Teigform-verfahren und -Dlaschine. Die Erfindung betrifft ein Verfahren zum Formen von Teig und eine Maschine zur mechanischen Ausführung dieses Ver fahrens. .
Damit die Erfindung richtig verstanden wird, wird zuerst,das jetzt allgemein übliche Verfahren .anhand von Fig.1. und \? der Zeichnung beschrieben. Die übrigen Figuren werden später erläutert.
Beim Formen von Teig nimmt der Bäcker eine teilweise aufgefangene Teigkugel 1. und formt dieselbe zu einem an den .Enden zu gespitzten Teigstück 2. Er fasst dieses Teig stück links und rechts an und dehnt es in der Breitenrichtung aus, so .dass sich eine längliche Scheibe ergibt, deren Mittelteil 3 in der Draufsicht schwach konkave Ränder zeigt, während die Enden 4 zugespitzt sind. Diese Enden 4 werden darauf umgelegt, worauf das Hinterende des Teiges bei 5 ein gerollt und die so geformte Scheibe zu einem Zylinder gewickelt wird, welcher darauf zu einer langen dünnen Rolle 6 ausgewalzt wird.
Der Teig ist nun zum weiteren Auf gehen und zum Backen fertig.
Weil mit der Anwendung dieses üblichen Handformverfahrens günstige Erfolge er zielt werden, hat m.an versucht, das gleiche Verfahren mit Hilfe von Maschinen auszu führen. Die bisher bestehenden Maschinen entsprechen aber noch keineswegs den Er wartungen und die verlangte Vollkommen heit wird noch nicht erreicht.
Der maschinell, bearbeitete Teig gibt nach -dem Backen ein Brot, das in verschiedener Hinsicht hinter dem von Hand geformten Brot zurücksteht, so d,ass derartige Lang formmaschinen fast ausnahmslos bald wie der ausser Betrieb gestellt werden.
Nach der Erfindung wird ein neues Ver fahren zum Formen von Teig vorgeschlagen, d:as in :gleich günstiger Weise von Hand. sowie maschinell ausgeführt werden kann.
Dieses Verfahren besteht darin, @dass ein Teigstück, zum Beispiel eine Teigkugel, in der beabsichtigten Walzrichtung in läng- liehe Form abgeplattet wird, wonach die Vorderseite der in dieser Weise erhaltenen Scheibe umgefaltet, die Hinterseite gestreckt und schliesslich das Ganze aufgewickelt wird.
Vor, während oder nach dem Umlegen der Vorderseite können die Seitenkanten .der Scheibe parallel zueinander gerichtet wer den.
Für die Ausführung dieses Verfahrens wird nach der Erfindung eine Maschine vor geschlagen, welche eine Walzvorrichtung zum Abplatten ; und zum ellipsenförmigen Auswalzen einer Teigkugel, eine Vorrichtung zum Zurückfalten des vordern, runden Ran Jes der Teigscheibe, eine Vorrichtung zum Geradrichten oder (Strecken des Hinterrandes .der Teigscheibe,
eine Vorrichtung zum Um legen oder Aufwickeln des Vorderendes der Teigscheibe unld eine Vorrichtung zum wei teren Aufwickeln derselben besitzt.
In der Näht, der ,Fa\ltvorrichtung können Vorrichtungen, zum Beispiel Walzen, ange ordnet sein, mit denen die Seitenkanten -des Teiges :gerichtet werden.
Die Zeichnung veranschaulicht eine Aus führungsform des Verfahrens und der Vor richtung beispielsweise.
Fig.3 und 4 stellen :die aufeinander folgenden Bearbeitungsstufen des Teiges dar-, Fig. 5 erläutert die maschinellen Arbeits vorgänge des Verfahrens; Fig. 6 ist eine Darstellung eines Brotes, wie es nach dem Backen eines gemäss der Erfindung maschinell geformten T'eig- stückes erhalten wird; Fig. 7 ist eine schematische, teilweise längsgeschnittene 'Seitenansicht einer von der Bedienungsseite aus betra.ehteten Maschine :gemäss der Erfindung; Fig.8 ist eine teilweise ausgebrochene Draufsicht dazu;
Fig.9 ist ein Vertikalschnitt nach :der Linie IX IX in Fig. 7; Fig. 10 ist ein Vertikalschnitt nach der Linie X -X in Fig. 7, wobei verschiedene Teile zur Erzielung grösserer Klarheit in einer andern Fläche, als in der sie tatsäch lich liegen, dargestellt sind;
Fig. 11 ist ein Vertiklalschnitt nach der Linie XI-XI in Fig. 7, mit :den Greifern in der Greifstellung; Fig.12 ist eine entsprechende Drauf sicht; Fig. <B>13</B> zeigt die Greifer in der vordern Stellung; Fig. 14 zeigt diese Greifer in dem Augen blick der Freigabe des Teiges.
