Abstract

Granular starch is converted to a soluble hyrolysate by stirring a mixt. contg. 5-40 (10-30)% granular, esp. maize starch, water, bacterial alpha-amylase and opt. glucoamylase, at a temp. between normal initial gelatinising temp. and actual gelatinising temp. of starch at pH 4-7 (5-7). Dextrose is pref. predpd. by (i) starch solubilisation to > 10%, pref. at >=40 (65-75) degrees C, (2) setting temp. to 50-65 degrees C and Ph 4-6 and saccharifying hydrolysate with a saccharifying enzyme, pref. glucoamylase or beta-amylase. Process pref. takes 3 steps: (a) solubilising, without gelatinising, to >=10% starch conversion, (b) heating above starch gelatinising temps., esp. to 85-150 degrees C, to gelatinise residual starch and (c) saccharifying.
