a presente invenção refere-se a um sistema de combustão de gases permutáveis em leito poroso, para aplicações de cocção e, eventualmente, para outras aplicações em que seja viável o uso de transferência de calor por radiação. o sistema de combustão utiliza partículas cerâmicas provenientes de resíduos de processos industriais de moagem, combinadas com espumas cerâmicas e complementadas com um sistema de combustão independente, tipo turbulenta, para o aquecimento por convecção na etapa inicial de pré-aquecimento do leito poroso. o equipamento tem um sistema de controle que permite economia de energia, a través da interrupção do abastecimento de gás, em função da temperatura do leito poroso e a referida interrupção não afeta a eficiência do sistema.The present invention relates to a porous bed exchangeable gas combustion system for cooking applications and optionally for other applications where the use of radiation heat transfer is feasible. The combustion system uses ceramic particles from waste from industrial milling processes, combined with ceramic foams and complemented with a turbulent independent combustion system for convection heating in the initial stage of pore bed preheating. The equipment has a control system that allows energy saving through the interruption of gas supply, depending on the temperature of the porous bed and said interruption does not affect the efficiency of the system.