Bei der Ausführung des Verfahrens nach der Erfindung von Hand (Fig.3 und 4) legt .der Bäcker die Teigkugel 1 vor sich her und plattet dieselbe in der Richtung der Pfeile in Fig. 3 ab, wodurch ein -abge flachtes Teigstück 7 entsteht. Dieses Teig stück wird zu einer in der künftigen Walz richtung länglichen T'eigscheibe 8 mit ab gerundeten Enden 9, 10 geformt.
Darauf wird das vordere Ende 9 umgefaltet und das hintere Ende 10 rechtwinklig abgearbeitet und ubgeplattet, wobei dieses Ende etwas breiter :als der übrige Teil der Teigscheibe wird. Darauf wird die Teigscheibe zu einem Zylinder 11 mit verdickten Köpfen aufgewickelt, wobei die Längsschlusskante genau gerade verläuft und. an der Teigrolle schön anschliesst.
Das verbreiterte Hinterende der Teig scheibe ist vorteilhaft, damit ein Brot mit gerader Längsschlusskante und geraden Kopfflächen erhalten wird, was sieh aus Versuchen ergeben hat.
Als Ersatz des sich immer noch als er folgreich erweisenden aber kostspieligen Handverfahrens eignet sich das neue Ver fahren zur Erzielung eines vollständig gleichwertigen Produktes ganz besonders. Im (Gegensatz zum bisherigen maschinellen Ver fahren sinid -die Ergebnisse, wie die Erfah rung lehrt, des neuen Verfahrens, falls dieses maschinell ausgeführt wird, denjenigen:
der .so kostspieligen aber vorteilhaften Hand arbeit gleichwertig. Ein Nachteil des be kannten maschinellen Verfahrens besteht darin, dass das abgeplattete, runde Teig stück zu einer länglichen Scheibe ausgewalzt werden muss, wordurch der Teig in der Ma schine -zu sehr leidet. Ausserdem findet bei .den meisten Maschinen das Umfalten der Enden 4 von :Hand statt, worauf die Teigscheibe umgefaltet und, :aufgewickelt witd.
Bei den bisher bekannten maschinellen Verfahren erfolgt !die Tegbearbeitung nicht so gut wie von Hand, und zwar bleibt nicht nur das Aussehen :des bisher maschinell zu bereiteten Brotes hinter dem von Hand zu bereiteten Brot zurück, sondern zufolge der maschinellen Bearbeitung wird auch die Gä rung weniger kräftig und die innere Struk tur des Teiges beeinträchtigt. Die durch die Gärung ge'biffdete Kohlensäure ist nämlich von kleinen elastischen Glutenzellen um schlossenen, und es ist hauptsächlich auf :
die Art des maschinellen Auswallzens zurückzu führen, rlass :diese Zellwände im Teig zerrissen werden. Man nennt dies das "Totdrücken" kies Teiges, der Teig wird totgewirkt". Das End produkt, das gebackene Brot, zeigt denn auch alle Nachteile :dieser Bearbeitung, es wird lyald trocken (.Eigenschaft des Aitbacken- werdens) und hat demzufolge -an Essbarkeit und :Geschmack eingebüsst.
Die Erfahrung lehrt, dass :durch Anwendung :des Verfahrens nach -der Erfindung dieses "T'otdrücken" oder "Totwirken" des Teiges vermieden wird, *so dass ein Produkt erhalten wird, :das !dem von Hand erzeugten Produkt vollständig gleich kommt.
In Füg. 5 ist schematisch dargestellt, in welcher Weise .das Verfahren nach der Er findung maschinell ausgeführt werden kann. Diese Figur dient gleichfalls :zur Erläuterung der Maschine, welche nachstehend beschrie ben ist.
Die hin (Fig.7 bis 14 dargestellte Na schine für die Ausführung des Verfahrens besitzt ein Gestell 12, lauf ,dem die versGhie- :denen Teigbearbeitungsvorrichtungen ange ordnet sind. Die erste Vorrichtung ist ein verstellbares Walzenpaar 13, das mit .dar unter liegenden, ebenfalls verstellbaren Walzenpaaren 14 und 15 zusammenarbeitet. Diese beiden letzten Walzenpaare plattenden Teig in einer zur Abplattrichtung des ersten Walzenpaares senkrechten Richtung ab.
Die ses Walzensystem wird von einem Elektro motor mittelst eines Verzögerungsgetriebes oder eines veränderlichen Wechselgetriebes 16 langetrieben, wobei die kontinuierlich ro tierende, sekundäre Welle mit 17 bezeichnet ist. Auf dieser Welle ist unter Zwischen schaltung einer Reibungskupplung 18 ein Antriebskettenrad 19 angeordnet; die Kupp lung ist normal eingerückt und kann mittelst eines Hebels 20 entkuppelt werden. Ferner ist ein iSchalter mit Vorschaltwiderstan.d vorgesehen (nicht .dargestellt).
