisons étant indiquées par les pointillés. Les composés I, en effet, sont actifs comme ingrédients odoriférants et aromatisants et de ce fait peuvent être utilisés pour la préparation de compositions destinées à modifier les propriétés organoleptiques de produits alimentaires, de boissons, du tabac et de remèdes.
Selon la nature des produits auxquels on les ajoute les nouvelles cétones développent des notes aromatiques fruitées, vineuses, boisées, florales, cireuses ou de plantes aromatiques, ou toute combinaison desdites notes. Dans certains cas elles confèrent aux produits un arôme de baies rouges et peuvent être utilisées pour améliorer le goût et l'arôme des arômes synthétiques de fraise, airelle, cerise ou groseilles en grappe. Les nouvelles cétones peuvent même être utilisées dans des compositions pour améliorer le goût et l'arôme de produits comme le miel et le vin rouge.
Les nouvelles cétones peuvent être utilisées en proportions variant aussi entre de larges limites. Ainsi, des effets aromatisants marqués peuvent déjà résulter de l'utilisation de 0,1 à 10 ppm des nouvelles cétones par rapport au total du produit à aromatiser. Cependant ces taux peuvent être augmentés au-delà de 10 ppm et jusqu'à 100 ppm lorsqu'on désire obtenir des effets aromatisants spéciaux. Dans la préparation de compositions aromatisantes par mélange des cétones nouvelles et d'autres agents aromatisants, on peut utiliser lesdites cétones en proportions d'environ 0,1 0/o à 15 o/o du total de la composition. Dans de nombreux cas, la moyenne des proportions utilisées se situe entre 1 et 10 o/o du total de la composition.
I1 est bien entendu que les limites de proportions données ci-dessus ne représentent pas des limites absolues; dans certains cas où on désire obtenir des effets spéciaux, les nouvelles cétones peuvent être employées en concentrations supérieures ou inférieures à celles indiquées plus haut. On obtient des effets organoleptiques particulièrement intéressants en utilisant le trans-2,6,6triméthyl-l-crotonyl-cyclohexène-(l) et le trans-2,6,6-triméthyl- 1 -crotonyl-cyclohexadiène-(l ,3).
Selon un procédé de préparation on peut préparer les cétones de formule (I) comportant une double liaison endo-cyclique en oxydant un composé hydroxylé représenté par la formule (II) suivante:

dans laquelle les pointillés représentent une double liaison en position 1 ou 2. Comme oxydants on peut employer des oxydes de métaux de transition, tels le chrome ou le manganèse, éventuellement, en présence d'une base organique comme la pyridine (voir, par exemple, J. Org.
Chem. 26, 4814 (1961)).
On peut préparer les cétones nouvelles comportant 2 doubles liaisons endocycliques par déshydrogénation de ceux parmi les composés I qui comportent une double liaison cyclique sur le carbone porteur du groupe acyle.
Pour la déshydrogénation, on peut faire usage de successivement la N-bromosuccinimide comme agent halogénant selon les méthodes usuelles (voir par exemple:
Chem. Rev. 63, 21 (1963)), puis une base organique, par exemple la diéthylaniline ou la pyridine, comme agent déshydrohalogénant.
Les substances II peuvent être préparées, selon les moyens habituels, par l'addition d'un dérivé organométallique (III):
ME - CH = CH - CH3 (III) dans lequel ME représente une fonction métallique, par exemple lithiée ou bromomagnésienne, avec un aldéhyde de formule:

dans laquelle les pointillés ont le même sens que dans II, le produit d'addition étant ensuite hydrolysé et l'alcool Il purifié selon les moyens habituels. Parmi les composés se prêtant à cette préparation on peut citer le bromure de propényl-magnésium et le cyclocitral.
Selon une autre méthode de préparation de II, on peut traiter par l'hydrazine [selon Tetrahedron 19, 1091 (1963); J. Org. Chem. 26, 3615 (1961)1 l'époxyde de l'a-ionone, lui-même préparé selon Tetrahedron 19, 1091, (1963). Dans ce cas on obtient le trans-2,6,6-triméthyl-1- [l-hydroxy-butén-(2)-yl-(1)]-cyclohexène-(2).
Les exemples qui suivent illustrent la mise en oeuvre de l'invention.
Exemple 1:
Composition aromatisante Tutti-Frutti
On prépare une composition aromatisante de type Tutti-Frutti en mélangeant les ingrédients suivants (parties en poids):

