Description
Procédé pour la mesure de propriétés de pâtes de farine et appareil pour sa mise en #uvre. La présente invention comprend un pro cédé pour la .mesure de propriétés de pâtes de farine et un appareil pour sa mise en aeuvre.
Suivant ce procédé, comme dans celui décrit dans le brevet principal n 100222, on comprime en premier lieu un échantillon de la pâte jusqu'à une épaisseur prédéterminée, et on soumet une partie de la surface de cet échantillon à l'action d'un fluide sous pression de manière à provoquer une exten sion de cette partie; en outre, on enregistre la pression de ce fluide pendant la déforma tion de l'éprouvette, jusqu'à sa rupture, et on mesure la surface du diagramme de dé formation de l'éprouvette; cette surface, ra menée à l'unité de poids de matière de l'é prouvette soumise à l'extension, donne, pour une pâte d'une farine extraite d'un blé dans des conditions déterminées, une caractéris tique de la valeur boulangère de ce blé.
Gomme dans le brevet principal, l'appa reil pour la mise en oeuvre du procédé com- porte un plateau fixe monté sur un support et un plateau mobile, ces'deux plateaux étant disposés de manière à pouvoir aplatir entre eux un échantillon de pâte en lui donnant la forme d'une plaque à faces parallèles, d'épaisseur déterminée, chacun des deux pla teaux comportant une ouverture située en regard de celle de l'autre plateau, l'ouver ture du plateau fixe étant commandée par un dispositif de fermeture, le plateau mobile comportant, _ pour obturer son ouverture, un bouchon amovible dont la face inférieure se trouve dans 1ë même plan que la face infé rieure du plateau,
cet appareil comportant en outre des dispositifs pour amener un fluide sous pression à agir sur l'une des faces .de l'échantillon et pour mesurer la pression du fluide et la quantité de fluide.employée lors d'une épreuve; l'appareil selon l'invention est caractérisé en ce que le dispositif pour mesu rer la pression du fluide comporte un enre gistreur permettant de lire directement la pression existant à l'intérieur de l'échantillon de pâte en fonction du temps employé pour introduire le fluide dans la calotte formée jusqu'au moment de la rupture de cette der nière.
Le dessin annexé représente, à titre d'exemple, deux vues de détails d'une forme d'exécution de l'appareil pour la mise en oeuvre du procédé.
La fig. 1 est une vue schématique en coupe d'une partie de l'appareil; La fig. 2 montre un diagramme; La fig. 3 est une coupe du moule pour préparer les échantillons de pâte; La fig. 4 est une vue de détail d'une partie de l'appareil; La fig. 1 montre schématiquement la dis position de l'enregisteur sur l'appareil.
Sur cette figure, A désigne le tube d'a menée de l'air à débit constant servant à la déformation de l'éprouvette B. L'enregistreur de la pression d'air C est réuni par le tube D au circuit parcouru par l'air. Pour que, dans le diagramme tracé par l'enregistreur, on puisse pratiquement substituer en abcisses le volume de l'air refoulé au temps, il est né cessaire d'établir par construction un rapport constant entre le mouvement uniforme de rotation du tambour d'enregistrement et le débit de l'air, débit qui a lieu sensiblement à volume constant par unité de temps.
En outre, un dispositif convenable permet de rendre simultanés l'introduction de l'air sous l'éprouvette et le démarrage du tambour.
La fig. 2 représente un diagramme de déformation obtenu dans ces conditions. La pression de l'air s'élève de 0 en M et s'a baisse ensuite progressivement à mesure que l'éprouvette se développe en membrane mince et s'annule au moment de la rupture de la membrane. On reconnaît sur ce diagramme deux grandeurs dont il est question dans le brevet principal et qui sont l'ordonnée maxi mum M P qui indique la pression maximum existant sous l'échantillon de pâte, ce qui permet de déterminer le coefficient de téna cité de celle-ci et l'abcisse 0 Y,. qui donne une indication sur le volume d'air ayant en traîné la rupture de l'éprouvette.
On rapporte enfin la surface du diagramme au poids Q de l'éprouvette soumise à l'essai, qui doit être isolée et pesée après chaque essai.
La grandeur ainsi obtenue varie dans de larges limites suivant la nature des blés ayant servi à l'extraction des farines essayées et sa mesure permet de caractériser la valeur panifiable de ces farines.