Unter .dem Walzensystem befindet sich ein Teigförderband 22, das über die Walzen 23, 24 geführt ist, von denen die Walze 23 durch :das Kettenrad 19 fortlaufend an getrieben wird.
Das Förderband ist mit dem obern Teil über einen Tisch 25 und Walzen 26 bezw. 2 7 geführt. Vorn über .diesem Band ist ein Umfalter 28 frei :drehbar in Lagern 29 an geordnet. Der .Umfalter ruht mit dem Unter ende auf .dem Förderband und liegt zwischen zwei frei drehbaren Rollen .30 mit vertikaler Ase. Der Umfalter und die Rollen liegen vor einer zylindrischen Abplattwalze 31, die mit der unter :dem Förderband angeordneten Walze 26 zusammenarbeitet. Die Welle der Walze 31 ist mit einem Zahnrad 3.2 ver sehen, das in ein Zahnrad 33 auf der Welle ,der Walze 26 eingreift.
Diese Welle trägt auch ein Kettenrad 34 (Fig.9), Idas mit Hilfe einer Kette durch das auf :der Welle 35 angeordnete Kettenrad 23 -angetrieben wird.
Hinter :der Walze 31 befinden sich zwei mechanisch bewegte Greifer :36, 3,7 (Fig. 5, 7, 8, 11, 12, 13 und 14), welche je einen festen 'Finger 38; und einen zwangsläufig ,auf- und niederbeweglichen Finger 39 auf weisen (Fig. 11 und 12). Die Finger wer den je von einer vertikalen :Spindel 42 ge tragen, welche drehbar in Armen 40, 41 ge lagert ist,,die ihrerseits auf einer Spindel 43 befestigt sind.
Diese Spindel trägt unten ein Kegelrad 44, das mit einem grösseren Kegel- rad 45 auf einer Welle 46, auf der ein Hle- bel 47 befestigt ist, zusammenarbeitet. Mit diesem Hebel, ider einen Weg von etwa<B>90'</B> macht, ist eine ,Stange 48 verbunden, wel che von einem auf einer Steuerwelle 49 be festigten Hebel 50 bewegt wird.
Die Welle 49 ist mit einem Kettenrad 89 versehen, .das mit Hilfe einer Kette 90 .durch, das Ver zögerungsgetriebe 16 angetrieben wird. Bei jeder Umdrehung des Hebels 50 wird die iSpindel 43 einmal um<B>180'</B> hin- und zu rückgedreht, :an welcher Bewegung ,die Arme 40, 41 beteiligt sind.
Am Maschinengestell ist zwecks Unter stützung der Greifer 36, 37 ein Block 51 (Fig.11 und 12) befestigt, in welchem die Nabe eines gettenra,des 52 festgeklemmt ist. Um dieses Rad und um ein auf der Spin del 42 befestigtes Kettenrad 54 ist eine Kette 53 gelegt (Fix. 11 bis 14): Der bewegliche Finger 39 jedes Greifers ist bei 55 gelenkig mit dem festen Finger 38 verbunden und nach oben zu einem Arm 56 verlängert, der eine .Steuerrolle 57 trägt und durch eine Druckfeder 58 von,der Spin- ,del 42 abgedrückt wird.
Auf beiden Seiten -des Armes 41 ist ein Arm 59 bezw. 60 be festigt. Diese Arme bestimmen die Bewe gung der Steuerrolle 5 7 und hierdurch das Öffnen und Schliessen des Greifers bei .der Drehung des Hebels 50.
Hinter,den Greifern (Fix. 7) befindet sich eine mit der Walze 27 zusammenarbeitende konvex abgedrehte Walze 61, welche den Zweck hat, den Teig, :der durch dieGreifer ausgezogen worden ist, festzuhalten und in der Mitte auszuwalzen.
Unmittelbar hinter dieser Walze sind drei Klappen 62, 63, 64 angeordnet, welche .sich unabhängig voneinander um :Achsen 65 und <B>6,6</B> drehen können. Die Klappe 62 besteht aus einer gewölbten Platte, während die Klappen 63, 64 je aus schmalen, von Schwingarmen getragenen :Streifen bestehen.
