Die Mem#brandose 26 bildet mit dem in ihren Bodenansatz 27 eingelöteten, leicht biegbaren Kapillarrohr 11 und der an dessen freiem Ende angelöteten Fühlerscheibe 10, das mit einer Ausdehnungsflüssigkeit gefüllte Drucksystem. Das Kapillarrohr 11 ist in;
Control device for a mass cooking plate If you want to heat the food in a cooking vessel or the contents of a frying pan, you generally strive to achieve the greatest possible heat output, e.g. B. 2000 watts, to use the temperature increase to the desired tempe temperature as quickly as possible. To continue cooking you then only need a power level that is generally 8 to 15% of the starting power.
In the kitchen, mainly water or water-containing mixtures are heated that do not allow a tempe rature increase above the boiling temperature of the water, because as soon as the water evaporates, the temperature no longer increases. This makes it difficult to regulate a permanent state in such a way that the heat supply always adapts automatically to the extraordinary different heat requirements of the various items to be cooked.
It is known to arrange a disk-shaped sensor of a hy draulic controller, which is guided in a stationary box, in the middle of electrical heating tube kloch- plates and which rests resiliently against the bottom of the saucepan. In this case, the sensor disk is practically only influenced by the temperature of the food through heat conduction through the bottom of the saucepan. The sensor disk can therefore not reach a higher temperature than the food.
However, since the water-containing food does not increase in temperature above the boiling temperature of the water, it is not possible to regulate the permanent state by means of a real temperature control. The attempt has been made to solve the problem in such a way that before reaching: the critical point, i. H. the temperature set on the controller by increasing the starting power, e.g. B. with the help of a bimetallic strip heated by the operating current, adjusted an average continued cooking power.
The simmering has the major disadvantage that the dosage of the heat supply is not related to the temperature of the heating element and the actual heat demand of the food.
It has also been proposed to arrange a sensor disk of a hydraulic controller that rests against the bottom of the saucepan to divide the heating power when a desired temperature is reached by equipping the hotplate with two heating tubes and two in the controller at slightly different sensor temperatures intended for speaking regular contacts,
The control contact that responds to the lower sensor temperature is assigned to both heating pipes and the control contact that reacts to the higher sensor temperature is assigned to only one: the heating pipe.
The aim here is to make use of the fact that the temperature of the temperature sensor, which is only influenced by the food, is well behind the food as long as a lot of heat is supplied to the food and its temperature rises rapidly:
The temperature lags behind and if, after reducing the heating power, the temperature of the food only increases slowly or no longer increases, the heat gradient from the food to the probe becomes smaller, i.e. the probe temperature definitely rises. The temperature increase at the sensor that is necessary for control is therefore carried out through heat conduction via the food, and the time until the second control contact responds depends on how great the heat transfer resistance of the food is.
Does the food, z. If, for example, rice has a large heat transfer resistance, the time until the second control contact responds is long, and heat is supplied to the food for a long time. For food that has a large proportion of solids, i. H. Has a high heat transfer resistance, i.e. the complete shutdown of the heating; is greatly delayed and an undesirable amount of water evaporates, so that burning of the food is inevitable.
In addition, a tubular heating plate with two heating tubes is considerably more expensive than one with only one heating tube, in which one could easily accommodate the entire heating power of, for example, 2000 watts. By subdividing the power, you have to provide practically twice the pipe length if you want to achieve good energy distribution, especially with the low heating power that comes into consideration for the regulation.
These disadvantages are avoided according to the invention in that, in a control device for a mass cooking plate, which has an unheated central part and at least two heating conductors for parboiling and continued cooking, which are embedded in a heating ring surrounding it and switched by a temperature controller,
In an opening in the unheated middle part of the plate body, the guide box of a disk-shaped temperature sensor of a hydraulic controller with heat contact which is intended to be placed on the bottom of a saucepan is inserted, and the controller has two control contacts that respond to different sensor temperatures,
of which the control contact that responds to the lower sensor temperature is assigned to the heating conductor that absorbs the high heat output required for parboiling and the control contact that reacts to the higher sensor temperature and to which the heating conductor that absorbs the lower heating output required for continued boiling.
