Abstract

The invention relates to a low lactose high protein-containing dairy product, comprising from 54 to 60 % proteins. It improves the assortment of high-protein- and high calorie-containing foodstuffs based on milk. It has favourable vitamin and mineral content for human organism, proper for milk, containing maximum amount of wholesome, easily assimilated proteins, low-molecular peptides and amino acids. It shows probiotic properties and is accessible as a foodstuff or food additive having pleasant flavour, type and consistence. The product comprises low-lactose skimmed cows' milk, low-lactose skimmed milk, fermented in advance with selected strains of L. delbr. subsp bulgaricus, and low-lactose and galactose-less protein hydrolysate having over 60 % of decomposed lactic casein, containing oligopeptides, tri- and di-peptides and free amino acids, sugar, pectin, aspartam and aromatics.
