Vorrichtung zum Langwirken von mittels einer Messerstern-Teigteil- und -wirkmaschine rundgewirkten Teigkugeln Die Erfindung betrifft eine Vorrichtung zum Lang wirken von mittels einer Messerstern-Teigteil- und -wirkmaschine rundgewirkten Teigkugeln.
Bisher wurden die in der Messerstern-Teigteil- und -wirkmaschine rundgewirkten Teigkugeln entweder von Hand langgewirkt, was sehr mühselig war, oder die Teigkugeln wurden in der Messerstern-Teigteil- und -wirkmaschine selbst langgewirkt, indem diese einen besonderen Antriebsmechanismus enthielt, der der Wirkunterlagplatte mit dem darauf ruhenden Wirk teller oder dem Press- und Schneidkopf eine hin und her gehende Bewegung erteilte.
Der besondere Antriebs mechanismus machte die Maschine verhältnismässig kompliziert; ausserdem wurde hierbei der zeitliche Ausnutzungsgrad der Maschine zum Rundwirken be einträchtigt, das heisst, mit der kombinierten Rund- und Langwirkmaschine konnten in der gleichen Zeit nur weniger Teigformlinge hergestellt werden, als mit einer nur zum Rundwirken eingerichteten Messer stern-Teigteil- und -wirkmaschine.
Die Verwendung der Messerstern-Teigteil- und -wirkmaschine zum Langwirken ist daher in den mei sten Fällen unwirtschaftlich. Die Erfindung bringt nun eine verhältnismässig einfache Vorrichtung, mit der die in einer Messerstern-Teigteil- und -wirkmaschine rund gewirkten Teigkugeln langgewirkt werden können.
Die erfindungsgemässe Vorrichtung ist gekennzeichnet durch einen Wirkrahmen mit länglichen Fächern und durch eine Formplatte, die beide von oben absenkbar sind, sowie durch einen wahlweise in die Messerstern- Teigteil- und -wirkmaschine oder in die Vorrichtung zum Langwirken einsetzbaren Wirkteller der relativ zum Wirkrahmen und zur Formplatte in Richtung der kleinsten Querschnittachse der Fächer des Wirkrah mens hin und her bewegbar ist.
Durch einen solchen Wirkrahmen in Verbindung mit einer von oben auf die Teigkugeln drückenden Formplatte können die Teigkugeln einwandfrei lang gewirkt werden, wobei es durch die Regelung der Ab senkbewegung insbesondere der Formplatte möglich ist, den Wirkvorgang an die jeweiligen Eigenschaften des Teiges anzupassen. Es ist dabei zweckmässig, die Formplatte aus durchsichtigem Werkstoff herzustellen, vorzugsweise aus durchsichtigem Kunststoff, z. B. Polyacrylsäureester, wie er unter der Markenbezeich nung Plexiglas im Handel ist.
Hierdurch ist es möglich, den Ablauf des Langwirkvorganges laufend zu beob achten, was beim Langwirken in einer Messerstern- Teigteil- und -wirkmaschine nicht möglich ist, da durch den Presskolben hindurch der Wirkvorgang nicht be obachtet werden kann. Die Möglichkeit, den Langwirkvorgang beobachten zu können, ist in der Praxis jedoch von grosser. Bedeu tung, da andernfalls der Teigformling leicht überwirkt werden kann und die Wirkhaut des Formlings zerstört werden kann.
Aus dem gleichen Grund ist es erforder lich, dass die Formplatte regelbar absenkbar ist. Das Absenken erfolgt dabei vorzugsweise von Hand unter stetiger Beobachtung des Langwirkvorganges. Der Wirkrahmen und die Formplatte können dabei gemeinsam absenkbar sein.
Es ist jedoch vorteilhaft, den Wirkrahmen und die Formplatte unabhängig von einander abzusenken, da hierbei zunächst der Wirk rahmen derart um die Teigkugeln herum gebracht werden kann, dass eine völlige Trennung der Teigkugeln voneinander und eine Führung der Teigkugeln in Rich tung der Langwirkbewegung erfolgt. Die Formplatte wird dann unabhängig vom Wirkrahmen entsprechend der beim Langwirken auftretenden Abnahme des Durchmessers der Formlinge abgesenkt.
