La présente invention conceme un couteau pour éplucher les ananas de manière a en retirer l'écorce et les yeux de façon écûno~ que et décGIdti-/e en toute securité.

En r~fé,ence à ces dessins le couteau comporte une lame (1) aiguisée des deux cotés (2 et 3) dont l'angle (4) s'adapte à la fomme des yeux du fruit deux protections en arc de cercle (5 et 6) et un manche (7) amovible ou non. L'épluchagede l'ananas (8) se fait en retirant simultanément les 30 ecailles de l'écorce (9) et les yeux (10).
Selon la figure 4 I'épluchage se fait de haut en bas en une spirale qui suit l'alignement des écailles l'ananas étant maintenu en position inclinée la couronne de feuilles vers le bas et le fond étant préalablement coupé
L'épluchage se fait par pression de l'autre main sur le manche (7) accompagnée d'une pression de 35 I'index sur la barre de protection extérieure (5) le pouce appuyé sur le fruit éxerçant une pression inverse vers la barre de protection intérieure (6).
Un résultat optimal de sécurité et d'hygiène est obtenu si la peau n'est pas coupée en fin de course et est conservee dans l'entaille produite par la découpe ce qui permet de ne pas toucher le fruit épluché et de conserver la prise maximum de soutien du fruit grace aux asperités de la peau.
