La présente invention a pour objet un appareil pour la production rapide de vapeur, du type connu dans la boulangerie sous le nom d'#Appareil Wrasen ".Ces appareils doivent, comme il est connu, surmonter l'inconvénient qui consiste en ce que, à l'heure du commencement du travail, le matin, on n'a pas assez de vapeur à sa disposition dans les locaux de travail et les chambres de fermentation (de la pâte), ni dans les fours de cuisson. L'appareil de l'invention appartient à ce type d'appa - reil Wrasen qui sont murés complètement dans la maçonnerie du four sous forme de caissons complètement fermés et pourvus de conduites d'amenée d'eau et de sortie de vapeur.
La vapeur manquante à la reprise du travail matinal est obtenue suivant l'invention du fait que de l'eau est projetée sur des tubes chauffés logés dans le dit caisson, les extrémi - tés de ces tubes sortant de la paroi frontale du caisson pour se prolonger dans le foyer, de sorte qu'elles sont léchées par les gaz chauds et sont ainsi très rapidement échauffées.

Dans les fours à chauffage indirect, l'appareil " Wrasen " nécessite un petit foyer additionnel, qui peut être disposé comme on le désire.
Si le four restait quelques heures non chauffé pendant le jour, on a cependant encore malgré tout toujours de la vapeur en suffisance, parce que les tubes de chauffe fermés de toute part, construits suivant le type des tubes Perkins, conservent très bien la chaleur en opposition des autres appareils "Wrasen" de type connu, dans lesquels on emploie des éléments de chauffe plats et autres.
Une forme de réalisation de l'appareil est représentée au dessin annexé : Fig.l est une coupe transversale partielle d'un four à feu direct, pourvu d'un appareil " Wrasen " noyé dans la ma - çonnerie tandis que Fig.2 représente l'appareil dans un four à feu ou chauffage indirect.
Le caisson a est, dans la fig.1, logé par exemple dans la paroi frontale du four, de sorte qu'il est fermé en fait par celle-ci. Dans le caisson est logé un faisceau de tubes de chauffe b, fermés par soudure aux deux extrémités, et constitués suivant le type des tubes Perkins.
