L'invention se rapporte à un produit de base pour milkshake de même qu'à un procédé de fabrication d'un milk-shake,
également sous forme d'un mélange glacé et d'un dessert glacé
secoué.
Le milk-shake est un produit préfabriqué liquide de lait
pur, qui est additionné de sucre, de graisse et d'agents de
gonflement et mélangé; il est ensuite complètement stérilisé
et il présente alors une fraction de graisse d'environ 1 à
3,5%. Ce produit préfabriqué liquide est de conservation
illimitée et il est administré froid et gonflé par secouage pour la consommation immédiate. Les lieux de vente de milkshake sont alimentés en produit de base pour milk-shake , qui par portions est gonflé par secouage dans des machines automatiques frigorifiques comportant un agitateur et, additionné de substances sapides, est alors débité. En cette circonstance on procède en sorte de prélever à partir de la réserve existante de produit de base qui, dans les cas les plus fré-

tité qui doit être délivrée, par exemple une quantité pour un gobelet de boisson, et on l'ajoute dans le récipient mélangeur muni d'un agitateur d'une machine automatique frigorifique. Après cela, à l'aide de la machine automatique frigorifique, la quantité se trouvant dans le récipient mélangeur est refroidie à -4[deg.]C, des temps allant jusqu'à 60 minutes et plus étant nécessaires. Simultanément sont ajoutés à la quantité de produit de base pour milk-shake dans le récipient mélangeur les substances sapides du goût choisi chaque fois par le client, comme la framboise, la fraise ou le kirsch.
La préparation du produit de base en milk-shake au moyen de machines automatiques frigorifiques prend du temps et est coûteuse parce que l'achat et l'entretien des machines automatiques frigorifiques sont liés à des coûts élevés. A cela s'ajoute qu'on ne peut chaque fois préparer qu'une portion de produit de base, ou seulement tout juste le nombre de portions de produit de base qui sont nécessaires ou débitées, étant donné qu'une conservation prolongée des portions préparées de milk-shake dans le récipient mélangeur de l'appareil automatique frigorifique est sujette à des altérations du goût; d'où, un milk-shake conservé au-delà d'un laps de temps prolongé dans la machine automatique frigorifique ne peut plus être débité.

donner un milk-shake. D'un autre côté le placement et l'entretien de plusieurs machines automatiques pour milk-shake sont inéconomiques et coûteux.
L'objectif de la présente invention est donc de créer
un produit de base pour milk-shake, qui est conservable sans refroidissement sur une longue période et qui est gonflable par secouage, dans le temps le plus court, au moins à un volume double par rapport à sa quantité de départ à des températures de -4[deg.]C à +25[deg.]C, le produit liquide gonflé par secouage possédant un temps de fermeté prolongé, qui va jusqu'à plus
de 15 heures, sans montrer des propriétés d'effondrement et qui peut être converti sans peine en un produit de la consistance du pudding.
Pour atteindre cet objectif on propose un produit de
base pour milk-shake, consistant en lait pur, sucre et agents de gonflement, qui selon l'invention présente la composition suivante :

L'invention prévoit toutefois aussi un procédé de fabrication d'un milk-shake par secouage d'un produit de base pour milk-shake consistant en lait pur, sucre et agents de gonflement, avec ou sans substance sapides. Ce procédé consiste en ce qu'une portion du produit de base pour milk-shake de composition :

Avec les procédés conformes à l'invention on obtient un produit final pour milk-shake diversement utilisable, qui d'un côté présente une consistance buvable et d'un autre côté une consistance de pudding, d'où, dans le dernier cas, on peut l'offrir sous une forme dégustable à la cuiller.
On obtient les divers produits finals pour milk-shake dans leurs deux consistances différentes par maintien de certains temps de secouage et maintien de certaines températures Un refroidissement du produit de base pour milk-shake n'est plus nécessaire.
Dans les procédés précités on peut encore ajouter chaque fois un colorant pour aliments qui convient pour la consommation humaine. Un colorant jaune du type E 102, E 104 s'est montré avantageux. A un litre de lait écrèmé on ajoute 0,025 mg de colorant. Au lieu de sucre pur on peut aussi employer un mélange de sucre et de dextrose. On obtient un accroissement de volume et une stabilité accrue lorsqu'on ajoute des additifs comme le colorant de type E 101, des aromes de vani:

On illustre ci-après le milk-shake constitué conformément à l'invention et son procédé, à l'aide de quelques exemples de mise en oeuvre.
Exemple 1
Fabrication d'un milk-shake liquide crèmeux.
Une quantité prédéterminée de produit de base pour milkshake est gonflée par secouage, à la main ou à l'aide d'un dispositif agitateur approprié, à une température de -4[deg.]C à +12[deg.]C pendant environ 10 à 40 secondes. Exemple 2

Suivant la température du produit, un entreposage à basse température de 1 à 2 heures a lieu. Le produit de base pour milk-shake est congelé comme une crème à la glace. On prélève la quantité souhaitée et on la fait gonfler par secouage pendant environ 10 à 40 secondes. Le produit final est consommable avec une paille ou une cuiller.
Exemple 3
Fabrication d'un milk-shake du genre pudding.
Une quantité prédéterminée de produit de base pour milkshake est gonflée par secouage à une température de -4[deg.]C à +12[deg.]C pendant deux à trois minutes. Le produit gonflé par secouage ainsi obtenu présente une stabilité de 6 heures et se prête à la consommation avec une cuiller.
Exemple 4
Fabrication d'un milk-shake liquide.
On secoue une quantité prédéterminée de produit de base pour milk-shake pendant 30 à 60 secondes. La stabilité du produit final gonflé par secouage est illimitée. Le produit est buvable avec ou sans fêtu de paille.
Exemple 5
Préparation d'un milk-shake glacé crèmeux (crème glacée du type milk-shake).
On fait gonfler par secouage une quantité prédéterminée de produit de base pour milk-shake, avec une addition quelconque de substance sapide, à des températures quelconques, puis on refroidit fortement pendant une à deux heures à -20[deg.]C.
Comme substance sapide on peut par exemple utiliser de l'arôme de vanille.

The various milkshake end products are obtained in their two different consistencies by maintaining certain shaking times and maintaining certain temperatures. Cooling of the milkshake base product is no longer necessary.
In the aforementioned processes it is still possible to add each time a food coloring which is suitable for human consumption. Making a liquid milkshake.
A predetermined amount of milkshake base is shaken for 30 to 60 seconds. The stability of the final swelled product by shaking is unlimited. The product is drinkable with or without straw.

Preparation of a creamy iced milkshake (milkshake type ice cream).
A predetermined amount of milkshake base product, with any addition of flavoring substance, is swelled by shaking at any temperatures, then cooled strongly for one to two hours at -20 [deg.] C.
As a flavorful substance it is possible, for example, to use vanilla flavoring.