This results in a fundamentally different effect than in the known arrangement of the .am cooking pot bottom adjacent sensor in a heating tube hotplate. For example, the mass cooking plate has a relatively high heat capacity or can be built with any heat capacity.
After switching from the high boiling power to the low continued cooking power, sufficient heat is still supplied to the food because the ring-shaped plate body transfers part of the heat stored in it to the food via the bottom of the saucepan. The switchover can take place at a food temperature that is still considerably below the boiling point of the water. without the heating-up time being significantly extended.
Because by that of feeling z. B. has an igewlssen heat contact with the plate body closing around it, the sensor assumes a higher temperature than the food to be cooked. Heat is also supplied to the food via the sensor. If the heat transfer resistance of the food is large, such as
B. in rice with milk, so - as a result of heat build-up in the food near the bottom - the heat flow from the bottom of the saucepan to the food is slowed ver. This increases the temperature of the hotplate, and a considerable amount of heat flows away from the hotplate to the sensor. The temperature of the sensor rises rapidly, which means that the continued cooking power is switched off quickly by the second control contact.
However, if the saucepan only contains water, then the energy transport from the hotplate to the food is considerable. There is no heat build-up in the water above the bottom of the saucepan. The hotplate stays cooler and the heat flow to the temperature sensor is low. The continuation of cooking remains effective for a longer period of time.
If the continued boiling power is selected so that it corresponds to about twice the power loss of the system at the boiling point of the food, the guarantee is given that the continued boiling power remains effective when water is boiled, so it is not switched off without excessive boiling.
The power loss of the system is z. B. beb the same saucepan diameter of that in the saucepan .Kochgutmen: ge only insignificantly dependent on the degree. The heat of evaporation going into the food to maintain you dens is essentially only dependent on the pot diameter and only to a small extent on the filling of the pot, because the loss to be covered by heat transfer to the room air changes .with the degree of filling of the Pot only a little.
In the case of hot plates with a diameter of 180 to 200 mm, which are common in household stoves, the power loss when the boiling temperature of the water is maintained is around 150 watts. With twice as much heating power, i.e. about 300 watts, with thin boiling skin, e.g. B. pure water, which opposes the heat flow from the radiator only a lower resistance, with a turn off the continued boiling power hardly or rarely to be expected because the heat flow from the radiator .zum sensor is only low.
According to this, a system is available for the critical range around 100 C, which allows a safe distance between start-up power and continued cooking power and a division of start-up power and continued cooking power, within which the housewife can cook as desired, for the call heating due to the presence of a high heat capacity Food is not at risk. The start-up performance is fully effective.
Due to the peculiarity of the coupling, of the sensor with the unheated middle part of the plate body, there is a triangular relationship between the heat transfer hotplate / pot, food, hotplate / feeler or probe / pot, cooked food that enables, i.e. that the available continued boiling capacity, both for sensitive food, with a large proportion of solids, and for simple water boiling.
The invention is explained below using an example shown in the drawing. 1 shows a mass cooking plate, partially in section, with a disc-shaped temperature sensor resting on the base of the saucepan and the temperature controller, FIG. 2, a diagram of the switching device, FIG. 3 a longitudinal section through a temperature controller under consideration, FIG 4 a plan view of this with the housing cap removed.
The hotplate shown in FIG. 1 is a mass of known hotplate design in which the hotplate body 1 has grooves 2 on an underside in an annular zone, in which the heating conductors 3 are embedded in insulating material. A middle part 4 of the hotplate is heated.
In addition, the hotplate body 1 is provided in a known manner with an overhang 5, which is pressed onto the casing of the hotplate body 1 as a channel-shaped sheet metal pressing part.
