Abstract

um processo para tratar leite incluindo as etapas de: uma etapa de homogeneização em que o leite é mantido a uma temperatura abaixo de cerca de 60°c; e uma etapa de processamento a alta pressão, em que o leite é submetido a uma elevada pressão acima de cerca de 150 mpa, em que a elevada pressão da etapa de processamento a alta pressão não induz um aumento na temperatura do leite além da temperatura limite de cerca de 60°c durante a etapa de processamento a alta pressão.
