Abstract
"ALIMENTO FUNCIONAL, COMPOSIçãO PROBIóTICA, COMPOSIçãO ALIMENTìCIA E PROCESSO DE PRODUçãO DE ALIMENTO FUNCIONAL FERMENTADO A BASE DE SOJA, CONTENDO AGENTES PROBIóTICOS E PREBIóTICOS". A presente invenção se refere a um processo de produção de um alimento ou bebida fermentada a partir de extrato hidrossolúvel de soja, contendo agentes probióticos (microorganismos vivos) e enriquecido ou não com oligossacarídeos prebióticos; ao alimento funcional a base de soja produzido por este processo; à composição probiótica utilizada; e à composição alimentícia simbiótica. Mais especificamente, os produtos citados são obtidos através da fermentação do extrato hidrossolúvel de soja por bactérias dos gêneros Lactobacillus spp e Bifidobacterium sp. puros ou em mistura, em condições ótimas de processo, com a adição ou não de um xarope de açúcares contendo frutose, glicose, sacarose e frutooligossacarídeos, no intuito de se obter um suplemento alimentar, preferencialmente uma bebida, com propriedades farmacêuticas, propiciando benefícios à saúde do animal hospedeiro. Cabe ressaltar que o alimento ou composição alimentícia da presente invenção deve possuir estabilidade suficiente para manter suas propriedades farmacêuticas por um longo período, garantindo que seus benefícios estejam presentes durante o período de transporte, estocagem, venda e consumo."FUNCTIONAL FOOD, PROBIOTIC COMPOSITION, FOOD COMPOSITION AND Soybean-BASED FUNCTIONAL FOOD PROCESSING PROCESS, CONTAINING PROBIOTIC AND PREBIOTIC AGENTS". The present invention relates to a process for producing a fermented food or drink from water soluble soy extract containing probiotic agents (living microorganisms) and whether or not enriched with prebiotic oligosaccharides; the soy-based functional food produced by this process; the probiotic composition used; and symbiotic food composition. More specifically, the aforementioned products are obtained by fermentation of water-soluble soybean extract by bacteria of the genera Lactobacillus spp and Bifidobacterium sp. pure or in a mixture, under optimum process conditions, with or without the addition of a sugar syrup containing fructose, glucose, sucrose and fructooligosaccharides in order to obtain a food supplement, preferably a beverage, with pharmaceutical properties, providing benefits to host animal health. It is noteworthy that the food or food composition of the present invention must have sufficient stability to maintain its pharmaceutical properties for a long period, ensuring that its benefits are present during the period of transportation, storage, sale and consumption.
