Abstract

1450671 Converting starch to levulose CPC INTERNATIONAL Inc 18 March 1975 11301/75 Heading C2S A process for the enzymatic conversion of starch to Ievulose comprises mixing a granular starch with water, bacterial alpha amylase, glucoamylase and glucose isomerase at a temperature of 40‹ to 70‹ C. but below the. actual gelatinization temperature of the starch, and at a pH of from 5À0 to 7.0 and maintaining the starch in essentially granular form until a soluble hydrolysate is produced, wherein any residual insoluble starch is in essentially granular ungelatinized form. The alpha-amylase is preferably derived from a Bacillus microorganism, e.g. Bacillus licheniformis, e.g. NCIB Nos. 8059 and 8061, and ATCC Nos. 6598, 6634, 8480, 9945A and 11945. The isomerase preferably derives from Streptomyces albua YT-5 (ATCC 2132), or from an Arthrobacter species.