Dies kann mit einer Vorrichtung erreicht werden, bei der der Wirkrahmen und die Formplatte durch Federn miteinander verbunden sind. Die die Abwärts und Aufwärtsbewegung bewirkenden Mittel können dabei an die Formplatte oder vorzugsweise am Wirk rahmen angreifen.
Es ist auch möglich, die Formplatte in einzelne, von einer gemeinsamen Halteplatte getragene, Teil platten aufzuteilen, die in die Fächer des Wirkrahmens absenkbar sind. Bei dieser Ausführung ist zwar eine besonders gute Trennung und Führung der Formlinge möglich, jedoch ist der Langwirkvorgang hierbei, auch wenn die Teilplatten und die Halteplatte durchsichtig ausgebildet werden, nicht so leicht zu beobachten, wie dann, wenn die Formplatte als durchgehende plan parallele Platte ausgebildet ist.
Der Langwirkvorgang wird dadurch begünstigt, dass die Fächer des Wirkrahmens ovalen Querschnitt aufweisen. Die Fächer werden dann derartig im Wirk rahmen angeordnet, dass die grossen Achsen der Ovale zueinander parallel liegen und zur Richtung der Lang wirkbewegung senkrecht liegen. Ausserdem liegen die Mittelpunkte der Ovale benachbarter Reihen auf dia gonal gerichteten geraden Linien. Mit Vorteil werden die vom Messerstern gebildeten Wirkfächer der zuvor zur Anwendung kommenden Messerstern-Teigteil- und -wirkmaschine ebenfalls eine diagonale Einteilung der Fächer, das heisst Fächer mit rhombischem Querschnitt, aufweisen.
Bei den bekannten Maschinen dienen die gleichen rhombischen Fächer zugleich zum Langwirken. Beim Langwirkvorgang sind jedoch rhombische Fächer ge genüber den ovalen Fächern unvorteilhaft.
Die Betätigung der Langwirkvorrichtung kann ent weder von Hand erfolgen oder auf maschinellem Wege. In letzterem Falle wird der Wirkrahmen und die Form platte zweckmässigerweise in einem Gestell in lotrechter Richtung auf und ab bewegbar gelagert und die Ab senkbewegung des Wirkrahmens und der Formplatte über einen Handhebel gemeinsam oder über zwei Hand hebel getrennt vorgenommen.
Für die Erzeugung der Langwirkbewegung kann in dem Gestell ein an sich bei Rundwirkmaschinen bekannter Kurbeltrieb mit einstellbar veränderlichem Kurbelradius vorgesehen sein, wobei dessen Kurbel zapfen über ein Pleuel oder einen Gleitstein mit der Wirkunterlagplatte, auf die der aus der Messerstern- Teigteil- und -wirkmaschine zusammen mit den Teig kugeln herausgenommene Wirkteller aufgelegt wird, verbunden ist.
Die Erfindung ist an einigen Ausführungsbeispie len und in weiteren. Einzelheiten in den Fig. 1 bis 14 erläutert.
Fig. 1 zeigt in Vorderansicht im Schnitt einen Wirk rahmen mit in Teilplatten unterteilter Formplatte, Halteplatte, Haltebügel und Vertikal- sowie Horizon talführung, in der linken Hälfte in ausgehobener Stel lung vor dem Langwirken, in der rechten Hälfte in abgesenkter Stellung am Ende des Langwirkens. Fig. 2 zeigt eine Draufsicht auf die Vorrichtung nach Fig. 1.
Fig. 3 zeigt in Seitenansicht eine entsprechende Vorrichtung, bei der diese jedoch nach hinten aus dem Bereich des Wirktellers ausgefahren werden kann.
Fig. 4 zeigt eine Draufsicht auf die Vorrichtung nach Fig. 3.
Fig. 5 zeigt in Draufsicht eine von Hand betätigte Langwirkvorrichtung.
Fig. 6 zeigt in Draufsicht einen horizontalen Schnitt durch das Messernetz und den Teigumfassungsring eines an die Teilung und Anordnung der Wirkfächer der Langwirkvorrichtung angepassten Press- und Teil kopfes einer nur zum Rundwirken eingerichteten Mes- serstern-Teigteil- und -wirkmaschine.
Fig. 7 zeigt in Seitenansicht im Schnitt die Lang wirkvorrichtung zu Beginn des Langwirkvorganges. Fig. 8 zeigt die Vorrichtung zu Ende des Langwirk- vorganges.