Hinter .diesen Klappen ist ein Joch 67 (Fix. 7, 8 und 10) mittelst einer Achse 68 schwingbar im Maschinengestell angeordnet. Auf dieser Achse, welehe zwischen den Jocharmen 69 eine steife Verbindung bildet und hohl ausgebildet ist, ist ein nach unten ragender Arm 70 befestigt, der mittelst eines Bolzens 71 in einen ,Schlitz eines Armes 72 eingreift. Der Arm 72 ist um einen Zapfen 73 drehbar und zusammen mit einem Querarm 74, der mittelst eines Bolzens in einen Schlitz 75 .des Armes 76 eines um Zapfen 78 drehbaren zweiarmigen Hebels 76, 77 eingreift, auf -der gleichen Welle ver- bolzt. Der Hebel 76,
77 wird durch eine Feder 79 mit einer Ralle 80 gegen eine Nockenscheibe .81 auf der Steuerwelle 49 ge halten.
Die Bewegung des Joches 67 wird durch .die Gestalt dieser kontinuierlich rotierenden Nockenscheibe bestimmt; dieselbe ist derart, dass das Joch (Fix. 7) schnell mach links und zurück in die vertikale Lage schwingt, in dieser Lage eine kurze Zeit verbleibt und dann langsam nach rechts .schwingt.
Zwischen den Schwingarmen 69 sind un mittelbar über dem Förderband 22 drei leicht konvex abgedrehte Rollen 82 -drehbar und in einem Kranzangeordnet. Die Achsen dieser Walzen haben etwas Spiel in den Armen, ragen über den einen Arm 69 hin aus und werden in der Richtung .der Pfeile P (Fig.7), also entgegen der BewegUngs- richtung des Förderbandes 22 durch eine Kettenübertragung 83 ,angetrieben. Diese erhält ihre Bewegung von einer sich durch die hohle Jochwelle 68 erstreckenden und mit einem Kettenrad 85 versehenen Welle 84.
Das Kettenrad 85 wird mittelst einer Kette 86 und eines auf der Welle 88 der Walze 27 befestigten Kettenrades 87 angetrieben.
Auf der Steuerwelle 49, welche den An triebshebel 50 für die Greifer und die Nockenscheibe 81 für das Joch 67 trägt, ist eine Nockenscheibe 91 zwecks Steuerung einer Fallklappe 92 (Fix. 7 und 8) für den Teig befestigt. Diese Nockensoheibe betätigt den mit einer Laufrolle 93 versehenen Arm 94 eines um Zapfen<B>96</B> drehbaren, zwei armigen Hebels 94, 9,5. Der Arm 95 dieses Hebels ist mit -dem untern. Ende einer Stange 97 verbunden, die :an ihrem obern. Ende mit einem @f@ebel 98 der um Zapfen schwenk baren Fallklappe 92 verbunden ist.
Eine Fe der 100 ist bestrebt, diese Klappe immer in die mit vollen Linien .dargestellte Lage zu bringen, wobei der Teig zwischen die Wal zen 13 fällt.
Eine Richtklappe 101 hat den Zweck, den Teig zentral über .die Walzen<B>13</B> und 14 gelangen zu .lassen.
Die Wirkung der beschriebenen Maschine ist wie folgt (siehe auch Fig. 5).
Sobald die Noükenscheibe 91 die in Fig. 7 dargestellte Lage erreicht hat, wird die Klappe 92 gekippt und die von Hand oder mechanisch auf sie gebrachte Teigkugel 1 (Fig.5a) fällt zwischen die Walzen 13. Nach Durchgang durch diese Walzen wird das jetzt abgeflachte, kugelförmige Teig stück (Fig.5b) durch -die Walzen 14 und darauf durch .die Walzen 15 zu einer läng lichen Teigscheibe (Fig.Sc und 5d) abge plattet.
In .dieser Form gelangt der Teig auf das Förderband 22 (Fig. 7) und läuft mit der runden Vorderkante 9 voraus auf die Klappe 28 auf und -wird dabei umgefaltet (Fig. 5e). Zu gleicher Zeit werden die Seitenkanten durch die Rollen 30 gerade gerollt und @da.r- auf wird die umgefaltete Vorderkante durch ,die Abplattwalze 31 flach ,gewalzt (Fig. 5e), bevor der Teig Gelegenheit hat, zurückzu schnellen und bevor die Klappe 28 die Falte ganz freigibt.
Der Teig ist nun (Fig.5f) ausser mit zwei geraden Seitenkanten auch mit einer geraden Vorderkante versehen. Darauf nähert sich der Teig der Walze 61 und gelangt in den Arbeitsbereich derGrei- fer 316, 37. Diese Greifer .drehen sich, sich synchron bewegend, zusammen mit dem Teig und;
nach innen aus der vordern Lage (Fig. 13) in die hintere Trage (Fig.14). Wenn (Fig. 12) die Arme 60 die Rollen 57 frei geben, drücken die Federn 58 die Fin ger 39 nieder, wodurch diese das Teigstück nachgiebig ergreifen (Fig. 5b). Bei der wei teren Drehbewegung halten die Greifer zu sammen mit dem Förderband das Teigstück fest und ziehen es aus, wodurch es nicht nur hinten breiter und dünner wird,
sondern auch. die runde Hinterkante gerade .gezogen wird (Fig. 3). Sobald die Arme 59 (Fig. 14) ,die ,Rollen 57 wieder zurückdrücken, werden die '.Greifer geöffnet, und das Teigstück wird frei, welches :dann, wieder etwas zurückgeht, welchem Faktor Rechnung getragen ist.
