Abstract

Patente de Invenção:<B>"ENDO-XILOGALACTURONASE"<D>. São apresentados polipeptídios possuindo uma nova atividade, a saber, atividade de endo-xilogalacturonase. Estes polipeptídios podem degradar a pectina encontrada em extratos vegetais e materiais vegetais, e em particular nas regiões "pilosas" de polímeros de pectina. Em particular, os polipeptídios podem clivar em um polímero de ácido galacturónico em ligações glicosídicas internas. Está decrita a nova enzima XghA, e sua seq³ência de aminoácidos e a codificação da seq³ência de DNA dada. Este polipeptídio foi expresso em células de levedura e foi usado para tratar material vegetal, em particular suco de soja e de frutas na preparação de gêneros alimentícios comestíveis.Invention Patent: <B> "ENDO-XYLOGALACTURONASE" <D>. Polypeptides are shown to have a new activity, namely, endo-xylogalacturonase activity. These polypeptides can degrade the pectin found in plant extracts and plant materials, and in particular in the "hairy" regions of pectin polymers. In particular, polypeptides can cleave into a polymer of galacturonic acid at internal glycosidic bonds. The new XghA enzyme and its amino acid sequence and the coding of the given DNA sequence are being described. This polypeptide was expressed in yeast cells and was used to treat plant material, in particular soy and fruit juice in the preparation of edible foodstuffs.