Fig. 9 zeigt in Vorderansicht im Schnitt 1-I gemäss Fig. 14 das Oberteil einer maschinell angetriebenen Langwirkvorrichtung zu Beginn des Arbeitsvorganges.
Fig. 10 zeigt in Vorderansicht im Schnitt 1-I gemäss Fig. 14 die gesamte maschinell angetriebene Vorrich tung zu Ende des Langwirkvorganges.
Fig. 11 zeigt in Draufsicht, Fig. 12 zeigt in Vorderansicht Einzelheiten des Steuerungs- und Bewegungsmechanismus. Fig. 13 zeigt eine Seitenansicht im Schnitt XIII-XII I gemäss Fig. 14.
Fig. 14 zeigt eine Draufsicht auf die Vorrichtung nach den Fig. 9, 10 und 13.
Bei der in Fig. 1 und 2 gezeigten Anordnung wird auf den Wirkteller, der auf einen Tisch aufgelegt ist und dort durch einen in die Arretierbohrung 2 des Wirktellers 1 eingreifenden Dorn gehalten wird, die Vorrichtung von oben aufgesetzt. Der Wirkteller 1 ist auch in die nichtdargestellte Messerstern-Teigteil- und -wirkmaschine, in welche das Rundwirken der Teig kugeln erfolgt, einsetzbar. Die Vorrichtung stützt sich dabei gegenüber dem Wirkteller 1 auf dessen gerad linigen seitlichen Begrenzungsflächen mittels Gleit- stücken 12 ab.
Die Vorrichtung kann daher über dem Wirkteller 1 und den auf ihn liegenden Teigkugeln 10 zum Langwirken in einer Richtung waagrecht hin und her geschoben werden. Die Vorrichtung besteht aus einem in Fächer unterteilten Wirkrahmen 5. In die Fächer, die, wie aus Fig. 2 ersichtlich, in einer der Ver teilung der Wirkfächer der Messerstern-Teigteil- und -wirkmaschine entsprechenden Lage angeordnet sind, reicht die in Teilplatten 4 unterteilte Formplatte von oben hinein. Die Teilplatten 4, die im äusseren Umriss dem Innenumfang der Fächer entsprechen, sind an einer Halteplatte 3 befestigt.
Die Halteplatte 3 ist über Schraubenbolzen 6 und Verstellmuttern 7 mit einem darüber liegenden Tragbügel 8 verbunden, dessen Schenkelenden an am Wirkrahmen 5 vorgesehenen Augen 9 befestigt sind. Die Teilplatten 4 sind damit starr, jedoch in der Höhe einstellbar, mit dem Wirkrahmen 5 verbunden. Es ist jedoch auch möglich, die Teilplatten 4 gegenüber dem Wirkrahmen 5 um einen gewissen Betrag in der Höhe beweglich anzuordnen, damit nach Absenken des Wirkrahmens 5 über die Teigkugeln 10 gegebenenfalls auch eine getrennte Absenkung der Teilplatten 4 auf die Teigkugeln 10 möglich ist.
Hierdurch lässt sich die Vorrichtung verschiedenen Durchmessern der Teig kugeln und auch den abnehmenden Durchmessern der langgewirkten Teigkugeln leichter anpassen.
Die Vorrichtung, deren Gleitstücke 12 über verti kale in einer Hülse 13 gleitende Bolzen 11 getragen werden, die gegenüber der Hülse 13 durch Federn 16 abgestützt sind, wird durch die Federn 16 in ihrer oberen Lage, der Ruhelage gehalten.
Das Absenken der Vorrichtung kann von Hand leicht vorgenommen werden, wobei der Tragbügel 8 als Handgriff dient. Beim Absenken werden die Federn 16, wie aus der rechten Hälfte der Fig. 1 ersichtlich, zusammengedrückt, so dass nach Loslassen der Vor richtung diese selbsttätig wieder ihre, in der linken Hälfte der Fig. 1 dargestellte Ausgangslage einnimmt.
Zur Begrenzung der Abwärtsbewegung der Vor richtung, das heisst um eine unmittelbare Berührung der Unterseite des Wirkrahmens 5 mit der Oberseite des Wirktellers 1 zu verhindern, sind auf dem Schaft 14 der vertikalen Führungsbolzen 11, Anschlagflächen 15 vorgesehen, gegen die der obere Boden der Hülse 13 in der tiefsten Stellung der Vorrichtung anstösst.