In the uribeheizten middle part 4 of the cooking plate body 1 has an opening 4 'into which a cylindrical' can 6 firmly inserted, for. B. is pressed in and therefore has thermal contact with the central part 4. The can 6 is closed at the bottom by a base 7 and has an opening bordered by a flange 8 facing downwards.
Inside the can, a disc-shaped temperature sensor 10 is loosely arranged, which: by the force of a helical compression spring 9 supported on the can bottom 7, is held in the rest position against the flange edge 8 and its upper side slightly protrudes over the hob plane. When placing a saucepan: on the hotplate, the base of the saucepan first sits on the disc-shaped one.
Sensor 10, which evades downwards against the force of the spring 9 and remains in a positive connection with the bottom of the cooking pot, which ensures good thermal contact. The temperature sensor 10 thus senses the temperature of the saucepan bottom, which is dependent on the temperature of the food.
The disk-shaped temperature sensor 10, which is filled with an expansion liquid, is connected via a capillary tube 11 to the switching element of a temperature regulator 12, which is designed as a diaphragm box in the exemplary embodiment. 3 and 4 will be described below. So that the disc-shaped temperature sensor 10 is easily movable in the can 6, the capillary tube 11 is in loops inside the can.
In the exemplary embodiment, the hotplate contains three heating conductors X, Y, Z. The two heating conductors X and Y have the same heating power of approximately 850 watts each, and heating conductor Z has a small one Heating output of around 300 watts, which can be considered as .fort cooking output. , All three heating conductors are connected in parallel to leads 15 and 1-6. In the temperature switch 12, two control contacts 17 and 18 are assigned to the three heating conductors. Furthermore, they can be switched off by a double switch 19, 20 provided in the power supply lines 15 and 16.
The two control contacts 17 and 18 are connected to the heating conductors X, Y, Z in such a way that when the two contacts are closed, all three heating conductors are connected in parallel, i.e. a heating output of about 2000 watts is achieved, and after switching off the contact 17 only the heating conductor Z remains switched on with about 300 watts as partial power. The two control contacts 17 and 18 switch in the manner still to be described at different temperatures, approximately 8 to 13 C, namely the control contact 18 associated with the low-power heating conductor Z switches at the higher temperature.
This results in the following mode of action. If the hotplate is switched on by closing the switch 19 and 20, the two control contacts 17 and 18 are initially closed, regardless of which switching temperature the temperature controller is set to. So it is always cooked with the maximum heating power of, for example, 2000 watts. Then the temperature of the food rises rapidly. If the set food temperature is reached, the control contact 17 switches off the two powerful heaters X and Y , and the low-power heating conductor Z remains switched on.
In addition to the heating power of the heating conductor Z, the heat stored in the hotplate body is still available for some time for further heating of the food, so that the food temperature for the time being rises relatively quickly.
In the case of food made from water or water-containing niches that do not allow the temperature to rise above the boiling point of the water, the controller is set in such a way that the high-performance heating elements X and Y takes place through the contact 17 when the boiling temperature of the water in the food has not yet been reached.
The heating output of the heating conductor Z is measured at 300 watts so that, if the saucepan only contains water, it safely maintains the boiling state of the food, i.e. an increase in temperature at which the contact 17 again removes the heating conductor X </ I> and Y . Switch would not occur. The correct setting of the temperature controller for such food is marked on the setting head.
Since the temperature sensor 10 is also warmed from the hotplate via its guide box 6, which has thermal contact with the central part 4 of the hotplate, its temperature is higher than that of the food, so that heat is also passed into the food via the sensor. The amount of heat branched off via the sensor depends on the extent to which heat flows into the food from the heating ring via the saucepan base. If the food to be cooked offers little resistance to the heat input, e.g.