Par addition de 10 g de trans-2,6,6-triméthyl-1-crotonyl-cyclohexène-(l) à 990 g du mélange ci-dessus on obtient la composition test . La composition de contrôle est préparée par adjonction de 10 g d'essence de citron au mélange ci-dessus.
On aromatise les aliments décrits ci-dessous, dans les proportions indiquées pour 100 kg d'aliment, au moyen des compositions test et de contrôle .
Gâteau... 20 g
Pouding - 5-10 g
Sucre cuit. - -- 15-20 g
Sucre cuit: on chauffe lentement jusqu'à 1450 C un mélange de 100 ml de sirop de sucre (préparé en dissolvant 1 kg de saccharose dans 600ml d'eau) et 20 g de glucose. On ajoute l'arôme et laisse durcir en refroidissant.
Pouding: tout en remuant, on ajoute un mélange de 60g de saccharose et 3 g de pectine à 500 mi de lait chaud. On porte quelques secondes à l'ébullition, ajoute l'arôme et laisse refroidir.
Gâteau: on mélange intimement les ingrédients sui vantes: 100 g de margarine végétale, 1,5 g de NaCI, 100 g de saccharose, 2 oeufs et 100g de farine. On ajoute l'arôme et on cuit la masse au four 40 mn à 1800 C.
Les aliments terminés sont soumis à un groupe de personnes qualifiées qui doivent se prononcer sur la valeur de l'arôme des échantillons. Tous les membres du groupe s'accordent pour déclarer sans hésitation que le goût des échantillons test est plus arrondi que celui des échantillons de contrôle et que simultanément il présente une note rappelant les baies rouges.
Si dans l'exemple ci-dessus on remplace le 2,6,6-triméthyl-l-crotonyl-cyclohexène-(l) par le 2,6,6-triméthyll-crotonyl-cyclohexadiène-(1,3), les échantillons test correspondants présentent également un goût plus arrondi que les échantillons de contrôle , mais avec un caractère plus floral et moins fruité que les échantillons contenant le 2,6,6 - triméthyl -1- crotonyl-cyclohexène-(1).
Exemple 2:
Composition aromatisante pour liqueurs
de type abbatial
On prépare une composition aromatisante destinée à la fabrication de liqueurs de type abbatial (ou chartreuse) en mélangeant les ingrédients suivants (parties en poids):

On constitue une composition test par adjonction de 5 g de trans-2,6, 6-triméthyl- 1 -crotonyl-cyclohexène-(1) à 995 g du mélange ci-dessus.
La composition de contrôle résulte de l'addition de 5 g d'essence de racines d'angélique à 995 g du mélange ci-dessus.
On prépare une base pour liqueurs en mélangeant les ingrédients suivants aux doses indiquées.
Alcool comestible à 96 o/o (v/v) 325 ml
Alcool de vin à 74 /o 100 ml
Sirop de sucre à 65 /o . 10 mi
Eau 565 ml
Total - 1000 ml
On aromatise la base avec 10 g de composition aromatisante pour 100kg de base. Les liqueurs préparées et terminées sont goûtées par un groupe de personnes expérimentées, ainsi que décrit dans l'exemple 1. Tous les membres du groupe déclarent que la liqueur test possède un goût plus arrondi que celui de la liqueur de contrôle avec en même temps un caractère de baies rouges.
Si dans le présent exemple on remplace le 2,6,6-tri méthyl-l-crotonyl-cyclohexène-(l) par le 2,6,6-triméthyll-crotonyl-cyclohexadiène-(1,3), on obtient des résultats similaires. Cependant, l'échantillon test présente alors un caractère moins fruité et plus fleuri que celui de l'échantillon contenant le 2,6,6-triméthyl-1- crotonyl- cyclohexène-(l).
Exemple 3:
Aromatisation d'aliments et de boissons
On aromatise les produits suivants aux doses indiquées, par le trans-2,6,6- triméthyl-l- crotonyl-cyclo- hexène-(l) à 1 /o dans l'alcool comestible.
a) Vin rouge, 0,2- 1 ppm.
b) Sirop de framboise, 0,3 - 0,6 ppm
(basé sur le sirop dilué).
c) Miel, 0,5 - 1 ppm.
En a), b) et c) on constate une nette amélioration du bouquet. En a), la note fruitée est améliorée et en c) le côté fruité est développé. En b) on constate de plus une note de fruits cuits.
Flavoring composition
The present invention relates to a flavoring composition, characterized in that it contains, as one of its parts, one of the synthetic compounds of formula:

