Abstract

The method consists in normalizing of raw wholesomebuffalo-cow's milk with cow's milk to caseine: fat ratio of0.48:0.50, after which it is pasteurized to 74-76°C with retentionfrom 10 to 20 min and cooled to 32-35°C. After that it isfermented by lactic acid bacteria in quantity form 0.3-0.4% and iscurdled with the addition of 50% CaCl2 solution in quantity from0.01-0.02% and curdling enzyme in a quantity determined in such away that the first coagulation should occur on the 10th to the15th min. The compacted coagulum is cut into prismatic formswhich, after treatment, are shaped into a cheese block which ispressed to water content from 58 to 62% and acidity to 200°T andare cut into pieces. The pieces are salted in brine withconcentration from 20 to 25% or by a measured salt quantity, arepoured with brine made of fermented whey or buttermilk with 140°Tand 7-8% of NaCl and are left to mature at temperature 10±1°C andrelative air humidity of 70% for 45 days.2 claims