If, for example, pure water is used, the heat flow mainly goes from the heating ring via the base of the saucepan into the food, and only a little heat is diverted via the sensor, the sensor temperature then rises. only slightly above the food temperature. The result is,
that the .heating conductor Z remains switched on permanently or is only. seldom switched off. But if the food to be cooked opposes a great resistance to the heat input, such as B. Food with a large proportion of solids, the heat flow from the heating ring to the food is inhibited. The temperature of the hotplate rises and a lot of heat inevitably flows to the sensor.
The result is that the sensor quickly assumes a temperature at which the second control contact 18 switches off the heating conductor Z. After the hotplate body has cooled down accordingly, the sensor temperature drops again so far that the control contact 18 switches the heating conductor Z on again.
In turn, the heat capacity of the exhibition hotplate has a favorable effect by preventing high switching frequency. The mean continued cooking output is therefore less than: the heating output of the heating conductor Z.
The heat supply adapts automatically to the heat demand of the food when it continues to cook. With reference to FIGS. 3 and 4, an exemplary embodiment of a suitable temperature controller is described below. The controller housing consists of a base plate 21 and a housing cap 22 that can be placed on it.
In the base plate 21, a threaded bushing 23 is firmly inserted, for. B. riveted, in which the regulating spindle 24 with a thread having thicker end portion 25 can be screwed.
On the end face of the spindle section 25 protruding into the housing space, a membrane can 26 is supported with a "central" bottom extension 27, which has a pin extension 28 leading into an axial bore of the regulating spindle for centering the membrane can.
The membrane socket 26, together with the easily bendable capillary tube 11 soldered into its base 27 and the sensor disk 10 soldered to its free end, forms the pressure system filled with an expansion liquid. The capillary tube 11 is in;
Spiral windings led around the Bo denansatz 27 of the diaphragm box 26 and a not shown,: on the Cmundplatde 21 provided clamp through a recess, the housing cap 22 to the outside: led out.
The rotational movement of the regulating spindle 24 is in a manner not shown on not quite an order of rotation, for. B. 270 degrees, limited. The diaphragm box 26 is attached to the base plate 21, which consists of an insulating material housing 29 of a snap switch.
The snap switch has two snap switch systems 30, which are known per se and do not require any further description, each with a movable switching contact 31 and a fixed counter contact 32. The two snap systems correspond to the control contacts 17 and 18 in FIG. 2. The two contact means of each snap switch system are terminal lugs 3.3 and 34 led out to the outside.
To operate each snap system, a pressure pin 35 is led out on the side of the housing 29 facing away from the base plate 21. On this side of the housing, a two-armed lever 36 is arranged to transmit the control movement of the membrane .auf, the two pressure pins 35 of the snap systems 30,
which is pivotable about a fixed axis 37 and with its one lever arm over the center of the membrane and with its other lever arm over the two pressure pins 3.5 engages. In the lever arm reaching over the membrane there is an adjusting screw 38 which can be screwed against a pressure disk 39 provided in the middle of the membrane and is accessible for operation with a screwdriver through an opening 40 of the housing cap 22.
The lever arm reaching over the switch housing 29 is under the force of the pressure pins 35 surrounding screw pressure springs 41, by means of which the other lever arm with the adjusting screw 38 is held in frictional connection with the membrane. The arm of the transfer lever on the switch side acts simultaneously on the two pressure pins 35 and has an adjusting screw 42 for each snap system.
The two adjusting screws 42 can be operated in the same way as the diaphragm-side adjusting screw 38 from the side facing away from the base plate through holes 43 in the housing cap 22. They serve either a simultaneous or, as it comes into consideration within the scope of the invention, a temperature difference of a certain temperature of z.
B. 8 to 13 C offset switching the two snap systems to force it. The adjusting screw 38 above the membrane is used for joint readjustment.
In dashed lines in front of the base plate in FIG. 3, a block switch 45 penetrated by the regulating spindle 24 is indicated, which contains the double switch 19, 20 (FIG. 2), which is closed when the regulating spindle is turned out of the zero position.
