Abstract
The invention relates to a method of conservation of aquatic animals such as fish, crustaceans, shellfish in a living state without immersion. This preservation process is carried out in several stages: a) lowering the pressure absolute around the animal up to a value between 4.5 and 8 millibars b) return to atmospheric pressure around the animal; vs) arrangement of the canopy animals. a package comprising an opening and, d) covering of this opening using a silicone elastomer membrane the whole being subsequently maintained at 0 ° C. The aquatic animals are kept alive for at least fifteen days, and can resume then normal activity.
