  <B>Procédé pour la préparation d'un extrait de</B> café,<B>pulvérulent,</B>  soluble et exempt de caféine.    On connaît des procédés qui permettent  d'obtenir du café en grains, exempt de caféine,  à partir duquel on peut préparer des infu  sions de café sans caféine, destinées soit direc  tement à la consommation, soit à la prépara  tion par concentration d'extraits de café. Ces  procédés consistent tous à extraire la caféine  du café vert à l'aide de solvants organiques,  car une telle extraction, si elle était effectuée  sur du café torréfié, enlèverait de     celui-ci.     non seulement la caféine, mais également une  plus ou moins grande partie des éléments  aromatiques formés au cours de la torréfac  tion.

  Ce procédé comporte une extraction par  voie aqueuse de café torréfié renfermant de  la caféine et la concentration de la liqueur    d'extraction jusqu'à l'obtention d'une poudre.  Il est caractérisé en ce que l'on traite cette  poudre avec un dissolvant organique pour  en extraire la caféine.  



  L'extrait ainsi préparé n'a pratiquement  pas de différence au point de     vue    goût et       arome    avec les extraits contenant de la caféine.  



  On peut, soit avant, soit après le traite  ment avec le dissolvant organique destiné à  extraire la caféine, ajouter à la poudre des  hydrates de carbone en quantité juste suffi  sante pour que celle-ci garde son aspect pul  vérulent.  



  Comme dissolvant organique, on peut uti  liser des hydrocarbures aromatiques comme  le benzène, des dissolvants chlorés comme le  chloroforme, le trichloréthylène, etc.  



  Voici, à titre d'exemple, comment le pro  cédé de l'invention peut être exécuté  On fabrique à partir de café non décaféiné  et par un procédé connu un extrait de café  en poudre. On fait subir à cette poudre, dans  un appareil d'extraction, un traitement par  un dissolvant organique (chloroforme, ben  zène, trichloréthylène) jusqu'à épuisement de  la poudre en caféine. On retire de l'appareil  la poudre exempte de caféine et contenant  encore un peu de dissolvant, puis on la sèche       dans    un appareil permettant de récupérer les  restes de dissolvant.    On peut  y ajouter un hydrate de carbone en quan-           tité        juste    suffisante pour lui     conserver    son  aspect     pulvérulent.     



  La solution d'extraction obtenue peut être  distillée pour en récupérer le dissolvant et  en retirer la caféine, qui peut être ensuite  purifiée par cristallisation.

  It is possible, either before or after the treatment with the organic solvent intended to extract the caffeine, to add carbohydrates to the powder in just sufficient quantity so that the latter keeps its pulverulent appearance.