La fig. 4 représente une coupe partielle de l'appareil pour la mise en couvre du pro cédé. Le plateau supérieur r1 servant à com primer l'échantillon jusqu'à la rencontre du calibre d'épaisseur B tourne autour de l'axe 0 solidaire du bâti sur lequel repose le plateau inférieur C. Cette disposition facilite les ma nipulations et assure une plus grande cons tance dans les dimensions de l'éprouvette centrale que découvre le bouchon D. Ce der nier présente à la base de sa partie tronco nique une partie cylindrique portant quelques filets de vis, de sorte qu'un mouvement de rotation doit être imprimé au tampon pour assurer d'une façon uniforme son décollement de l'éprouvette de pâte.
Les autres parties de l'appareil sont communes à celui décrit dans le brevet principal.
En vue d'obtenir des éprouvettes parfaite ment semblables pour tous les essais, on recueille la pâte préparée en pétrissant mé caniquement la pâte pendant un temps et à une vitesse déterminés sur une palette mé tallique, et on la transporte dans un moule dont la coupe transversale est indiquée sur la fig. 3. La réduction de la hauteur du pâton est obtenue progressivement par lami nage effectué à l'aide d'un rouleau jusqu'au niveau a-a. On emboutit alors la pâte qui se présente sous la forme d'une galette de hauteur constante, à l'aide de tubes tels que t et de manière à constituer des cylindres de pâte, de dimensions constantes, destinées à être comprimés entre les plateaux de l'ap pareil.

As in the main patent, the apparatus for carrying out the method comprises a fixed plate mounted on a support and a movable plate, these two plates being arranged so as to be able to flatten a sample of dough between them. giving it the shape of a plate with parallel faces, of determined thickness, each of the two plates comprising an opening located opposite that of the other plate, the opening of the fixed plate being controlled by a closing device , the movable plate comprising, _ to close its opening, a removable stopper whose lower face is in the same plane as the lower face of the plate,
this apparatus further comprising devices for causing a pressurized fluid to act on one of the faces of the sample and for measuring the pressure of the fluid and the quantity of fluid employed during a test; the apparatus according to the invention is characterized in that the device for measuring the pressure of the fluid comprises a recorder making it possible to directly read the pressure existing inside the sample of dough as a function of the time used to introduce the fluid in the cap formed until the moment of rupture of the latter.
The appended drawing represents, by way of example, two detail views of an embodiment of the apparatus for carrying out the method.

In this figure, A designates the tube for conducting air at a constant flow rate serving for the deformation of the test piece B. The air pressure recorder C is joined by tube D to the circuit traversed by the 'air. So that, in the diagram drawn by the recorder, one can practically substitute in abscissa the volume of the discharged air at the time, it is necessary to establish by construction a constant relation between the uniform rotation movement of the drum of recording and flow of air, flow that takes place substantially at constant volume per unit time.
In addition, a suitable device makes it possible to make the introduction of air under the test piece and the starting of the drum simultaneously.
Fig. 2 represents a strain diagram obtained under these conditions. The air pressure rises from 0 to M and then gradually drops as the test piece develops into a thin membrane and cancels out when the membrane breaks. We recognize on this diagram two quantities which are referred to in the main patent and which are the maximum ordinate MP which indicates the maximum pressure existing under the sample of paste, which makes it possible to determine the tenacity coefficient of this sample. ci and the abscissa 0 Y ,. which gives an indication of the volume of air having trailed the rupture of the test piece.
Finally, the area of the diagram is related to the weight Q of the test piece, which must be isolated and weighed after each test.
The size thus obtained varies within wide limits depending on the nature of the wheat used for the extraction of the flours tested and its measurement makes it possible to characterize the bread-making value of these flours.
Fig. 4 shows a partial section of the apparatus for setting the process cover. The upper plate r1 used to compress the sample until it meets the feeler gauge B rotates around the axis 0 integral with the frame on which the lower plate C rests. This arrangement facilitates handling and ensures more great consistency in the dimensions of the central test specimen discovered by stopper D. This last has at the base of its truncated part a cylindrical part bearing a few screw threads, so that a rotational movement must be imparted to the buffer to ensure its detachment from the test specimen uniformly.
The other parts of the apparatus are common to that described in the main patent.
In order to obtain perfectly similar test pieces for all the tests, the prepared dough is collected by mechanically kneading the dough for a determined time and at a determined speed on a metal pallet, and it is transported into a mold, the cut of which is transverse is shown in fig. 3. The reduction in the height of the dough is obtained gradually by the lamination carried out with the help of a roller up to level a-a. The dough is then pressed, which is in the form of a wafer of constant height, using tubes such as t and so as to constitute dough cylinders, of constant dimensions, intended to be compressed between the trays of the device.
