Abstract

Fromage Gouda en grains caractérisé en ce qu'il possède un taux d'humidité variant entre 36 et 44% et un pourcentage de matières grasses variant entre 26 et 35%. Le fromage est constitué de lait pasteurisé, de ferment lactique bactérien, de sel et de présure. Les fromages en grains sont des fromages non maturés obtenus par la mise en oeuvre de processus traditionnels de fabrlcatlon de fromage. Parmi les fromages en grains commercialisés à l'heure actuelle, le fromage cheddar est sans doute celui qui s'avère le plus populaire.
Le fromage cheddar en grains est un produit frais possédant un goût dlfférent des fromages ayant été
soumis à une période de maturation plus ou moins longue.
Le fromage en grains présente cependant certains inconvenlents qui en rendent parfois la commerclallsation difficile. La période de conservation du fromage en grains, qui excède rarement 5 à 6 ~ours, constitue un obstacle ma~eur à la distribution d'un produit de qualité.
De plus, on assiste habituellement a un soudage des gralns, ce qui entraîne un surcro~t de travall pour les employés de restaurants manlpulant ce type de fromage.
Il seralt donc souhaltable d'obtenlr un fromage en grains possédant des caracteristiques supérieures a celles des fromages en grains presentement disponibles.

Ce fromage, qui est constltué de lalt pasteurlsé, de ferment lactlque bactérlen, de présure et de sel, est caractérlsé par une pérlode de conservatlon plus longue que celle du fromage en gralns du même type et un malntlen prolongé de son aspect physlque lnltial lors de l'empaquetage. Le fromage est obtenu par la mise en oeuvre du procédé tradltlonnel de préparatlon du fromage Gouda. Cependant, l'étape flnale de maturatlon des meules, qul sont émlettées apres la dernlère étape de pre~sage, est éliminée.
Le fromage Gouda en gralns (ou brln de Gouda) possède plusleurs caractéristiques avantageuses lorsque comparé aux autres fromages du même type.
Tout d'abord, la pérlode de conservatlon du fromage Gouda en gralns est d'environ 10 à 12 ~ours, ce qui représente une période de conservation deux fois plus longue que celle de fromages en grains comparables. De plus, une fois empaqueté dans les sacs destlnés à la vente au détall, le fromage Gouda en grains conserve son aspect lnltial, sans que les sacs solent soulllés de dépôts de lactosérum. Enfin, on n'assiste pas au soudage des grains du brln de Gouda, ce qul accélère la préparation des mets contenant ce type de fromage.
Flnalement, 11 est à souligner que le brin de Gouda peut être fondu rapidement et permet l'obtention d'excellents rendements de fabricatlon à cause de son taux d'humidité élevé.