Wenn die Teilplatten 4 aus durchsichtigem Werk stoff hergestellt sind, um den Langwirkvorgang be obachten zu können, müssen in der Halteplatte 3, Durchbrechungen 25 vorgesehen sein oder die Halte platte 3 muss ebenfalls aus durchsichtigem Werkstoff hergestellt sein.
Während die in den Fig. 1 und 2 gezeigte Vorrich tung unmittelbar auf dem Wirkteller 1 sich abstützt und demnach nur um einen verhältnismässig geringen Betrag gegenüber dem Wirkteller 1 verschiebbar ist, ist bei der in Fig. 3 und 4 gezeigten Anordnung für die Abstützung der Vorrichtung eine besondere Gleit führung vorgesehen, auf der die Vorrichtung vom Wirkteller 1 nach hinten ausgefahren werden und für den Langwirkvorgang wieder nach vorn über die Teig kugeln 10 gefahren werden kann. Hierdurch ist eine bequeme Handhabung der Vorrichtung und des Wirk tellers 1 möglich.
Die Führung für die Vorrichtung besteht aus zwei Schienen 19, die vorn und hinten durch Querstücke 20 und 21 miteinander verbunden sind.
Die Schienen 19 können zugleich zur seitlichen Halterung des Wirktellers 1 dienen, indem sie mit des sen seitlichen Begrenzungsflächen 17 zur Anlage kom men. In dem vorderen Querstück 20 ist ein Dorn vor gesehen, der in die Arretierbohrung 2 des Wirktellers 1 eingreift. Besonders bei dieser Anordnung ist es vor teilhaft, die Gleitstücke 12 durch Rollen zu ersetzen, die in geeigneter Anordnung angebracht sein können, dass sie auch von unten an den Schienen 19 angreifen, wodurch ein Kippen der Vorrichtung leichter verhin dert werden kann.
Um die Vorrichtung leicht in die richtige Lage oberhalb der Teigkugeln 10 bringen zu können, sind Anschläge 23 vorgesehen, mit denen die Vorrichtung, beispielsweise deren Halteplatte 3, zum Anschlag kommt, wenn die Vorrichtung nicht heruntergedrückt ist. Wird die Vorrichtung dann heruntergedrückt, so werden die Anschläge 23 von der Halteplatte 3 unter fahren, so dass eine Langwirkbewegung nach vorn und hinten erfolgen kann. Die gesamte Anordnung kann mittels zweier Schraubzwingen 24 an einer Tischplatte 22 festgeklemmt werden.
In den Fig. 5, 7 und 8 ist eine weitere besonders einfache von Hand betätigte Langwirkvorrichtung ge zeigt. Die aus durchsichtigem Werkstoff bestehende Formplatte 27 ist in vertikaler Richtung auf am Wirk rahmen 5 befestigten Bolzen 30 geführt und wird durch Federn 31 mit mässiger Kraft abwärts auf den Wirk rahmen 5 gedrückt.
Da die Höhe des Wirkrahmens 5 dem kleinsten Durchmesser der langgewirkten Formlinge 10 ent spricht, bleibt die Formplatte 27 während des Lang wirkvorganges ständig mit den Formlingen 10 in Be rührung. Selbstverständlich kann auch eine untere Begrenzung für den Weg der Formplatte 27 vorgesehen sein, so dass zu Ende des Langwirkvorganges die Form- linge 10 von der Formplatte 27 nicht mehr berührt werden.
Der Wirkrahmen 5 ist zweckmässigerweise mittels seitlicher Rollen 26 oder durch entsprechende Stütz leisten aus Kunststoff, zum Beispiel solchen auf Poly- amid-Basis, abgestützt, um zu vermeiden, dass die Unterkante des Wirkrahmens 5 auf dem Wirkteller 1 reibt.
Der Wirkrahmen 5 ist seitlich mit zwei Handgriffen 28 versehen, mittels derer er sowohl über die Form- linge 10 gebracht als auch für das Langwirken in Richtung des Doppelpfeiles 29, d. h. in Richtung der kleinsten Querschnittachse des Wirkrahmens hin und her bewegt werden kann.
Der Wirkrahmen 5 soll zwecks leichter Handha bung geringes Gewicht haben. Er kann aus Leicht metall oder Kunststoff, vorteilhafterweise aus Poly amid, bestehen, kann jedoch auch dünnwandig aus Blech hergestellt sein.