containing either a double bond in positions 1 or 2, or 2 conjugated double bonds, said double bonds being indicated by the dotted lines. The compounds I, in fact, are active as odoriferous and flavoring ingredients and therefore can be used for the preparation of compositions intended to modify the organoleptic properties of food products, beverages, tobacco and remedies.
Depending on the nature of the products to which they are added, the new ketones develop fruity, winey, woody, floral, waxy or herbal aromatic notes, or any combination of said notes. In some cases they give products a red berry aroma and can be used to improve the taste and aroma of synthetic aromas of strawberry, lingonberry, cherry or red currant. The new ketones can even be used in compositions to improve the taste and aroma of products like honey and red wine.
The new ketones can be used in proportions also varying between wide limits. Thus, marked flavoring effects can already result from the use of 0.1 to 10 ppm of the new ketones relative to the total of the product to be flavored. However, these levels can be increased beyond 10 ppm and up to 100 ppm when it is desired to obtain special flavoring effects. In the preparation of flavoring compositions by mixing the novel ketones and other flavoring agents, said ketones can be used in proportions of from about 0.1% to 15% of the total composition. In many cases, the average of the proportions used is between 1 and 10% of the total composition.
It is understood that the limits of proportions given above do not represent absolute limits; in certain cases where it is desired to obtain special effects, the new ketones can be used in higher or lower concentrations than those indicated above. Particularly interesting organoleptic effects are obtained using trans-2,6,6trimethyl-1-crotonyl-cyclohexene- (1) and trans-2,6,6-trimethyl-1 -crotonyl-cyclohexadiene- (l, 3) .
According to a preparation process, the ketones of formula (I) comprising an endocyclic double bond can be prepared by oxidizing a hydroxyl compound represented by the following formula (II):

in which the dotted lines represent a double bond in position 1 or 2. As oxidants it is possible to use oxides of transition metals, such as chromium or manganese, optionally, in the presence of an organic base such as pyridine (see, for example , J. Org.
Chem. 26, 4814 (1961)).
Novel ketones comprising 2 endocyclic double bonds can be prepared by dehydrogenation of those among compounds I which have a cyclic double bond on the carbon carrying the acyl group.
For dehydrogenation, N-bromosuccinimide can be used successively as a halogenating agent according to the usual methods (see for example:
Chem. Rev. 63, 21 (1963)), then an organic base, for example diethylaniline or pyridine, as dehydrohalogenating agent.
Substances II can be prepared, according to the usual means, by adding an organometallic derivative (III):
ME - CH = CH - CH3 (III) in which ME represents a metallic function, for example lithiated or bromomagnesium, with an aldehyde of formula:

in which the dotted lines have the same meaning as in II, the addition product then being hydrolyzed and the alcohol II purified according to the usual means. Among the compounds suitable for this preparation, mention may be made of propenyl-magnesium bromide and cyclocitral.
According to another method of preparing II, it is possible to treat with hydrazine [according to Tetrahedron 19, 1091 (1963); J. Org. Chem. 26, 3615 (1961) 1 α-ionone epoxide, itself prepared according to Tetrahedron 19, 1091, (1963). In this case, trans-2,6,6-trimethyl-1- [1-hydroxy-buten- (2) -yl- (1)] - cyclohexene- (2) is obtained.
The examples which follow illustrate the implementation of the invention.
Example 1:
Tutti-Frutti flavoring composition
A flavoring composition of the Tutti-Frutti type is prepared by mixing the following ingredients (parts by weight):