Z~03298 DESCRIPTION D~TATT-T~ DE L'INVENTION
La preparation du fromage Gouda en grains de la présente invention s'effectue en quelques étapes distinctes qui comprennent la préparation et le caillage du lait ainsi que la cuisson, le découpage et le pressage ou soutirage du caillé.
a~ Préparation du lait Le lait utilisé pour la préparation du fromage de la présente invention contient habituellement un taux de matières grasses se situant entre 2.8 et 3.8% ainsi qu'un pH pouvant varier entre 6.55 et 6.65. Après avoir vérifié que le lait qui sera utilisé dans la préparation du fromage contient une quantité de matières grasses ainsi qu'un pH appropriés, le lait est pasteurisé suivant la méthode dite "en continu" entre 72.5 et 74~C pendant une période pouvant varier entre 16 et 20 secondes.
Une fois pasteurisé, le lait est transvidé dans un bassin de fabrication, puis refroidi à une température favorable à l'introduction d'un ferment lactique bactérien solide ou liquide, soit entre 30 et 32~C. La quantité de ferment introduit variera entre 0.7 et 0.9% du poids total de lait traité.
Lorsque l'introduction du ferment lactique est complétée, la température du lait est maintenue entre 30 et 32~C pour une période pouvant varier de 15 à 45 minutes jusqu'à l'obtention d'une diminution du pH pouvant varier entre 0.02 et 0.05 par rapport au pH initial du lait inocule.
b) Caillaqe du lait Le caillage ou coagulation du lait peut être naturel (par vieillissement), mais il est généralement provoqué, comme c'est le cas dans le contexte de la présente invention, grâce à l'ajout de présure. La masse compacte, obtenue lors de l'ajout de la présure et appelée le caille, renferme la quasi-totalité des matières grasses en suspension dans le lait.
L'étape du caillage du lait est donc effectuée en ajoutant entre 18.7 et 25 ml de présure pour chaque 100 kg de lait. Une présure de veau et/ou une présure de veau modifiée ainsi que toute autre forme de présure commerciale peuvent être utilisées à cet effet. Cette présure se présente sous forme de liquide, de poudre, de cristaux ou d'un mélange de deux ou plusieurs de ces formes.
Le temps requis pour la coagulation du lait peut varier entre 25 et 45 minutes. Une fois la coagulation complétée et lorsque le caillé a atteint une couleur uniforme, ce dernier est alors prêt à être découpé et cuit.
c) Cuisson et découPage du caillé
Une fois la masse uniforme du caillé obtenue, cette dernière est découpée minutieusement en petits 200:~29~3 carrés. Le caillé est ensuite agité pendant une période pouvant varier entre 25 et 35 minutes tout en assurant un maintien du pH entre 6.50 et 6.57.
d) Soutirage partiel du caillé
Les sels solubles et le sucre de lait sont éliminés avec le liquide translucide qui surnage dans le caillé. Ce liquide est communément appelé "lactosérum"
ou "petit-lait". L'étape suivante consiste donc à
éliminer entre 25 et 40%, préférablement environ 33% du lactosérum présent dans le bassin de fabrication tout en ajoutant entre 22 et 25% d'eau ayant été préalablement chauffée à une température variant entre 43 et 48~C. Le caillé devrait atteindre une température pouvant varier entre 34 et 36~C.
Une fois l'addition d'eau complétée, la température du caillé est ajustée de façon a ce qu'elle se situe entre 37 et 38.5~C. Le caillé est ensuite agité
pendant une période variant de 100 à 130 minutes, après quoi le lactosérum encore présent est soutiré, tout en maintenant le pH du caillé entre 6.35 et 6.40.
Le caillé ainsi que le lactosérum obtenu lors des étapes d'égouttage sont ensuite transférés dans ce qu'il est convenu d'appeler une table de pré-pressage à
double fond. Cette table de pré-pressage à double fond, bien connue des fabricants de fromage Gouda, possède un premier fond tamisé servant à retenir le caillé et par 200~Z98 lequel l'excès de lactosérum pourra s'écouler. La partie inférieure de la table de pré-pressage dont la paroi du deuxième fond est faite d'un matériau étanche sert à
accumuler et ~liminer le lactosérum.
Une fois le caillé transféré dans cette table de pré-pressage, on presse le caillé par l'entremise de plaques situées sur le caillé. Le caillé est donc pressé
dans le lactosérum. Cette étape dite de pré-pressage pourra varier entre 20 et 40 minutes. Une fois l'étape de pré-pressage terminée, le lactosérum est éliminé et le bloc de caillé est taillé de facon à pouvoir être inséré
dans des moules. Suit alors une seconde étape de pressage au cours de laquelle le caillé est de nouveau pressé pour une période pouvant varier entre 60 et 140 minutes.
Au cours des opérations de pressage et de pré-pressage, les pressions devant être imposées au caillé
peuvent varier entre 0.15 et 0.20 lbs/po3 lors du pré-pressage et 10 à 15 lbs/po3 lors du pressage. Le temps de chacune de ces périodes de pressage peut varier entre 25 et 35 minutes pour le pré-pressage et entre 60 et 140 minutes pour le pressage.
Une fois l'étape de pressage terminée, les meules sont hachées et le fromage est salé en ajoutant une quantité de sel pouvant varier entre 1.5 et 2.5 kg de sel par 100 kg de fromage obtenu. Le brin de Gouda salé est ~003~9~
ensuite empaqueté et le fromage est alors prêt à être consommé.
Des tests effectués sur les fromages Gouda et cheddar en grains ont démontré des taux de concentrations en bactéries très différents. Ces tests ont été effectués à l'aide d'un pH mètre de marque Orion. Dans le cas du fromage Gouda, le pH se situait à environ 5.4 tandis que dans le cas du cheddar, le pH se situe habituellement aux alentours de 4.9. Ceci explique en partie le fait que le fromage Gouda en grains présente un temps de conservation plus élevé que le fromage cheddar équivalent.
La présente invention sera plus particulièrement appréciée en se référant à l'exemple suivant qui est donné
pour illustrer l'invention plutôt que d'en limiter la portée.
Exemple 1 4536 kilogrammes de lait présentant un taux de matières grasses de 3.5% et un pH d'environ 6.63 est pasteurisé en continu à 73.3~C puis refroidi à 24~C. Suit alors l'introduction de 35 kilogrammes de ferment lactique bactérien vendu par la compagnie Hansen's et portant le nom Flora Danica~C qui représente donc environ 0.75% du poids total du mélange. Le mélange est alors chauffé à
31.6~C pour une période d'environ 30 minutes après laquelle 966 ml de présure ~ fromage standard vendue par la compagnie Hansen's y est ajoutée. Après l'addition de ~Q032~3 présure, le pH est équilibré à environ 6.6. Après une période d'attente d'environ 30 minutes, le caillé est découpé en petits morceaux puis agité lentement pendant une période d'environ 20 à 30 minutes. A la fin de cette agitation, 33% du lactosérum est soutiré et environ 1134 kilogrammes d'eau à 46~C sont ajoutés. La température du mélange eau/caillé est ensuite stabilisée à 37.7~C, après quoi le mélange est agité pendant environ 105 minutes tout en étant maintenu à 37.7~C. Après s'être assuré que le pH
du caillé se situe entre 6.37 et 6.40, le caillé et le lactosérum sont transvidés dans une table de pressage où
le caillé subit d'abord un premier pré-pressage à une pression de 0.17 lbs/po3 pour une période d'environ 30 minutes. Une fois le pré-pressage terminé, le lactosérum est retiré par l'ouverture de la valve se situant au fond de la table de pré-pressage. Le caillé est ensuite pressé
une seconde fois à une pression d'environ 12.7 lbs/po3pour une période de temps d'environ 120 minutes jusqu'à
l'obtention d'un pH variant entre 5.35 et 5.40. Une fois l'étape de pressage terminée, les meules sont effritées et
