La présente invention a pour objet des perfectionnements aux cuves foudres pour la fermentation des liquides et en des moûts de bière permettant de réaliser à volonté la fermentation basse ou la fermentation haute, caractérisés par la décomposition d'une cuve foudre en deux compartiments superposés mis en relation, quand on le désire, par une canalisation qui assure une circulation constante , des moûts, du fait du remplissage automatique du compartiments inférieur fermé,
le compartiment sunérieur étant à air libre et la communication entre ces deux compartiments pouvant être fermée par robinet sur la canslisation et par tampon sur l'ouverture de la cuve foudre inférieure de façon à permettre la fin de fermentation en vase clos sous forme de fermentation secondaire avec refroidissement suivant des procédés connus.
Des dessins annexés montrent schématiquement, à titre d'exemples non limitatifs, un mode de réalisation de l'inven- tion.
