Abstract
The method is applicable in the food processing industry. It prepares a bitter taste additive for alcoholic and soft beverages by using the epigeous parts of Erythraea centaurium. Dry and ground epigeous parts of Erythraea centaurium are extracted with a mixture of ethanol and water at a 1/5 to 5/1 ratio. The combined extracts are concentrated and, along with ethanol (at a ratio between 1/0.4 and 1/3 ratio) and kieselguhr (1 to 10 g/l), are added to the concentrate. After repose and filtration, the concentrate is stabilised.
