Abstract

"PROCESSO E APARELHO PARA TRATAMENTO DE VINHO VISANDO A REDUçãO DO SEU TEOR DE ACIDEZ VOLáTIL". Para a desacidificação de vinhos, isto é, a redução dos compostos ácidos voláteis que estão presentes como uma solução no vinho, a presente invenção proporciona dois estágios sucessivos de processo. No primeiro de tais estágios, a solução a ser processada (A) é separada em um primeiro concentrado (B) e um primeiro permeado (C), onde o último mencionado compreende os referidos compostos. No segundo de tais estágios, o primeiro permeado (C) é por sua vez separado em um segundo concentrado (F), no qual estão incluídos os compostos que são responsáveis pela acidez volátil, e em um segundo permeado (E) que compreende o solvente. Preferivelmente, o primeiro permeado (C) é pelo menos parcialmente neutralizado com aditivos de pH elevado entre o primeiro e o segundo estágio.