Die Zahl und Anordnung der Fächer des Wirk rahmens ist gleich der in Fig. 6 gezeigten Anordnung und Zahl der vom Messernetz 63 und Teigumfassungs- ring 62 gebildeten Wirkfächer der zur beschriebenen Vorrichtung gehörenden Messerstern-Teigteil- und -wirkmaschine. Es ist jedoch vorteilhaft, den lediglich zum Langwirken dienenden Fächern des Wirkrahmens 5 nicht eine rhombische, sondern eine ovale Quer schnittsform zu geben, da hierdurch der Langwirkvor- gang begünstigt wird.
In den Fig. 9 bis 14 ist eine Langwirkvorrichtung gezeigt, bei der die Langwirkbewegung auf maschinel lem Wege, das heisst durch Kraftantrieb, erzeugt wird, während die Absenkbewegung des Wirkrahmens und der Formplatte mittels eines am Gestell der Vorrich tung gelagerten Handhebels erfolgt. Die Bedienung der Vorrichtung ist hierdurch erleichtert, ohne dass auf eine feinfühlige Absenkbewegung, wie sie der Teig erfordert, verzichtet wird.
Im Gestell 46 der Vorrichtung sind in einer Deckel platte 45 und einem Zwischenboden 44 zwei Führungs stangen 32 geführt, an deren oberem Ende der Wirk rahmen 5 befestigt ist. Der Wirkrahmen 5 ist in rhom bischer Anordnung mit ovalen Wirkfächern versehen.
Auf dem Wirkrahmen 5 ist eine durchsichtige Form platte 27 mittels Bolzen 30 in lotrechter Richtung ver- schiebblich geführt. Die Formplatte 27 wir durch Federn 31 von oben auf den Wirkrahmen 5 gedrückt. Es ist zweckmässig, die Spannung der Federn 31 ein stellbar zu machen, zum Beispiel dadurch, dass das obere Ende der Bolzen 30 mit Gewinde versehen ist, auf das Muttern aufgeschraubt sind, gegen die sich das obere Ende der Federn 31 abstützt.
Die Anordnung kann auch so getroffen werden, dass das obere Ende der Stangen 32 mit der Formplatte 27 verbunden ist und dass der Wirkrahmen 5 auf den Stangen 32 geführt und in der Abwärtsbewegung durch Anschläge an den Stangen 32 begrenzt, von der Form platte 27 aus durch Federn abwärts gedrückt wird.
In der Deckelplatte 45 sind Führungen 35 für eine Wirkunterlagplatte 34 vorgesehen, so dass sich diese nur in Richtung von vorn nach hinten hin und her schieben lässt. Die Wirkunterlagplatte 34 weist am Rande Anschläge 37 zur Zentrierung des Wirktellers 1 auf, auf dem die rundgewirkten Formlinge 10 aus der Rundwirkmaschine in die Langwirkvorrichtung ein gebracht werden. Die Wirkunterlagplatte 34 weist fernerhin ebenso wie bei der Rundwirkmaschine am vorderen Ende einen Zapfen 60 auf, der in eine ent sprechende Bohrung des Wirktellers 1 eingreift.
Die Langwirkbewegung der Wirkunterlagplatte 34 mit Wirkteller 1 wird durch einen an sich von Rund wirkmaschinen her bekannten Kurbeltrieb erzeugt. Der Kurbeltrieb besteht aus einer im Zwischenboden44 gelagerten Kurbelwelle 40, die am oberen Ende eine senkrecht zur Kurbelachse laufende Schlittenführung 39 aufweist, auf der der Kurbelzapfen 36 zwecks Verände rung des Kurbelradius verschiebbar gelagert ist und an deren unterem Ende eine Riemenscheibe 42 befestigt ist.
Die Einstellung des Kurbelradius erfolgt in bekann ter Weise über eine in der Kurbelwelle 40 verschieblich gelagerte Stange 41, deren oberes Ende über einen Winkelhebel 38 an dem den Kurbelzapfen 36 tragenden Gleitstück 39 angreift und an deren unteren Ende ein Steuerhebelpaar 50 für die Verstellung des Wirkradius angreift.
Der Kurbelzapfen 36 ist über ein Pleuel 58 mit einem an der Wirkunterlagplatte 34 befestigten Zap fen 33 verbunden.
