A presente invenção tem por objetivo a utilização de nanofibrilas de celulose essencialmente amorfa que possuem uma taxa de cristalinidade inferior ou igual a 50%, como agente emulsificante e/ou estabilizante de uma dispersão. As nanofibrilas podem ser utilizadas sob a forma de uma suspensão aquosa ou sob a forma seca dispersível.
