La présente invention concerne un procédé de production de moût de brasserie à partir d'un fardeau de grain cru (par . exemple d'orge) par un procédé suivant lequel on ajoute au fardeau des enzymes protéolytiques et diastatiques (en remplace- ment partiel ou complet du malt exerçant une action diastatique et protéolytique) et on maintient le fardeau à des températures auxquelles les enzymes ajoutés provoquent d'abord la dégrada- tion des protéines qu'il contient, puis la transforma- tion de l'amidon solubilisé en sucre. d'un moût préparé par le procédé ci-dessus a souvent un arrièregoût prononce qui nuit à la qualité commerciale du produit.
La présente invention a pour but d'atténuer ou de supprimer le goût désagréable dos bières brassées à partir d'un moût produit comms décrit ci-dessus.
La présente invention a pour objet un procédé pour atténuer l'arrière-goût amer des bières obtenues à partir d'un moût produit par brassage d'un fardeau de grain cru maintenu. d'abord une température à laquelle les enzymes ajoutés provoquent la dégradation des protéines qu'il contient, puis à une tempe rature à laquelle les enzymes ajoutés transforment l'amidon solubilisé en sucre, suivant lequel on stérilise au soins en partie la surface du grain cru avant le brassage. On stérilise de préférence la majeure partie de la surface du grain et, plus avantageusement la quasi-totalité de cette surface.
La cause de l'arrière-goût amer des bières brassées à partir d'un moût obtenu par le procédé décrit ci-dessus n'a pas encore été élucidée, mais on peut attenuer ce défaut de$ bières au moins dans une mesure suffisante pour-les rendre-- commer- cialement acceptables en stérilisant la surface du grain cru de toute manière n'affectant pas défavorablement le grain ou la production du moût à partir du grain cru.
On peut stérilisor la surface du grain cru par divers procédés, par exemple en soumettant le grain à 7.'effet de la chaleur, El variante, on peut immerger le grain cru pendant un temps déterminé dans une solution diluée d'hypochlorite de sodium puis le laver à l'eau. Lorsqu'on stérilise le grain cru 'au moyen d'une solution d'hypochlorite de sodium, on le lave de préférence à l'eau avant ce traitement.

Dans une forme d'exécution particulière de l'invention, on soumet le grain à l'effet de, la chaleur pendant environ 4 heures à 71-83 C. Ce traitement conduit à une stérilité suffi- sante qui ramène l'âcreté de la bière à un ni.veau commercialement acceptable.
Le temps et la température d'exposi- tion à la chaleur peuvent toutefois varier dans des limites relativement éloignées, mais ces paramètres (de même que ceux intervenant dans tout autre procédé de stérilisation partielle de la surface) doivent être choisis de façon que l'activité résiduelle de la ss-amylase du grain soit suffisante pour que la transformation de l'amidon ait lieu de manière satisfaisante au cours du brassage et conduise à un moût présentant un spectre d'hydrates de carbone caractéristique.
L' exemple suivant illustre l'invention.
EXEMPLE
Dans une brasserie pilote, on brasse une bière par le procédé suivant :
On met à digérer 9eO8 kg de farine d'orge non traitée avec 90,8 g de Nervanaso 10X pendant 2 heures à 50 C, puis pendant 2 heures à 65 C. On filtre le moût du fardeau, on le porte à l'ébullition,on y introduit le houblon et on le laisse fermenter. On sépare¯la levure de la bière qu'on clarifie alors et qu'on conditionne.
On répète ce procédé de brassage à l'aide d'une farine obtenue à partir d'orge soumise à une stérilisation par chauffage comme d6crit ci-dessus.
On goûte chacune de ces deux bières: la bière obtenue à partir d'orge stérilisée par chauffage est plus douée et