Die Walze 61 hat das Teigstück während der Ausdehnung der Hinterkante festgehalten und plättet !darauf den Teig noch nach. Das Teigstück hat jetzt rechtwinklige Form mit etwas verbreitertem Hinterende.
Während der Teig,die Walze 61 passiert und noch festgehalten wird, läuft er mit der umgefalteten Vorderkante auf die erste der Klappen 62, 63, 64 auf (Fig.5h), welche derart eingerichtet sind, d;ass sie :auf eine fortschreitende E.inro,llung des Vorderendes hinwirken, ,so dass eine gut geschlossene Spiralform entsteht. Die Walze 61 trägt ,dazu bei, eine Aufstauung des Hinterendes der Teigscheibe zufolge der Staukraft des Bandes bezw. des Gegendruckes .der Klappen 62, 63, 64 zu vermeiden.
Inzwischen hat sich das Joch 67 .mit den :drei Rollen 82 nach vorn bewegt, und die Walzen übernehmen nun praktisch ohne Unterbrechung das Auf wickeln des Teigstückes (Fig. 51i), wobei .die Walzen sich in die vertikale Mittellage be wegen, dort eine kurze Zeit verbleiben (Fig. 5m). und darauf, langsam nach rechts schwingend, @-die geformte Teigrolle (Fig. 5n) unter fortwährendem Rollen freigeben. Durch diese Art des Aufwickelns wird die Teig..
gärung nicht beeinträchtigt. Der wirksame ,Querschnitt über der durch .das Band und die drei Rollen 82 .geformten Rollwand ist im mer grösser als :der Durchmesser der Teig rolle. Die geformte Teigrolle hat nun Köpfe, welche etwas dicker als der Rollenträger sind, was für die Brotform vorteilhaft ist. Die:Schluss'kante (F' g. 4) ist jetzt geradlinig und schliesst sich glatt an die Teigrolle an. Dadurch, dass die Rollen 182 Spiel haben und gegebenenfalls mit Unebenheiten versehen sind, wird die Rollwirkung gefördert.
Der iAntrieb der sich bewegenden Teile kann in einer andern als der beschriebenen Weise erfolgen. Das ,Joch 67 kann auf bei- den Seiten anstatt einseitig (Fig. 10) unter stützt werden. Der Anrieb der Rollen 82 kann, was -die Geschwindigkeit anbelangt, un abhängig von,der Schwingbewegung gemacht werden. Die Bewegung der Greifer kann bei gleichem Ergebnis in anderer Weise erfolgen. Anstatt einer einzigen gemeinsamen Steuer welle 49 können einzelne Steuerwellen an geordnet sein. Die Schutzhauben 102 können nötigenfalls wegfallen.
Dieselben tragen aber dazu bei, den Teig rein ,zu halten und .den Bäcker gegen Berührung mit sich be- wegenden zu schützen.
Bei der Bearbeitung des Teiges mit der beschriebenen Maschine lässt sich Brot erst klassiger Qualität und mit tadellosem Aus sehen vollständig automatisch und mecha nisch erzielen.
Der Augenblick, in welchem die Teig- kugel in (die Maschine !gelangt, ist von menschlichen Einflüssen ganz unabhängig und hängt mit (dem Augenblick .zusammen, in welchem die verschiedenen Mechanismen in Tätigkeit versetzt werden. Man kann die Teigstücke unmittelbar aus einer synchron mit .der @Aufbereitungsmascliine arbeitenden Teigverteil- und Vorformmaschine -automa- tisch zu den Walzen 13 führen, voraus gesetzt, dass die Teigstücke genügend auf gehen können.
Auch könnte am Förderband 22 an schliessend eine Vorrichtung angeordnet sein, wodurch die Teigrollen unmittelbar zu ,den Blechen und zu einem Aufgehkasten geführt werden, so dass ein vollkommen selbsttätiger, ein gutes Produkt liefernder Betrieb ermög licht wird.
Am Ende der Maschine, bei 103, kann man eine :Schneidevorrichtung anordnen, um zur Erzielung von sogenannten -I3albbroten die Teigrollen zu teilen.
Dough forming process and dough machine. The invention relates to a method for shaping dough and a machine for the mechanical execution of this method. .
