Abstract
A presente invenção se refere ao uso de um amido modificado para elevar a concentração de fibras dietéticas de composições alimentícias processadas sob severas condições. Através do uso de certos amidos modificados, formulações alimentícias podem ser processadas de modo severo, enquanto que retendo substanciais fibras dietéticas. Além disso, esses amidos modificados fornecem fibras dietéticas sem os efeitos negativos sobre propriedades texturais ou organolépticas das composições alimentícias, que são tipicamente associadas à adição de outras fontes de fibras dietéticas.
