On sait qu'on ne peut réussir en général à déco- lorer l'huile de soja et les huiles similaires à indice d'iode élevé qu'en employant une proportion relativement forte d'a- gents décolorants, tels que terres décolorantes, etc.. On a déjà essayé d'obtenir des huiles aussi claires que possible par un traitement énergique à l'alcali précédant le blanchi- ment proprement dit., mais le résultat est variable et, en considération des frais et des pertes occasionnés par ce traitement, médiocre.
Or, on a trouve qu'on peut décolorer ces huiles d'une façon très efficace et durable, en chauffant le cas

échéant dans le vide l'huile brute ou raffinée par l'alcali ou débarrassée d'une autre manière des substances mucilagi- neuses (phosphatides, etc. ) pendant peu de temps à une tem- pérature élevée, comprise par exemple entre 220 et 280 C, puis en la refroidissant rapidement. L'huile est ensuite soumise de préférence à un traitement ménagé par l'alcali.
Le chauffage doit être effectué en évitant autant que pos- sible toute oxydation. Il doit en outre être rapide et ne durer que peu de temps. On obtient un effet très favorable si l'on fait circuler à travers l'huile chauffée dans le vide et coulant en courant continu, de la vapeur d'eau sursaturée ou une vapeur ou un gaz chargé d'un liquide.
Outre la décoloration, on obtient une amélioration consi- dérable du goût et de la conservation par rapport au pro- duit traité seulement par les alcalis.

De l'huile de soja brute obtenue par extraction est raffinée comme de coutume, mais dans les conditions les plus ménagées pour diminuer les pertes causées par le raf- finage, puis elle est traitée à une température allant jusqu'à 280 C, pendant 4 minutes, par la vapeur d'eau sur- saturée, dans un appareil approprié. L'huile est ensuite traitée une seconde fois par une faible proportion de soude caustique; il se sépare alors un faible précipité brunâtre en suspension dans la solution alcalino-aqueuse. L'huile est alors lavée, puis elle,est blanchie et désodorisée comme de coutume. L'huile ainsi traitée est notablement plus claire et d'un goût plus fin et elle se conserve mieux qu'une huile de soja de même provenance, soumise deux fois au raffinage par l'alcali, au blanchiment et à la désodo- risation.

De l'huile de soja brute obtenue par extraction est débarrassée des substances mucilagineuses qu'elle renferme par la terre décolorante, puis elle est traitée dans le vide, à une température allant jusqu'à 2600C, pendant 12 minutes, dans un appareil approprié, par un gaz chargé de fines par- ticules d'eau. L'huile est ensuite raffinée comme de coutume par la soude caustique, puis elle est blanchie et désodo- risée. L'huile raffinée ainsi obtenue est notablement su- périeure quant à sa couleur, son goût et sa conservation, à l'huile de soja raffinée de façon habituelle par l'alcali.

De l'huile de soja brute contenant 2,52 , d'acides gras libres est chauffée rapidement à une température de 240 C, sous une pression de 20 mm, dans un appareil fonc- tionnant en marche continue avec un débit de 1100 kg. d'hui- le par heure. L'huile traverse l'appareil au cours d'envi- ron 7 minutes,tout en étant soumise simultanément à l'ac- tion de vapeur d'eau surchauffée à 300 C, puis elle est re- froidie à 80 C par un réfrigérant. Elle renferme 0,96 % d'acides gras libres, et après un traitement subséquent par la soude caustique, blanchiment et désodorisation, elle a une couleur plus claire, un goût meilleur et elle se con- serve mieux que la même huile brute traitée par la soude caustique, blanchie, puis désodorisée.

Heating should be carried out avoiding as much as possible any oxidation. It should also be fast and last only a short time. A very favorable effect is obtained if supersaturated water vapor or a vapor or gas charged with a liquid are circulated through the oil heated in vacuum and flowing in direct current.
In addition to the discoloration, a considerable improvement in taste and shelf life is obtained over the product treated only with alkalis.

The oil thus treated is noticeably clearer and of a finer taste and it keeps better than soybean oil of the same source, subjected twice to refining by alkali, to bleaching and to deodorization.