In order for the invention to be properly understood, the now generally customary method will first be described with reference to FIG. and \? described in the drawing. The remaining figures are explained later.
When shaping dough, the baker takes a partially collected ball of dough 1. and shapes it into a piece of dough that is pointed at the ends 2. He grips this piece of dough on the left and right and expands it in the width direction so that an elongated Disc results, the middle part 3 shows slightly concave edges in plan view, while the ends 4 are pointed. These ends 4 are then folded over, whereupon the rear end of the dough is rolled at 5 and the disc thus formed is wound into a cylinder, which is then rolled out into a long, thin roll 6.
The dough is now ready to rise and to bake.
Because the use of this customary hand-molding process achieves favorable results, m.an has tried to carry out the same process with the help of machines. However, the machines that have existed up to now have by no means met expectations and the required perfection has not yet been achieved.
After baking, the machine-processed dough gives a bread that lags behind the hand-formed bread in various respects, so that such long-forming machines are almost without exception put out of operation soon.
According to the invention, a new process is proposed for shaping dough, d: as in: equally favorable way by hand. as well as can be performed by machine.
This process consists in flattening a piece of dough, for example a ball of dough, in the intended rolling direction in an elongated form, after which the front of the disc obtained in this way is folded over, the back is stretched and finally the whole is rolled up.
Before, during or after the front side is folded down, the side edges of the pane can be directed parallel to one another.
To carry out this method, a machine is proposed according to the invention, which has a rolling device for flattening; and for the elliptical rolling out of a ball of dough, a device for folding back the front, round edge of the dough disc, a device for straightening or (stretching the rear edge of the dough disc,
a device for placing or winding up the front end of the dough sheet and a device for further winding the same.
Devices, for example rollers, with which the side edges of the dough are straightened can be arranged in the sewing, the folding device.
The drawing illustrates an imple mentation of the method and the device for example.

Fig. 11 is a vertical section along the line XI-XI in Fig. 7, with: the grippers in the gripping position; Figure 12 is a corresponding plan view; Fig. 13 shows the grippers in the front position; Fig. 14 shows this gripper in the moment of the release of the dough.
When the method according to the invention is carried out by hand (FIGS. 3 and 4), the baker puts the dough ball 1 in front of him and flattens the same in the direction of the arrows in FIG. This piece of dough is shaped into a dough disc 8 which is elongated in the future rolling direction and has rounded ends 9, 10.
The front end 9 is then folded over and the rear end 10 processed at right angles and flattened, this end being somewhat wider than the rest of the dough sheet. The dough sheet is then rolled up to form a cylinder 11 with thickened heads, the longitudinal closing edge running exactly straight and. attaches nicely to the rolling pin.
The widened rear end of the dough disc is advantageous so that a bread with a straight longitudinal end edge and straight top surfaces is obtained, as has been shown from experiments.
As a replacement for the still successful but costly manual process, the new process is particularly suitable for achieving a completely equivalent product. In contrast to the previous machine process, the results of the new process, as experience shows, if it is carried out by machine, are those:
equivalent to the costly but advantageous manual labor. A disadvantage of the known mechanical method is that the flattened, round piece of dough has to be rolled out into an elongated disc, which causes the dough in the machine to suffer too much. In addition, in most machines, the ends 4 are folded over by: hand, whereupon the dough sheet is folded over and,: wound up.
In the previously known machine processes, the dough is not processed as well as by hand, and not only does the appearance remain: the bread that was previously prepared by machine lags behind the bread that was prepared by hand, but also the fermentation as a result of the machine processing less vigorous and impaired the internal structure of the dough. The carbon dioxide produced by fermentation is in fact enclosed by small elastic gluten cells, and it is mainly due to:
the type of mechanical rolling back, rlass: these cell walls in the dough are torn. This is called the "pressing to death" gravel dough, the dough is knitted to death. "The end product, the baked bread, shows all the disadvantages: this processing, it becomes dry (. Property of being baked) and therefore has -an Edibility and: forfeited taste.
Experience teaches that: by using: the method according to the invention, this "dead pressing" or "dead working" of the dough is avoided, * so that a product is obtained which is completely identical to the product made by hand.
In add. 5 is a schematic representation of the manner in which the method according to the invention can be carried out by machine. This figure also serves: to explain the machine, which is ben described below.
The machine shown towards (Fig.7 to 14 for the execution of the method has a frame 12, barrel to which the various dough processing devices are arranged. The first device is an adjustable pair of rollers 13, which with .dar underlying, also adjustable roller pairs 14 and 15. These last two roller pairs flatten dough in a direction perpendicular to the flattening direction of the first roller pair.