Die unteren Enden der Führungsstangen 32 sind durch eine Traverse 43 miteinander verbunden, auf deren Mitte ein Lagerbock 49 befestigt ist, der zwei Lageraugen 53 aufweist. An einem durch die Lager augen 53 gesteckten Bolzen greift ein mit einem Lang loch 55 versehener Betätigungshebel 51 an, der ebenso wie das Steuerhebelpaar 50, auf einer im Gestell 46 gelagerten Betätigungswelle 48 befestigt ist, die mit einem Handhebel 59 versehen ist.
Beim Verschwenken des Handhebels 59 derart, dass das Steuerhebelpaar 50 und der Betätigungshebel 51 abwärtsschwenken, wird zunächst der Wirkrahmen 5 mit der Formplatte 27 über die Formlinge 10 abwärts gesenkt, und zwar derart, dass die Formplatte 27 zu nächst nur einen schwachen Druck auf die Oberseite der kugelförmigen Formlinge 10 ausübt. Beim weiteren Verschwenken des Handhebels 59 wird über das Steuer hebelpaar 50 die Stange 41 in der Kurbelwelle 40 ent gegen der Kraft einer Feder abwärts gezogen und da durch der Kurbelradius vergrössert, so dass die Wirk unterlagplatte 34 zusammen mit dem Wirkteller 1 be ginnt, Langwirkbewegungen auszuführen.
Hierbei wird zugleich der Wirkrahmen 5 weiter abgesenkt und der Druck der Formplatte 27 auf die Formlinge 10 vergrössert. Ein zu starkes Ansteigen des Druckes der Formplatte 27 auf die Formlinge 10 beim weiteren Ab senken des Wirkrahmens 5 bei dem zugleich eine Ver grösserung des Wirkausschlages stattfindet, wird durch die Federn 31 vermieden, die der Formplatte 27 die Möglichkeit geben, sich von dem Wirkrahmen 5 abzu heben.
Wird hierbei die Langwirkbewegung fortgesetzt, so werden die Formlinge 10 bis zu der gewünschten Endform weiter langgewirkt. Durch die durchsichtige Formplatte 27 hindurch kann der Langwirkvorgang leicht beobachtet werden und sein Ablauf durch mehr oder weniger starkes Absenken der Formplatte 27 be einflusst werden.
Um den Zeitpunkt des Einsetzens der Wirkbewe gung im Anschluss an das Absenken des Wirkrahmens 5 einstellen zu können, ist es zweckmässig, den Betäti gungshebel 51, wie Fig. 12 zeigt, auf seiner Nabe 52 schwenkbar und feststellbar anzuordnen. Hierzu ist die Nabe 52 mit einem seitlichen Ansatz versehen, der ein Langloch 54 aufweist. Durch das Langloch 54 ist eine Schraube geführt, deren Gewinde in den Betäti gungshebel 51 eingreift und den Betätigungshebel 51 mit dem seitlichen Ansatz der Nabe 52 zusammen spannt.
Sind die Formlinge 10 langgewirkt, so wird zu nächst durch Wiederaufwärtsschwenken des Steuer hebelpaares 50 und unter dem Druck der in die Kurbel welle 40 eingebauten, die Stange 41 nach oben drücken den Feder der Wirkausschlag wieder verkleinert oder auf den Wert Null gebracht, sodann wird durch den Betätigungshebel 51 der Wirkrahmen 5 mit der Form platte 27 angehoben.
Zur Gewichtsentlastung der sich in lotrechter Rich tung bewegenden Teile sind auf den Stangen 32 Ent lastungsfedern 57 vorgesehen, deren untere Enden sich auf dem Zwischenboden 44 und deren oberes Ende sich gegen einen Stift oder Bund an den Stangen 32 abstützt.

The special drive mechanism made the machine relatively complicated; In addition, the degree of utilization of the machine for rounding was impaired, i.e. with the combined round and long molding machine only fewer dough pieces could be produced in the same time than with a knife star dough dividing and molding machine set up for round molding only.
The use of the knife star dough dividing and knitting machine for long working is therefore uneconomical in most cases. The invention now provides a relatively simple device with which the dough balls knitted round in a knife star dough dividing and knitting machine can be long-knitted.
