Abstract
A process and packaging for an individual boiled egg in dressing, in which the product is vacuum sealed within packaging before being chilled for shipping and storage. Ready for consumption the boiled egg in dressing can be mashed within the packaging to make an egg salad mixture which can then be consumed in a sandwich or as desired.
Description
DESCRIPTION OF THE INVENTION
The subject invention is directed to packaging which permits the vacuum packaging of boiled eggs in a dressing to enable the packaged product to be presented to consumers in attractive packaging while maintaining the integrity of the vacuum packaging to provide a packaged product which can be shipped and stored until use. The eggs are boiled, cooled and the shells removed and may be pickled prior to being vacuum sealed and chilled.
It is therefore an object of the subject invention to provide a vacuum packaging process and the packaging to enable boiled eggs in dressing and similar delicacies to be safely packaged, and subsequently chilled for shipping and storage purposes.
It is a further object of the subject invention to provide a process and packaging to present boiled eggs prepared in various ways to the consumer in retail packaging heretofore unknown to the consumer.
It is a related object to provide a process by which boilE:d eggs are vacuum packed with additional ingredients such as salad dressing, chilled, and subsequently distributed.
It is still a further object of the subject invention to provide boiled eggs in dressing in desirable packaging to promote favourable product appearance.
It is one more object of the subject invention to develop a packaging process whereby concerns of spoilage, botulism, mould, yeast, and bacteria, especially salmonella are effectively minimized due to the inclusion of oil, vinegar or both combined with vacuum packaging techniques.
It is still another object of the subject invention to provide a process and packaging of boiled egg specialty products in a cost efficient manner.
It is but one more object of the subject invention to provide a process and packaging to permit the packaging of prepared boiled egg which can be seen by the consumer upon purchase.
In compliance with the above objects the boiled egg is vacuum packed as follows If the product to be packed is boiled egg in dressing, a predetermined quantity of the dressing is first placed into the plastic bag or pouch. Then the boiled egg is placed into the pouch, on top of the dressing.
Once the boiled egg is placed within a bag of plastic film, vacuum sealing can take place with somewhat standard and well-known equipment. Typically, a vacuum means will draw a vacuum within the filled bag and a seal jaw assembly will heat seal the bag once the air is evacuated. The vacuum-heat sealing equipment is not part of the subject invention.
The sealed bag with boiled egg or other boiled egg in dressing can then be placed in an outer package, preferably of cardboard, which will stabilize the bag within and present a pleasing package. The cardboard may be waxed or coated on both sides to effectively be waterproof. The outer package is designed for retail acceptance and will likely include a window so that the boiled egg may be examined as contained in the inner package.
The boiled egg may also be marketed in the sealed bag without the outer package.
Sales information can be placed directly on the package bag itself.
Regardless of the use or not of the outer package during the packing process, the boiled egg is stored in a dressing recipe as desired, by spraying, dipping, coating, placing or otherwise, in a non-chilled state. Upon being packed as disclosed herein, the boiled egg as prepared, is immediately chilled, using any of several commercial techniques, such as, but not limited to, blast chilling, contact chilling or tunnel chilling, and marketed in such chilled or refrigerated state.
It is contemplated that the packaged boiled eggs remain in a chilled state through distribution, retail, etc. until approximate time of consumption. The boiled egg can then be mashed and mixed with the dressing to create an egg salad dressing mixture or alternatively, it can be removed and consumed as desired, whole or sliced.
The subject invention is directed to packaging which permits the vacuum packaging of boiled eggs in a dressing to enable the packaged product to be presented to consumers in attractive packaging while maintaining the integrity of the vacuum packaging to provide a packaged product which can be shipped and stored until use. The eggs are boiled, cooled and the shells removed and may be pickled prior to being vacuum sealed and chilled.