This roller system is driven by an electric motor by means of a deceleration gear or a variable change gear 16, with the continuously rotating secondary shaft 17 being denoted. On this shaft a drive sprocket 19 is arranged with the interposition of a friction clutch 18; the coupling is normally engaged and can be uncoupled using a lever 20. An iSwitch with a series resistor is also provided (not shown).
Under .dem roller system is a dough conveyor belt 22, which is guided over the rollers 23, 24, of which the roller 23 through: the sprocket 19 is continuously driven.
The conveyor belt is with the upper part on a table 25 and rollers 26 BEZW. 2 7 led. At the front over. This tape a Umfalter 28 is free: rotatable in bearings 29 to be arranged. The lower end of the folder rests on the conveyor belt and lies between two freely rotating rollers 30 with a vertical axis. The folder and the rollers lie in front of a cylindrical flattening roller 31, which works together with the roller 26 arranged below the conveyor belt. The shaft of the roller 31 is seen ver with a gear 3.2, which engages in a gear 33 on the shaft, the roller 26.
This shaft also carries a chain wheel 34 (FIG. 9), which is driven with the aid of a chain by the chain wheel 23 arranged on the shaft 35.
Behind: the roller 31 there are two mechanically moved grippers: 36, 3.7 (FIGS. 5, 7, 8, 11, 12, 13 and 14), each of which has a fixed finger 38; and an inevitable, up and down finger 39 have (FIGS. 11 and 12). The fingers who each carry a vertical: Spindle 42 ge, which is rotatably mounted in arms 40, 41 ge, which in turn are attached to a spindle 43.
This spindle carries a bevel gear 44 at the bottom, which works together with a larger bevel gear 45 on a shaft 46 on which a sleeve 47 is attached. With this lever, which makes a path of about <B> 90 '</B>, a rod 48 is connected, which is moved by a lever 50 fastened on a control shaft 49.
The shaft 49 is provided with a sprocket 89, .that by means of a chain 90, the delay gear 16 is driven. With each revolution of the lever 50, the spindle 43 is rotated back and forth once by <B> 180 '</B>, in which movement the arms 40, 41 are involved.
A block 51 (FIGS. 11 and 12) is attached to the machine frame in order to support the grippers 36, 37, in which the hub of a gettenra, of the 52, is clamped. A chain 53 is placed around this wheel and around a sprocket 54 attached to the spindle 42 (Fix. 11 to 14): The movable finger 39 of each gripper is articulated at 55 to the fixed finger 38 and up to an arm 56 extended, which carries a control roller 57 and is pressed off by a compression spring 58 of the spindle, del 42.
On both sides of the arm 41 is an arm 59 respectively. 60 fastened. These arms determine the movement of the control roller 5 7 and thereby the opening and closing of the gripper when the lever 50 is rotated.
Behind the grippers (Fix. 7) there is a convex turned roller 61, which works together with the roller 27, which has the purpose of holding the dough that has been pulled out by the grippers and rolling it out in the middle.
Immediately behind this roller are three flaps 62, 63, 64 which can rotate independently of one another about: axes 65 and 6,6. The flap 62 consists of a curved plate, while the flaps 63, 64 each consist of narrow strips carried by swing arms.
Behind these flaps a yoke 67 (fix. 7, 8 and 10) is arranged in the machine frame so that it can swing by means of an axis 68. On this axis, which forms a rigid connection between the yoke arms 69 and is hollow, a downwardly projecting arm 70 is fastened, which engages in a slot of an arm 72 by means of a bolt 71. The arm 72 is rotatable about a pin 73 and, together with a transverse arm 74, which by means of a bolt engages in a slot 75 of the arm 76 of a two-armed lever 76, 77 rotatable about pin 78, is bolted on the same shaft. The lever 76,
77 is held by a spring 79 with a ratchet 80 against a cam .81 on the control shaft 49 ge.
The movement of the yoke 67 is determined by the shape of this continuously rotating cam disc; the same is such that the yoke (Fix. 7) swings quickly to the left and back into the vertical position, remains in this position for a short time and then slowly swings to the right.
Between the swing arms 69 three slightly convex twisted rollers 82 are un indirectly above the conveyor belt 22 -rotatable and arranged in a wreath. The axes of these rollers have some play in the arms, protrude over one arm 69 and are driven in the direction of the arrows P (FIG. 7), that is, against the direction of movement of the conveyor belt 22 by a chain transmission 83. This receives its movement from a shaft 84 which extends through the hollow yoke shaft 68 and is provided with a chain wheel 85.
The chain wheel 85 is driven by means of a chain 86 and a chain wheel 87 attached to the shaft 88 of the roller 27.
