Abstract

La présente invention se rapporte à une méthode pour la formation d’une masse de chocolat jusqu’à un produit de pâtisserie, dans lequel la formation est faite dans une ligne de production et dans lequel la ligne de production traite successivement de différents types de chocolat dans des cycles de production successifs, la méthode comprenant: préparer la ligne de production pour un premier cycle de production, dans lequel un premier type de chocolat est formé jusqu’à un produit de pâtisserie; remplir le premier type de chocolat; répandre en vibrant le premier type de chocolat; refroidir le premier type de chocolat; enlever le produit de pâtisserie du moule; préparer la ligne de production pour un cycle de production suivant, dans lequel un type de chocolat suivant est formé, dans lequel la machine d’injection a une tête de dosage avec un tampon et dans lequel, pendant la préparation partielle ou complète de la ligne de production pour un cycle de production suivant, la ligne de production continue à tourner à base du type de chocolat précédent rassemblé dans le tampon de la tête de dosage.
