La machine 10 comprend un compartiment supérieur 11 qui est relati- vement épais, un compartiment inférieur 12 qui est relativement mince,, un compartiment intermédiaire 13 contenant le réservoir

d'eau, ainsi qu'une paroi latérale 14 et une paroi arrière 15. Les compartiments 11, 12 et 13 et les parois 14 et 15 sont de préféren- ce en une matière résistant à la corrosion, comme l'acier inoxyda- ble.
Un réservoir à eau 17 est monté sur la paroi supérieure
16 du compartiment inférieur 12 et est pourvu d'un calorifuge
18 servant à empêcher toute perte de chaleur de l'eau qui cet norma- lement maintenue à une température relativement élevée par un élé- ment chauffant 19 qui, comme décrit ci-après, est alimenté par une source de courant électrique appropriée. L'élément chauffant
19 fait saillie sur le fond 20 du réservoir d'eau 17 et peut être alimenté de Manière à maintenir constamment une réserve d'eau chaude dans le réservoir d'eau 17.
Un élément sensible à la température 22 plonge dans l'extrémité supérieure 21 du réservoir d'eau 17 et s'étend à l'ex- térieur du réservoir 17 pour commander le fonctionnement d'un inter- rupteur thermostatique 23 d'une façon classique. L'agencement est tel que l'eau contenue dans le réservoir d'eau 17 soit maintenue constamment à une température élevée. Cet agencement permet de soutirer rapidement une certaine quantité d'eau chaude de l'extré- mité supérieure du réservoir d'eau 17 afin de préparer de l'extrait de café de la façon décrite ci-après.
L'eau chaude est soutirée de l'extrémité supérieure du réservoir 17 par siphonnage, par un tube de sortie 24. Une extrémité 25 du tube de sortie d'eau 24 est de préférence placée à une certaine distance 26 en dessous de l'extrémité supérieure 21. A son autre extrémité, le tube de sortie 24 est raccordé à une pomme 27 qui est percée d'un grand nombre d'ouvertures servant à pulvériser l'eau chaude vers le bas comme indiqué. Aux approches de la fin de l'opération d'infusion, l'eau chaude à l'extraite supérieure du réservoir d'eau 17 continue à s'écouler jusqu'à ce que le niveau de l'eau, indiqué par la ligne interrompue 28, affleure l'extrémité 25 du tube de sortie 24.

Cette construction permet d'enlever l'entonnoir 35 pour retirer le cône de papier filtrant 33 et le marc de café,$ et regarnir l'entonnoir.
L'entonnoir 35 est pourvu à sa partie inférieure d'un bec 38 par lequel l'extrait de café 39 s'écoule dans une carafe 40 sousjacente. La carafe 40 est placée sur un r6chaud 41 qui est monté sur la paroi supérieure 16 du compartiment inférieur 12. Des pieds de support 42-42 sont fixés sous le compartiment inférieur 12 pour supporter convenablement la machine 10 sur une surface plane.
Suivant la présente invention, on fait en sorte de refouler une certaine quantité d'eau chaude à l'extrémité supérieu- ' re du réservoir d'eau 17 en introduisant dans le réservoir d'eau 17 une égale quantité de préférence d'eau froide. A cet effet, il est' prévu un tube d'entrée d'eau 44. Comme le montre le Fige 2, le tube 44 descend à travers l'extrémité supérieure 21 du réservoir d'eau 17. on extrémité inférieure 45 s'ouvre près de l'extrémité inférieure 20 du réservoir 17.

Le niveau d'eau 28 monte alors dans l'extrémité recourbée vers le bas du tube de sortie 24 et dans le tube de ventilation 53 et commence à s'écouler par le tube de sortie 24 vers la pomcae d'arrosage 27.
L'eau chaude est alors projetée en gouttelettes par la pomme 27 sur le café moulu 32 et l'extrait de café 39 coule dans la carafe 40. Le passage de l'eau chaude dans le tube de sortie 24 se poursuit jusqu'à ce que toute l'eau contenue dans la coupelle 47 soit descendue dans l'extrémité inférieure du réservoir d'eau 17 et jusque ce que l'eau contenue dans l'espace 29 ait été siphonnée par le tube 24.