Ethyl butyrate. 75

By adding 10 g of trans-2,6,6-trimethyl-1-crotonyl-cyclohexene- (1) to 990 g of the above mixture, the test composition is obtained. The control composition is prepared by adding 10 g of lemon oil to the above mixture.
The foods described below are flavored, in the proportions indicated per 100 kg of food, by means of the test and control compositions.
Cake ... 20 g
Pudding - 5-10 g
Cooked sugar. - - 15-20 g
Boiled sugar: a mixture of 100 ml of sugar syrup (prepared by dissolving 1 kg of sucrose in 600 ml of water) and 20 g of glucose is slowly heated up to 1450 C. The aroma is added and left to harden while cooling.
Pudding: while stirring, add a mixture of 60g of sucrose and 3g of pectin to 500 mi of hot milk. Bring to the boil for a few seconds, add the aroma and let cool.
Cake: the following ingredients are thoroughly mixed: 100 g of vegetable margarine, 1.5 g of NaCI, 100 g of sucrose, 2 eggs and 100 g of flour. The aroma is added and the mass is cooked in the oven for 40 minutes at 1800 C.
The finished foods are submitted to a group of qualified people who have to decide on the flavor value of the samples. All the members of the group agree in declaring without hesitation that the taste of the test samples is more rounded than that of the control samples and that at the same time they present a note reminiscent of red berries.
If in the above example we replace 2,6,6-trimethyl-1-crotonyl-cyclohexene- (1) by 2,6,6-trimethyll-crotonyl-cyclohexadiene- (1,3), the samples corresponding test also exhibited a more rounded taste than the control samples, but with a more floral and less fruity character than the samples containing 2,6,6 - trimethyl -1-crotonyl-cyclohexene- (1).
Example 2:
Flavoring composition for liqueurs
abbatial type
A flavoring composition is prepared for the manufacture of abbatial (or chartreuse) type liqueurs by mixing the following ingredients (parts by weight):

A test composition is formed by adding 5 g of trans-2,6,6-trimethyl-1 -crotonyl-cyclohexene- (1) to 995 g of the above mixture.
The control composition results from the addition of 5 g of essence of angelica roots to 995 g of the above mixture.
A base for liqueurs is prepared by mixing the following ingredients in the doses indicated.
Edible alcohol at 96 o / o (v / v) 325 ml
Wine alcohol 74 / o 100 ml
65 / o sugar syrup. 10 mi
Water 565 ml
Total - 1000 ml
The base is flavored with 10 g of flavoring composition per 100 kg of base. The prepared and finished liquors are tasted by a group of experienced persons, as described in Example 1. All the members of the group declare that the test liquor has a more rounded taste than that of the control liquor with at the same time a red berry character.
If in the present example we replace 2,6,6-tri methyl-1-crotonyl-cyclohexene- (1) by 2,6,6-trimethyll-crotonyl-cyclohexadiene- (1,3), we obtain results similar. However, the test sample then exhibits a less fruity and more flowery character than that of the sample containing 2,6,6-trimethyl-1-crotonyl-cyclohexene- (1).
Example 3:
Food and beverage flavoring
The following products are flavored at the doses indicated with trans-2,6,6-trimethyl-1-crotonyl-cyclohexene- (1) at 1 / o in edible alcohol.
a) Red wine, 0.2-1 ppm.
b) Raspberry syrup, 0.3 - 0.6 ppm
(based on diluted syrup).
c) Honey, 0.5 - 1 ppm.
In a), b) and c) there is a marked improvement in the bouquet. In a), the fruity note is improved and in c) the fruity side is developed. In b) there is also a note of cooked fruit.
