Abstract
a invenção refere-se a uma formulação estável à temperatura com um corante natural solúvel em água, que é uma emulsão água em óleo, na qual o corante está contido na fase aquosa e é estável a temperatura elevada, por exemplo pelo menos 72°c. o corante misturado pode ser termicamente instável no ph do alimento, no qual a formulação é misturada.