The device according to the invention is characterized by a knitting frame with elongated compartments and a mold plate, both of which can be lowered from above, as well as by a knitting plate which can be used either in the knife star dough dividing and knitting machine or in the device for long knitting Mold plate is movable back and forth in the direction of the smallest cross-sectional axis of the compartments of the Wirkrah mens.
By such a knitting frame in conjunction with a form plate pressing from above on the dough balls, the dough balls can be worked perfectly long, whereby it is possible by regulating the lowering movement from the mold plate in particular to adapt the kneading process to the respective properties of the dough. It is useful to make the mold plate from transparent material, preferably from transparent plastic, for. B. Polyacrylic acid ester, as it is under the brand name Plexiglas in trade.
This makes it possible to continuously observe the course of the long molding process, which is not possible with long molding in a knife star dough dividing and molding machine, since the molding process cannot be observed through the plunger. In practice, however, the possibility of observing the long-knitting process is greater. Significance, since otherwise the dough can easily be overwhelmed and the active skin of the molded product can be destroyed.
For the same reason, it is required that the mold plate can be lowered in an adjustable manner. The lowering is preferably done by hand while continuously observing the long-acting process. The knitting frame and the mold plate can be lowered together.
However, it is advantageous to lower the kneading frame and the mold plate independently of each other, since here the kneading frame can first be brought around the dough balls in such a way that the dough balls are completely separated from each other and the dough balls are guided in the direction of the long-acting movement. The mold plate is then lowered, independently of the knitting frame, in accordance with the decrease in the diameter of the moldings that occurs during long knitting.
This can be achieved with a device in which the knitting frame and the mold plate are connected to one another by springs. The means causing the downward and upward movement can act on the mold plate or preferably on the active frame.
It is also possible to divide the mold plate into individual plates, carried by a common holding plate, which can be lowered into the compartments of the active frame. In this embodiment, the moldings can be separated and guided particularly well, but the long-knitting process is not as easy to observe here, even if the partial plates and the holding plate are made transparent, as when the mold plate is designed as a continuous plane parallel plate is.
The long knitting process is promoted by the fact that the compartments of the knitting frame have an oval cross section. The compartments are then arranged in the knitting frame in such a way that the major axes of the ovals are parallel to one another and are perpendicular to the direction of the long acting movement. In addition, the centers of the ovals of adjacent rows lie on diagonally directed straight lines. Advantageously, the knives formed by the knife star of the knife star dough dividing and knitting machine that was previously used will also have a diagonal division of the pockets, that is to say fans with a rhombic cross section.
In the known machines, the same rhombic fans also serve for long knitting. In the long-knitting process, however, rhombic fans are disadvantageous compared to oval fans.
The actuation of the long-knitting device can either be done by hand or by machine. In the latter case, the knitting frame and the mold plate is conveniently stored in a frame in a vertical direction up and down movable and the lowering movement of the knitting frame and the mold plate is made jointly via a lever or via two levers separately.
To generate the long molding movement, a crank mechanism known per se in circular molding machines with an adjustable crank radius can be provided in the frame, the crank pin being connected to the knitting support plate via a connecting rod or a sliding block on which the knife star dough dividing and knitting machine works together with the dough balls removed kneading plate is placed is connected.

In the arrangement shown in FIGS. 1 and 2, the device is placed from above on the active plate, which is placed on a table and is held there by a mandrel engaging in the locking bore 2 of the active plate 1. The device, the sliders 12 of which are worn on verti cal in a sleeve 13 sliding bolts 11, which are supported against the sleeve 13 by springs 16, is held by the springs 16 in its upper position, the rest position.

In Figs. 5, 7 and 8, another particularly simple hand-operated long-knitting device is ge shows. Since the height of the knitting frame 5 corresponds to the smallest diameter of the long-knitted moldings 10, the mold plate 27 remains constantly in contact with the moldings 10 during the long-acting process. The active frame 5 is expediently supported by means of lateral rollers 26 or by corresponding support strips made of plastic, for example those based on polyamide, in order to prevent the lower edge of the active frame 5 from rubbing on the active plate 1.
The knitting frame 5 is laterally provided with two handles 28, by means of which it can be brought over the shaped articles 10 and also for long knitting in the direction of the double arrow 29, i.e. H. can be moved back and forth in the direction of the smallest cross-sectional axis of the active frame.
The active frame 5 is intended to be lightweight for easy handling. It can be made of light metal or plastic, advantageously of poly amide, but it can also be made of sheet metal with thin walls.