On the control shaft 49, which carries the drive lever 50 for the gripper and the cam 81 for the yoke 67, a cam 91 is attached for the purpose of controlling a drop flap 92 (Fix. 7 and 8) for the dough. This cam plate actuates the arm 94, which is provided with a roller 93, of a two-armed lever 94, 9, 5 which can be rotated about pins 96. The arm 95 of this lever is below it. End of a rod 97 connected, which: at its upper. The end with a @ f @ ebel 98 of the pivotable drop flap 92 is connected.
A Fe of 100 endeavors to always bring this flap into the position shown with full lines, with the dough falling between the rollers 13.
A directional flap 101 has the purpose of allowing the dough to pass centrally over the rollers 13 and 14.
The action of the machine described is as follows (see also FIG. 5).
As soon as the cam disc 91 has reached the position shown in FIG. 7, the flap 92 is tilted and the dough ball 1 (FIG. 5a) placed on it by hand or mechanically falls between the rollers 13. After passing through these rollers, the now flattened one , spherical dough pieces (Fig.5b) flattened by -the rollers 14 and then by .the rollers 15 to form an elongated dough disc (Fig.Sc and 5d).
In this form, the dough arrives on the conveyor belt 22 (FIG. 7) and runs with the round front edge 9 first onto the flap 28 and is then folded over (FIG. 5e). At the same time, the side edges are rolled straight by the rollers 30 and @ da.r- on the folded front edge is rolled flat by the flattening roller 31 (Fig. 5e) before the dough has the opportunity to snap back and before the flap 28 releases the fold completely.
The dough is now (Fig. 5f) not only with two straight side edges but also with a straight front edge. The dough then approaches the roller 61 and reaches the working area of the grippers 316, 37. These grippers rotate, moving synchronously, together with the dough and;
inwards from the front position (Fig. 13) into the rear stretcher (Fig. 14). When (Fig. 12) the arms 60 give the rollers 57 free, the springs 58 press the fin ger 39 down, whereby these grasp the dough piece resiliently (Fig. 5b). During the further turning movement, the grippers, together with the conveyor belt, hold the piece of dough and pull it out, which not only makes it wider and thinner at the back,
but also. the round rear edge is pulled straight (Fig. 3). As soon as the arms 59 (FIG. 14), the rollers 57 push back again, the grippers are opened and the piece of dough is released, which then goes back a little, which factor is taken into account.
The roller 61 held the piece of dough in place while the rear edge was expanding and then flattened the dough. The dough piece now has a right-angled shape with a slightly wider rear end.
While the dough passes the roller 61 and is still held, it runs with the folded front edge onto the first of the flaps 62, 63, 64 (Fig. 5h), which are set up in such a way that they: on a progressing E. .inro, work towards the development of the front end, so that a well-closed spiral shape is created. The roller 61 contributes to a damming up of the rear end of the dough disk according to the damming force of the belt BEZW. of the back pressure. of the flaps 62, 63, 64 to avoid.
In the meantime, the yoke 67 has moved forward with the: three rollers 82, and the rollers now take over the winding of the piece of dough practically without interruption (Fig. 51i), the rollers moving into the vertical central position, there one remain for a short time (Fig. 5m). and then, swinging slowly to the right, @ -release the shaped rolling pin (Fig. 5n) while rolling continuously. This type of winding makes the dough ..
fermentation not affected. The effective cross-section over the roll wall formed by the belt and the three rollers 82 is always greater than: the diameter of the dough roll. The shaped rolling pin now has heads that are slightly thicker than the roll carrier, which is advantageous for the bread shape. The: final edge (Fig. 4) is now straight and connects smoothly to the rolling pin. The rolling effect is promoted because the rollers 182 have play and are optionally provided with unevenness.
The moving parts can be driven in a manner other than that described. The yoke 67 can be supported on both sides instead of on one side (FIG. 10). The drive of the rollers 82 can, as far as the speed is concerned, be made independent of the oscillating movement. The movement of the grippers can take place in a different way with the same result. Instead of a single common control shaft 49, individual control shafts can be arranged. The protective hoods 102 can be omitted if necessary.
But they help to keep the dough clean and to protect the baker from contact with moving people.
When processing the dough with the machine described, bread of first class quality and with an impeccable appearance can be produced completely automatically and mechanically.
The moment at which the dough ball gets into (the machine! Is completely independent of human influences and is related to the moment at which the various mechanisms are put into action. You can get the dough pieces directly from a synchronous .the @ processing machine working dough distribution and preforming machine - automatically lead to the rollers 13, provided that the dough pieces can rise sufficiently.
A device could also be arranged on the conveyor belt 22, whereby the dough rolls are guided directly to the sheets and to a rising box, so that a completely automatic operation that delivers a good product is made possible.
At the end of the machine, at 103, a cutting device can be arranged in order to divide the dough rolls in order to obtain so-called half-breads.
